MAG Team!There’s a saying that goes: “Less is more”. Yet, most of us seem to live by the motto of “More is more.” There’s always a bigger house, fancier car and newer phone to buy. There’s always more exotic cuisine to sample, more exclusive restaurants to

check out and more intricate dishes to be awed by. Like most people, I feel and act the same way often.

In the process of writing for the magazine, I’ve had the privilege of meeting and interviewing different chefs. I realized that while chefs constantly search for new seemingly complex breakthroughs, it is always the simplest dishes that continue to confound and bear testament to the extent of a chef’s culinary skills.

Take Chef Alvin Koh, who is featured in this issue’s Chef Talking!, for example. He cited the humble fried rice as the dish to represent himself because of the level of difficulty in perfecting this deceivingly simple dish. Yet, it is also because of its simplicity that there is room for creativity and evolution.

When it comes to fried rice, one must talk about Chen Fu Ji and its legendary $25-a-plate Imperial Fried Rice, which is featured in this issue as well. There aren’t that many ingredients involved but the amount of detail and attention to quality is how Chen Fu Ji produces a winner without MSG at all.

We had chosen kueh to be the cover for this issue because there is something decidedly feminine and motherly about kueh. Chances are, the kueh you’ve eaten all your life had been made or purchased by your mother. Chances are, she knows which your favourite is.

The question becomes: do you know her favourite?

Mother’s Day is round the corner and all these ideas remind me of how sometimes, it isn’t about the size or packaging of a gift that matters. It isn’t always necessary to buy an expensive gift to impress. Simplicity can be beautiful and sometimes, attention in itself may be the greatest gift one can present to the most important woman in your life.

This Mother’s Day, perhaps it’s time to get back to the “heart” of the matter?

Tºhese words are not from a song or a poem. They are heartfelt lines spoken by elderly parents in a TV advertisement I caught some

time back. Between these lines were scenes of young professionals too busy to look at their mother while talking to them; too busy to answer a caring phone call; too busy for their parents’ needs. It wasn’t that they were not filial. They were just too busy with their lives – much like you and me.

Mother’s Day is round the corner. When it comes to celebrating the most important woman in many of our lives on this day, the easier thing for a busy child to do is to buy an elaborate gift.

I recall an episode when my siblings tried to purchase an expensive handbag for my mother who adored a particular label. After shopping for a long time, she found a multitude of reasons for us not to purchase it for her. Though we eventually coaxed her to choose something, it was apparent to me that my Mother was trying to save money for us.

Some say a Mother’s love is the greatest love in the world. To me, its greatness cannot be measured by depth alone but also in the way a Mother’s love is expressed. Mothers will almost always know our favorite food, if we like our

coffee sweet, how we prefer our laundry to be done and so on. It isn’t always in the big things. It is about the little everyday details that one would never know without dedicated attention, love and patience.

The big question is: Do we pay the same kind of attention?

My mother loves cakes. Whenever I bring back a type of cake she likes, the sweet smile on her face reminds me of her secret girly side. For this issue, we’ve asked some readers to share their mothers’ favorite food and the stories behind it.

This Mother’s Day, I implore you to go back to small details and try bringing back something your mother loves. To make her smile, buy it from her favorite stall, shop or restaurant.

Last Mother’s Day, I had a wonderful experience with my children and grand children. We went for karaoke after dinner. Taking care of 6 children never felt like a burden to me. If God blesses me with children, I should go along and experience the journey of a mother.

Lee Gee Wah, 74 (6 children, 2 boys and 4 girls)

Since 2007, I had requested my children to eat at home because I am allergic to some food outside. Instead, my children give me “ang pow”. I always tell them that children are part of marriage. It is something very special and worth going through.

Always love this special occasion. Besides good food, I appreciate their red packets. Last year, they said they missed my cooking and wanted me to cook at home. Although there were a lot of preparations to be done and it was tiring, I couldn’t say no to my children.

I am not expecting too much. As long my children remember me, I will be very happy.Being a mother, I just want them to find stablility in their career and grow happily with their family.

Though my children are very committed to their work, they never fail to bring me to quality restaurants. I told my children that when it is the right time to bring in a new member to the family, they must do it with happiness. Times have changed and I cannot force them to do what they don’t like.

During Mother’s Day, my children never fail to ask me what I need. More importantly, they call me regularly.. To me, the best Mother’s day I had was 3 years ago when we were all together before most of them migrated to Australia.

I am a proud grandmother of 11 grand children. When I look at them, I always think life is a miracle. I remember the joy of my own babies, but when I witnessed the birth of my grandchildren, my joy was indescribable.

Mention fried rice and one name that pops up would likely be Chen Fu Ji. After all, the

restaurant had grabbed headlines with its famous $25-a-plate Imperial Fried Rice and remains possibly the most well-known fried rice in Singapore. While fried rice may be commonplace staple at most Chinese restaurants, the dish is a star requested by every table at Chen Fu Ji.

Many may have heard the story of how 2 ladies created and glorified this dish but little do many know that the story behind this star dish is not far from that of a rags-to-riches movie script.

The name Chen Fu Ji was derived from the name of the duo’s father, who had started the family’s business in a small coffee shop opposite a famous restaurant frequented by influential Chinese businessmen after World War 2. The family dealt in dark soya sauce initially but switched to selling noodles as Singapore grew in affluence.

