Insulin at work
1. Insulin is a hormone released by the pancreas
2. It tells the cells to take up sugar to be turned into energy
3. Insulin tells the body to store any excess blood sugar as glycogen and fat
4. Insulin also tells your cells to stop burning fat
5. Blood sugar levels drop in response to insulin

Slowing down the digestion of carbohydrates?
Refining and processing procedures
Foods that are more textures, chewy, fibrous and crunchy generally take longer to digest and release glucose into the blood stream more slowly than refined and processed foods
The amount and type of fibre is also a major factor; Soluble fibre, slows down the digestion of starches
along with the absorption of glucose into the blood stream
The ripeness of food can also affect the absorption rate (the riper a banana the greater GI)
Acidic foods help to slow the digestion of starches
