To be sure everything goes as smoothly as possible, and to ensure our teas demonstrate their best character, please review this demo guide closely. In addition to sampling the taste of our loose leaf teas, we would like people to be able to experience them visually and sensorily. Please display a few teaspoons of each product on a small white saucer/tray on the demo table. This will enable customers to see the quality of the tea leaves and it will also allow the wonderful aromas to permeate the demo area. Be sure to convey that Hampstead Teas are both biodynamic and fair trade products. Having at hand a display of tins for purchase enables you to easily call attention to the value of our loose leaf teas compared to packaged teabags. BREWING INSTRUCTIONS You will need a clean vessel in which to brew the teas. If the vessel is not clean, the tea will be tainted and will not taste correct. Tea absorbs flavours and odours from other beverages; if you brew tea in an air pot that contained coffee it will taste like coffee. This is because tea is hygroscopic (absorbs water and flavours). Bring the water to a roaring boil and first "scald" the container by filling it with boiling water, letting it sit for a few moments, then emptying the container. This helps retain the temperature of brewed tea. Use filtered or bottled water. WHEN BREWING TEABAGS Use 3 teabags for each 1 litre of water. Drape the teabags over the side of the brewing vessel, securing in place with the lid. Brew for 3-4 minutes. A high-quality, flavoursome tea should be ideal at this point. When finished brewing, quickly swirl the teabags in the brew and remove. It is very important that you brew the tea for the correct amount of time. Most people who talk about drinking bitter tea, they are referring to tea that is over-brewed. Please do not allow the tea to steep for longer than the designated time. Teabags

All of our teabags contain the highest quality biodynamic and organic teas and herbs, we never use artificial flavourings

or colourings nor do we use substandard base teas in blends such as Earl Grey. Cut open a teabag and notice that the

pieces inside resemble actual bits of leaves and herbs, not dust like the contents of many other brands, all of our

teabags are staple free and non-chlorine bleached in order to avoid any contaminents.

Because our biodynamic green tea is of a very high quality and grown at a high altitude, it is never grassy or bitter.

Loose leaf teas available in tins and pouches

Loose leaf teas offer superior flavour because the large intact leaves retain more moisture, always look for a scattering of

lighter coloured, fuzzy ‘tips’ in loose leaf teas. These young buds contain the most nutrients and flavour. Also, pay close

attention to the size and shape of loose leaf teas, ours are large and expertly twisted to achieve optimum flavour retention.

Because the majority of our loose leaf teas are from a single estate, they have complex flavours that vary slightly from year

to year depending on that season’s growing conditions. This is akin to a fine wine and imparts cherished nuance and

character.

SINGLE ESTATE

Hampstead's Single Estate teas defy tradition, using hand-picked leaves whose flavor, like fine wine, varies

slightly with each harvest. This is opposed to the common practice of blending tea purchased from the open

market to achieve a uniform, nondescript flavour, year after year. Harvested from the world's most renowned

tea estates, our award winning teas are valued for their unique taste.

BIODYNAMIC AGRICULTURE

Our tea is grown using the coveted and rigorous system of environmentally sound agriculture known as

Biodynamics. Biodynamic farming is often referred to as "organic plus" as it follows many organic farming

practices. However, biodynamics is more deeply concerned with the health of the farm and its natural

ecosystem. All of our teas are Demeter certified biodynamic and organic. Explain why tea should be

organic. Unlike fruits, for example, tea leaves are never washed after they are harvested. All chemicals that

are applied to conventionally farmed plants ultimately land in your cup.

FAIR TRADE CERTIFIED

At Hampstead Tea we believe that, in addition to preserving and protecting the land we use to grow our

quality teas, we must also respect the people who work there. Fairtrading ensures that a portion of the

proceeds from every package of tea goes directly to the tea estate workers to fund vital social development

programs such as village electrification, education initiatives and medical care.

EARTH FRIENDLY FARMING

Unlike traditional tea estates, where clear cutting and mono-cropping is the norm, our biodynamic partners

strive to support the natural ecosystem and the wildlife that depends on it. Biodynamic estates prove that

people can live in harmony with nature. Mulching, natural bio-gas, tree plantation, permaculture and grass

roots entrepreneurship are all part of the biodynamic way. Biodynamics sees each individual as a self-

respecting unit working with dignity and devotion to the land on which they were born. Workers are given

the opportunity to keep dairy cattle and sell their manure to the estate, which is then infused into the soil

as natural fertilizer. Also, the biodynamic composting process releases methane to run bio-gas stoves, com-

pletely eliminating the need to cut down trees for cooking fuel.

ENVIRONMENTALLY FRIENDLY PACKAGING

With our boxed teas, we use only staple free, non-bleached tea bags. The paper contains no chlorine. This

ensures there is no tea contamination due to packaging materials. Loose leaf teas such as the AFA tins are

even more environmentally sound because there is minimal waste. Loose leaf teas are also a great value.

AWARD WINNING QUALITY

The most important aspect of Hampstead’s products is their exceptionally pure taste. Our teas have won

many taste awards. Our signature Darjeeling tea won the best organic hot beverage award from HRH Prince

Charles. Some of our other teas have won awards from Raymond Blanc and Alice Waters—both internation-

ally renowned chefs and restaurateurs.
