absolute standards of correctness - only a general and sometimeshighly disputed agreement of how people decipher the different standards set in Europe, Asia or the New World. For that reason it would be a blunder to follow slavishly any one given set of rules to

Whatever the rule might be, it is save to assume that the owners of any given establishment have their very own set of precepts to servecertain food. The waiter's actual job title and description - the word waiter wherever used throughout the text always includes waitresses too -differ from restaurant to restaurant. May it be front-waiter, back-waiter and captain or in other places cocktail person, food server and sommelier, each of these aforementioned crews are typical three-men-



teams. In a three-men-team each waiter specializes in one area only, but

helps his colleagues if he is not busy. At some restaurants each stationis covered by a two-men-team: One waiter stays always on the floor,while a second waiter much like a "go and getter" delivers all the food and drink orders. It is actually the same system wherever we have awaiter and a busser teamed up. Again other restaurants have the waiter do everything and I mean everything.

A good waiter is expected to handle himself in any situation, never to get angry with a guest and never to start a fight with coworkers. A waiter should be well groomed and able to stand long hours on his feet.

Waiting on tables: What has been helpful to me, over the years indifferent countries and restaurants, is simply the following:

FIRST, I learn the menu. "With learning I mean I read up on whatever menu-feature I don't know." I use cookbooks, the ones which nobody dares to question, well known worldwide as authorities, like my trusted Escoffier-cook-book. After I know what the French master chef has tosay, I ask the chef how he prepares his dishes. I never tell the chef what I know but do make mental notes about how close his description is, tothe French cookbook. Talking with the chef I might use phrases like"That is a great idea" or "Really? Whose idea was it?" to find out how onearth the chef came up with any mind boggling concoction. And usually he will tell me.

SECOND, I study the wine list. "There are plenty of great books on

wine and it's more helpful to read about wines than to attempt to tastethem all. There is no way that any one person will ever be able tosample every wine ever produced on this planet. Asking questionshelps too. Wines play an important roll in fine dining and I do make it animportant issue to learn what wines go best with the house's menu."

substitutes or improvements that we invent to replace

nature usually generate waste products, our excesses or

Usually the psychologies and learning processes of our

Organic Psychology recognizes that we are part of nature

The excessively stressed, abusive and polluted state of the

world produced by the genius of contemporary thinking

clearly shows that our mentality is often dysfunctional. It is

also clear that nature's restorative powers are not healing

this dysfunction as they would normally in nature. This is



simply because we live extremely nature-separated lives.

How can nature even begin to help us heal our disorders

when we are disconnected from its healing ways and

McDonald’s philosophies keep the business going. Tolerance of substandard performance, or

not being the best, as I have said it countless times, is the Mother of Mediocrity. One of themain characteristics of the McDonald’s system is being in a continuous search for perfection.Ray Kroc and Fred Turner, the brain and heart of the McDonald’s strong system establishedvery high standards and after many decades they are still up there. They would personally goto the restaurants and eat there with the associates. They would take drastic actions all theway to the point of closing a store on the spot because it was underperforming. Same thingwill happen with all other executives and an army of traveling auditors. Most of the executivesas we know started at McDonalds flipping hamburger patties. They know the business frominside-out and one thing they have learned by heart is that Sub-Standard is not acharacteristic within the company.




The Promise

A system is in place. The whole system is a promise to the customer. That promise comesfrom the foundation and is about quality, cleanliness, and service. All three factors are the keyfor success or failure and as they said, the lack of any of these factors is devastating for thebrand. That has been in place all these 50+ years and is a clear-applicable lesson for anyone

who wants to stay in business. Most of the issues that make us uncomfortable or make thingsnot work appropriately are originated by Underperformance or Exception turned into “thenormal thing”.

Not a “Fit For All”

Obviously wherever there is discipline, values are at stake. Though the values at McDonald’sare not sophisticated extracts of rocket science, there will be some people who simply can’tabide by them. Those people will probably speak out loud against the ethics and philosophy of the system. This happens in many instances; the difference here though, is that exceptionsare not made for absolutely anyone.

Is The System Totalitarian?

Perhaps you could call it that, but it is also a Very Human organization and everyone isrespectfully treated even in cases of conflicts and dismissal. The “Family” of the Organizationis very inclusive and the relationship is deep between all the elements in the crew andeveryone else, including all the vendors, franchisees all the way to the CEO. Everyone knowsthey can count on anyone in the team to provide advice, support, and insights. People canreach all the positions thanks to the environment of encouragement, motivation, and constant

reinforcement.

Know your Team

One of the key elements that have been present at all times is a thorough communication sothat each member can know exactly how to interact in their groups.