Fried rice entered the menu in the 50s and by that time, the business was almost fully operated by Mrs Chen and her 2 daughters, Miss Chan Yit Noi and Miss Chan Yit Siam, who would later become the famous representatives of Chen Fu Ji’s Imperial Fried Rice.

They earned a following in the influential businessmen across the street who were willing to pay top dollar for quality. Fresh crabmeat was added and due to the meticulous preparation process involved, the price of the dish was significantly higher than normal. In the 80s, it was sold at $10 a plate and later rose to $15 before it hit $25 in the 90s.

Customers battled long queues and whether they were served depended on the ladies’ moods. However, that did not stop ardent fans from flocking to the stall daily. The fierce desire to maintain quality led their fame to spread far and wide, reaching even the shores of Japan.

With Mrs Chen’s demise and the closure of the coffee shop, the 2 sisters were unemployed for a short while. That did not last long as new investors resumed the business and once again, found fans in numerous Hong Kong celebrities and local political luminaries.

Eventually, the business was taken over by its current owner, Mr Roger Koh, who sought to preserve the history and quality that Chen Fu Ji has come to be known for. Chen Fu Ji opened its doors at Riverside Point- a scenic and central location. Over 50 years later, one can still sample the same delicious Imperial Fried Rice - all manually prepared and fried with no MSG but lots of pride and heart.

Meet Chef Alvin Koh, also known as The Naked Chef or Porridge King, a quintessence of passion and an embodiment of strong spiritedness.

Once a champion national bodybuilder who had represented Singapore in international bodybuilding competitions, he is now a professional chef, motivational speaker, philosophy writer and a prolific corporate trainer. With the Singapore Heritage Restaurant, he hopes to promote the Singaporean culinary legacy to the world.

Tell us about one event in your life or a dish that had caused a big shift in your views about cooking.When I started out with Porridge King at Katong, our signature dishes were Supreme Century-Egg Porridge with Oyster infusion and Belachan Crystal Rice Noodle. These were handed down from my great-grandmother as family guarded secret recipes.

Creativity led me to my own dishes such as the Jackfuit Fried Rice and Chili-Crab Spaghetti, which I thought might not be able to gain popularity over our traditional recipes but I was wrong. In fact, the new dishes were so well loved that they entered our list of signatures in no time.

I realised that passion and creativity come hand in hand. When you are passionate about something you get excited and become

innovative. It doesn’t matter if you are a chef in your own little kitchen or a big chef working at a 5-star establishment. If you do it with all your heart, people can tell and you will be rewarded with lots of appreciation and even admiration!

If you were to choose a dish to represent yourself, what would it be?The simplest dish is the hardest to master because the margin for mistakes is very narrow. The recipe usually contains only a few basic ingredients. If one ingredient goes wrong, the entire dish is ruined. This is the case for the humble fried rice, which is simple but hard to perfect. Yet its simplicity leaves more room for further evolution.

Creativity seems to be very important to you. What is creativity to you?Creativity is a spontaneity that cannot be forced. It has to be inspired by the unknown which chooses to work through us when our spirit is in harmony with nature in a space where we see without the filtration of our own prejudices. The moment we accept both ourselves and everything around us, we become the open doors for eternity to express its diversities.

What would you tell your children if they were to follow in your footsteps?If they aspire to be a chef, they can learn the basics from me but they must develop a personal style in order to excel. We must respect and learn from our predecessors but not be tied down by the dogma of tradition.

Do you have a unique habit in the kitchen?The media don’t call me Singapore’s Naked Chef for nothing. Do you want to see it?

“Cooking is all about...” Cooking is all about the heart communicating in perfect harmony with mouth and the hands. The mouth makes a request, the heart wills and the hands start performing.

Inspiration often strikes when you least expect it. For Chef Lau Siaw Dee, it was during a regular diving trip off the shores of Desaru.

An avid diver, Chef Lau was out on a routine leisure trip with his friends when he caught a lobster and decided to cook it for dinner. As they were on an isolated island, he could only find rice from the locals so he decided to make porridge using seawater and the lobster. The fresh sea flavours of the lobster worked so well with the porridge that Chef Dee continued to experiment and refine the dish after he had gone home.

That was how The Orange Lobster’s signature dish- the award-winning Lobster Porridge was born.

One can easily ascertain the importance of the dish from the restaurant’s name. Its Chinese name literally translates to “The House of Lobster Porridge”. Besides Chef Lau’s other awards and achievement, this particular dish had won the top prize at a culinary event which was part of the 2008 Beijing Olympics.

The porridge is cooked Teochew style with loose rice grains

swimming in rich golden soup enhanced with lobster roe and accompanied by bright springy lobster. A blanket of fresh spring onions completes the dish, resulting in a dish that is comforting and yet fresh without being too rich.

Besides lobster, the menu features a wide variety of dishes to complete a full meal, ranging from seafood to poultry to staples like rice and noodles. More than a Chinese restaurant, the establishment prefers to think of itself as a restaurant serving Chinese fare with local flavours. Durian with fish sounds odd? Wait till you try Chef Dee’s daring innovation and you may find yourself very pleasantly surprised.

The restaurant is located at Orchard Central, which is a stone’s throw away from Somerset MRT. Designed like a high-class Chinese restaurant, the management assured us that it was purely for the comfort of its patrons and that its prices remain reasonable.
