Edito

The 7th world of bread will be held at the Nantes SERBOTEL where we have the opportunity

and the honor to be welcomed for the 2nd time. This edition will welcome new countries with

still a strong will to make discover the know-how of the bakery professionals from the xhole

globe. The national selections are being held in each country and teams are improving and

performing. At the rate of 9 teams per day, candidates will have 8 h 30 tests during which

they create and produce as original and traditional breads. The nutritional dimension of

bread will still be a very important point to respect. The jury will be composed of professionals

from different countries of the competitors.

The world of bread

October 2018

The world of bread illustrates the ability of our profession to adapt to current consumption

requirements and to meet the expectations of the consumer.

Ancestral and universal, food bread displays its modernity and its adequacy with the needs

of a balanced diet. The Baker of today must incorporate the values nutritional and gourmet

bread. Professionals from all over the world are open to these imperatives.

The world bread was signed "taste and Nutrition." It is the most beautiful showcases of a

current bakery defended by the best of our profession from the four corners of the world.

Any candidate is assisted by a clerk. They are the elite of the future of our business.

New 2017:

- 18 teams competing

- 8 h 30 test

- Special Prize "Snacking".

- The awards as a result of the tests

- 8 hours of live broadcasting (streaming)

Purpose of the competition

O Appreciate the skills of the participants

O Demonstrate, in practice, to a wide audience, the evolution and progress of the Art Baker

O Give new ideas in General of gastronomy area

O Stimulate young people to the profession

This is the reason for which required each team consists of a head Baker assisted by a clerk.

Within the big competition, transfer of know-how, indispensable to the future of the bakery.

Great importance is attached to the preparation of breads care, balanced and diversified,

as well as an attractive presentation.

Nutrition is put forward, through the development of a bread nutrition, taking into account

the optimization of the nutritional content of bread, while respecting the taste, with a special

prize " taste and Nutrition" .

Taking into account new trends, environmental, allows to integrate manufacturing and

putting forward an organic bread, that respects the environment, to the extent possible,

where the creation of a special price " Bio". Pedagogy and the transfer of know-how

between the Baker and his clerk are judged by a specific jury composed of teachers and

trainers. She is awarded the special " better committed ".

The size of the works of art in terms of artistic piece is rigorously scrutinized when editing. 30

minutes are devoted to this exciting and stressful moment. The most beautiful piece of art is

awarded the special " Piece of art ".

The pastries (croissants and brioches) category rewards the best products but also tastier by

the price special " pastry ".

In order to support the expectations of the consumer and the evolution of our profession to

restore out of focus, it is added to the topic, the realization of a balanced sandwich. This

category existed but was not yet in the list of the potential rewards. For the 6th edition, we

have created the special ' Snacking ' (new 2017) price. It must be original both in terms of

taste form, take into account the nutritional values and a balanced diet.

Conditions of participation

The contest is open to all bakers, man or woman, of the nationality of the country they

represent (passport being authentic), older than 25 years to January 1, 2018. Each candidate

must have 5 years minimum experience, and must be assisted by a clerk of 22 years of age

on January 1, 2018.

Selection in the country

For this seventh edition, the ambassadors of each country are responsible for organising the

selections themselves, independently. They must organize competitions and ask the

ambassadors of the Committee to participate, validate and be the guarantors of the work

performed.

Conduct

Each team has 90 minutes of preparation before the competition and 8 hours the day of the

passage.

We have innovated in 2013 with the presence of an international jury of country standout.

Animation of the contest

As to the accustomed, the contest is presented by Roger

FARJAUD. He showed professionalism, remarkable vocal ease,

and a knowledge of being a Baker indisputable. He will be

joined by Michael JAHAN for the English translation part. The

public being professional and international competition, it

seems essential that everyone understand the place.

The contest will run throughout the day.

Here is the program:

6:30: start of the contest for the candidates

12 h 00: first products in front of the jury

14 h 00 / 14 h 30: artistic décor with Assembly of the live room

16 h 30 / 18 h 30: jury and animation

Throughout the day, and on the front of the stage, interviews and testimony on specific

themes that develop ambassadors will be presented:

-the taste

-nutrition

-the transfer of know-how

-organic and taking into account the sustainable development

-fast food and a balanced diet

The contest partners are also required to develop these different axes, according to their

specialization.

