Cooking with EqualEqual is a great option for those looking for guilt-free ways to indulge in sweet treats and dessert favourites. In cooking, it is important to remember that Equal doesn’t always behave exactly like sugar. Equal works best in recipes that don’t require high temperature or prolonged cooking times. Equal does not brown, caramelise or act as a raising agent like sugar and therefore, works best in recipes where its main purpose is to provide sweetness such as cheesecakes, mousses, parfaits and slices. To make this easier, we’ve provided a selection of specially developed recipes using Equal to start you on your low calorie cooking journey.

Chef ’s Tips• Use low fat milk to glaze the tops of cakes or muffins which require browning.• Substitute plain flour for self-raising flour when using Equal.• When creating a batter, mix eggs, low fat milk and other liquids together, then add the Equal

in last to avoid separation of the mixture.• Equal can also be used to reduce calories in savoury recipes and works well in marinades,

Gin Fizz

METHOD

1. Put gin, lemon juice and Equal NEXT in a shaker with a few cubes of ice. Strain into two highball glass half filled with ice cubes.

2. Pour in soda water to fill. Stir and serve.

Old Fashioned

METHOD

1. In two Old Fashioned glasses, muddle bitters, Equal NEXT and a splash of soda.

2. Add bourbon and fill with ice. Garnish with orange and cherry.

Serves: 2

Mint Julep

METHOD

1. Muddle mint, Equal NEXT and water in two collins glass. Fill glasses with ice and pour in bourbon.

2. Top with more ice and garnish with a mint sprig. Serve.

Serves: 2

Espresso Martini

METHOD

1. Combine espresso and Equal in a large heatproof jug and allow to cool to room temperature.

2. Put cooled coffee mixture, vodka, kahlua, vanilla and ice cubes in a cocktail shaker.

3. Shake well to combine. Strain the mixture into 4 glasses. Serve.

Serves: 4

Long Island Iced Tea

METHOD

1. Combine juice, Equal, gin, orange ligueur, rum and tequila in a large cocktail shaker and shake until combined. Pour the mixture evenly into 4 glasses.

2. Top with cola, ice cubes and garnish with lemon.

Serves: 4

INGREDIENTS

50 ml gin50 ml orange flavoured liqueur

50 ml rum50 ml tequila

Strawberry Lemonade

METHOD

1. Put strawberries in a blender and puree. Add lemon juice and Equal, blending just until combined. Pour mixture into a pitcher.

2. Stir in soda water. Refrigerate until ready to serve. Place a few ice cubes in 6 tall glasses. Pour in strawberry lemonade mixture.

3. Garnish each glass with strawberry, lemon and mint.

Serves: 6

2 cups hulled fresh strawberries1 cup fresh lemon juice

(juice of approx. 5 lemons)¾ cup Equal Spoonful or

Raspberry Peach and Vanilla Poptails

METHOD

1. Place raspberries, 2 tablespoons of the Equal syrup and ½ cup water in a blender and blend until the mixture is completely smooth.

2. Pour the mixture evenly into 6 ice-pop moulds. Add paddle pop sticks to the mould and place in the freezer for 20 minutes, until the raspberry layer has started to solidify.

3. Place the remaining water into the blender and add peaches, vanilla bean paste, mint and 3 tablespoons Equal syrup and blend until the mixture is completely smooth.

4. Add the peach mixture to the top of the raspberry layer and return to the freezer until frozen solid.

**To make Equal syrup, combine ¾ cup of Equal Spoonful (16 Equal NEXT Sachets) and ¾ cup of water in a large jug. Stir until the Equal has dissolved.

Serves: 6

200g fresh or frozen raspberries,

Cranberry and Pomegranate Margarita

METHOD

1. In a large cocktail shaker filled with ice, pour in cranberry juice, pomegranate juice, tequila, liqueur, lime juice, Equal and orange zest. Shake until well-chilled. Rub rim of margarita glass with lime wedge.

2. Dip glass rim in salt. Strain cocktail into glass half filled with ice.

3. Garnish with fresh fruits and lime.

Serves: 4

INGREDIENTS

Ice cubes¾ cup cranberry juice

¾ cup unsweetened pomegranate juice

120 mL tequila60 mL orange-flavoured liqueur

Lychee, Lime and Vanilla Mojito

METHOD

1. Muddle lime, mint, rum, lychee, Equal and vanilla in two tall glasses.

2. Add ice cubes and lychee juice and top up with soda water. Stir and serve.

Serves: 2

1 lime (large, quartered)2 sprigs mint

120 mL white rum6 pitted lychees

Pina Colada Granita

METHOD

1. Put pineapple pieces in natural juice into the bowl of a food processor and blitz to a purée. Add Equal and water and puree until combined. Transfer to a large measuring jug.

2. Stir in coconut milk and lime juice.

3. Transfer to a measuring jug and add enough cold water to make it up to 1 litre.

4. Pour into a rectangular freezer-proof container and freeze for 6 hours, or overnight until frozen.

5. Scrape with a fork and serve in chilled glasses. Decorate with raspberries and mint leaves.

Serves: 4-6

430 g tinned pineapple pieces in natural juice

200ml water 200 ml reduced-fat coconut milk

White Sangria Iced Tea

METHOD

1. In a large punch bowl, combine all the fruit and the lemon juice and allow to sit for 10 minutes so that the flavours infuse.

2. Add the ice, wine, tea, Equal and soda water to the fruit mix, stir well. Freeze for 1 hours to chill. Serve.

Serves: 6

INGREDIENTS

½ cup mixed berries (chopped Strawberries,

blueberries and raspberries)8 pitted lychees

1 green apple, thinly sliced½ mango, thinly sliced

1 peach, thinly slicedJuice of 1 lemon

Ice cubes1 cup white wine

1 cup Earl Grey tea, unsweetened and cooled

1 cup Equal Spoonful or 24 Equal NEXT Sachets

1 cup Soda water

Red Sangria

METHOD

1. Combine wine, juice and Equal NEXT in a large serving jug.

2. Add fruit and soda water.

3. Mix well and serve immediately in cocktail glasses ganished with pineapple and basil.

Serves: 4

INGREDIENTS

200 ml cabernet sauvignon ]wine, chilled

1 cup unsweetened pineapple juice, chilled

2 Equal NEXT Sachets or1 Tbsp Equal Spoonful

1 cup fresh bite-size pineapple pieces

1 orange, thinly sliced into rounds

1 small apple, very thinly sliced into rounds

700ml soda water, chilled fresh pineapple wedges,

Apple Pie Cocktail

METHOD

1. Put all in ingredients in a large cocktail shaker with some ice cubes, shaking well until the mixture is combined and chilled. Strain into 4 glasses over ice. Serve garnished with a vanilla pod.

*Note: Simply omit the vodka and schnapps to make this non-alcoholic. Instead, add an extra 200mL apple juice, 1 Tbsp butterscotch sauce and 2 extra Equal NEXT sachets for a flavour hit.

Serves: 4

INGREDIENTS

1 cup cloudy apple juice½ cup apple cider

2 Tbsp cream 120 mL vodka or white rum

120 mL butterscotch schnapps2 Equal NEXT Sachets

2 tsp vanilla bean paste 1 tsp ground cinnamon
