O U R B E G I N N I N GIt all started with a friendship between Ulrich and

Peter, who opened a small burger restaurant in

Frederiksborggade in Copenhagen in 2007. The

main purpose was to make delicious burgers with

quality ingredients in various ways — served in a

cosy and low-key atmosphere. And this is still the

case. No nonsense, just a lot of ambition. Peter

made the burgers and Ulrich served them. It is

still the two buddies and their families who are in

charge of Halifax Burgers. But the family has grown

to more than 300 employees, and now we have 8

Halifax-restaurants in Copenhagen, one in Hillerød,

and one in Køge. And why the name? Because

Peter and Ulrich met each other as students in

Halifax, Canada.

O U R F O O DWe make a great effort when we make burgers.

At 5AM in the morning, 7 days a week, our bakers

and chefs open our central kitchen in Hvidovre

and start the production of buns and all the other

ingredients in your burger. This way, our restaurants

receive freshly prepared goods every day. The

burger bun you eat today, is baked today. We use no

preservatives and no artificial flavours or dyes. We

are not perfect, but we promise you that nothing will

find it’s way into a Halifax kitchen without thorough

consideration about it’s quality, taste, environmental

impact and production method.

O U R P E O P L EThe secret ingredient at Halifax is us! The entire

Hali-family. Dishwashers, chefs, office people,

waiters, bakers, economists and many more. We

don’t mean to undermine the burgers we make. But

if we are to be honest, a burger would not be much

on its own.

Every day, we do what we can to honor the values

Halifax Burgers was built upon back in 2007 in

Copenhagen. At Halifax we are thorough, honest,

decent and we make room for each other. We hope

you can sense that.

Also – we listen. Input and suggestions, critique and

praise will all be received on [email protected]. We

are always ready to improve.

O U R L E F T O V E R SWe continuously change the composition of our

menu and ajust our portion sizes to try to match our

guests' appetite, and reduce the amount of food

waste as much as possible. However, we make

sure to recycle the leftovers — and we have done

just that for 7 years now. We don't have chickens

in the back of the restaurants, but we have made a

deal with our waste collectors. Every day our hard

working staff sort all our organic waste and frying oil

into seperate containers. The organic waste is taken

to a biogas facility and reused to heat houses or to

produce energy.

This might be nice to know, the next time you feel

bad about leaving something behind on the plate.

In 2007, Kenn Husted who owns and runs Husted Vin, showed up with a bottle of red wine in his hand, and wished up good luck when we opened our first restaurant in Copenhagen. Our long and good relation aside, we love Husted because of their passionate approach to wine, their ability to match their wines to our menu, not to mention their interest in wine

production, which considers both the environment and the people involved.

WEINBAU DER LEBENSHILFE - ORGANICA sweet, juicy, fresh and berry German from Pfalz. A summer drink! Enough sweetness to match ketchup, enough acid to match mayo. Really good with the Berlin burger.

CHATEAU LA JEANNETTE - ORGANIC A very classic flowery and French rosé from Provence. A real summer dream. Will satisfy most women... and their men. Wonderful with a vegetarian Zürich.

JE T’AIME - ORGANIC A fiery wine from Rhône with Grenache, Cabernet Franc and Syrah grapes. Great juiciness, dark and warm, spicy notes, with a cleansing acidic bite. Balanced richness and matching sweetness and smoke – great with Zihuatanejo and Lone Star.

WEINBAU DER LEBENSHILFE - ORGANIC Light, pale and delicate red wine with Spätburgunder (the German Pinot Noir) from Pfalz. With rounded and sweet tannins – great with cheese and tomatoes, like in Palermo.

SINCERE RED A Pinot Noir from California – juicy like cherries, fullbodied with a little liquorice in the end. Enjoy it cool. Great as a companion to a potent burger with bacon and barbecue – a knock-out with Lone Star!

ALE NO. 16 / VOL. 5,7% Ale no. 16 has a malty taste and a well-rounded sweetness. A well deserved bestseller, from Refsvindige Brewery.

WHEAT / VOL. 4,5% A nice and refreshing beer made for thirst-quenching with acidity from orange peel and notes from apple and honey.

We have brewed an espresso from organic fairtrade beans from Ethiopia, added Kahlua, classic bitter and a dark Canadian maple syrup - and it topped off with a few coffee beans. Try our take on this unique, cold and creamy 80's classic.

A classic cocktail with vodka and organic tomato juice. In our version it's spiced up with worcestershire sauce, lemon, celery salt and tabasco. Shaken and served on ice - with a slice of lime, celery and crispy bacon on the side.

cheeseburger: Brioche bun, regular size patty, cheddar, pickled cucumber, onions, aioli and our very own Brooklyn sauce*.

*) Brooklyn sauce is our homemade cheeseburger dressing. Together with our homebaked brioche buns, it makes our cheeseburger our very own! If you ask our headchef Frank, he would describe the Brooklyn sauce as a tomatofied mayonnaise with a spicy taste of tomato puré, smoked paprika, cellery salt and a hint of chili, finished off by a nice umami. And with our organic ground beef, the soft, fatty cheddar and the sour cucumbers, it hits just the right spot.