The Jury

It is composed of jurors from outside of the countries participating in the contest and chaired

by a recognized professional.

Rewards

The award is the last day at 5 pm, in the presence of officials, partners, the ambassadors of

the bread, the Meilleurs Ouvriers de France and the Public.

This contest rewards the best chef with his committed, with the presentation of the

international trophy of the ambassadors of bread.

1 trophy and 6 special prices:

- the international trophy of ambassadors

- the 'Piece of art' special award

- the special price 'taste and Nutrition'

- the price of the "best clerk"

- the special prize "pastries"

- the "Snacking" special prize

- the special 'Bio'

The international trophy

"I wanted to respect the tradition of the bakery to find out:

-the symbol of water glass

-the metal of the flame

-Wood (Walnut) family and country side of family life.

The trunk is stretching the dough by the Baker. The top of the trophy is

drawn spiral that symbolizes the kneading of the dough with the Center

medallion of the ambassadors of the bread, representing the transfer of

know-how through the hands. »

The support of the MEAE

The world bread fits in line with events highlighting French

gastronomy in the world, such as "taste of France / Good France"

which brought together in March 2015, lovers of good food

accompanied and enhanced by good and fine breads.

As part of the network of promoters of our gastronomy, excellence and know-how of the

ambassadors of bread are now doubly exposed on all continents.

Indeed, the Organization of the 5th world of bread has received unconditional support from

Mr the Minister Laurent Fabius and was thus placed under the patronage of the Ministry of

Foreign Affairs and International Development, who assured us of assistance in the

administrative procedures of our candidates. Too many were the times where a team was

able to participate in the events of a world of bread by fault of visa or passport issued.

The ambassadors of France abroad received to promote the 5th world of bread.

This support has been renewed by Mr. Jean-Marc Ayrault Minister for the 6th edition of the

world of bread. It stressed its desire to radiate the gastronomy and the values of French

excellence internationally. In continuity, it is the Department of Europe and (MEAE) Foreign

Affairs that continued support for may 2017.

Ambassadors on the Web/Web TV

Association of the ambassadors of the bread must be relayed around the world. As a result,

she renewed the face of internet sites by creating a single access:

www.ambassadeursdupain.com on which, everyone can find the events organized by the

association.

She is also on Facebook, Twitter, YouTube and Instagram. This allows to broadcast live the

results of various competitions and share some videos of each day of animation.

These are Roland HERZOG, David POUILLY and Dominique PLANCHOT, assisted the

Secretariat, videographers and a graphic designer who coordinate the dissemination of

information.

In 2015, the ambassadors of the bread inaugurated their Internet TV. The 4 days of animation

of the world of bread were broadcast Live so that each country support, every family

involved can follow the course of events.

Operation was renewed from 22 to October 25, 2017, from the Serbotel of Nantes. The images

were visible on the website of the world of bread:

BEST OF Mondial du Pain

BEST OF Mondial du Pain is a creation of the ambassadors of

bread in order to expose the competition abroad. With 5

editions to success of the world of bread, the bread of

Ambassadors wanted to meet the demand of the other

members of the Organizing Committee.

This super final in 2016, between 6 teams of the Mondial du Pain

of the previous bread and was intended to take place outside

the France.

In 2016, the teams participating in the 1st edition were:

- Switzerland

- France

- Belgium

- Italy

- Japan

- Australia

Members of the Organizing Committee of the world of bread have delegated the

organisation of this event to the Ambassador of the bread of the country receiving the

competition: TAIWAN and interpret strong hands on site from 27 to 30 October 2016.

The Ambassadors of bread, a State of mind

The international association is present in 23 countries.

They are the organizers of selections and the tests. They are the guarantors of the in-house

expertise of the Organization of contest and competitions.

Their mission: to share and promote a new vision of the bread that combines the nutritional

and gastronomic values. Strong supporters of the bread of craft tradition, they have the

ambition to be the allies of our health and the accomplices of our taste. For some best

workers of France (MOF), they did World of bread, bakery reference global event serving

ideas of bakers from all continents.
