c. Job Description

a) Teaching

Teaching of the following courses at various times at both undergraduate and postgraduate levels:

Introduction to Food Science and Technology, Food Chemistry and Biochemistry, Food Analysis, Product Development, Food Quality Control and Plant Sanitation, Advanced Biochemistry, Food Packaging, Storage and Transportation, Food Dehydration Technology, Food Rheology, Food and Flavor Chemistry, Sensory Evaluation, Food Processing Technology, Scientific Writing and Presentation and Special Topics In Food Science and Technology.

In addition to these, I have supervised over 45 Undergraduate projects in various Universities since 1985 (Makurdi, Abeokuta and Ota) and co-supervised 2 MSc Dissertations in Food Science and Technology here in Bells University and 1PhD thesis in Nutrition working in collaboration with colleagues in Federal University of Agriculture Abeokuta and the University of Ibadan, even whilst in Cadbury Nigeria Plc. Many of these studies have been published and some of my students have become Professors in various Universities today.

I have also for over twenty years been involved in the heavy Teaching and Research combined with the challenges of pioneering work as an academic staff of the University of Jos, (Makurdi Campus) now Federal University of Agriculture, Makurdi; College of Science and Technology of the University of Lagos (COSTAB), now Federal University of Agriculture Abeokuta, and since 2006 in Bells University of Technology, Ota.

During this period, I have been able to bring my industry experience to the development and shaping of an innovative curriculum for Food Science with Business, pioneered here in Bells University of Technology, Ota to strengthen the role and relevance of Food Scientists in the industry in the future.

b) Industrial/Academic Research

As a Food Technologist, the industrial research results of having spent about 15 years of my career in technical/leadership positions in industry speak for themselves. It is noteworthy that many products of my research output have been commercialized and some of them still adorn supermarket shelves across the country, including

e. Job Description in the Food Industry

For about 15 years in the Food Industry, I held very high positions of management responsibility straight from the classroom as

i) Technical Manager for Cadbury overseeing Research and Development, Quality Assurance for nine factories ranging from Food Drinks (Bournvita, Pronto, Richoco) to Foods (Knorr, Tomapep, Cheff Tomato Puree) and Confectionery (Tom-Tom, Buttermint, Malta Sweets, Trebor Mints, Goody-Goody, Eclairs, etc and Parozone) as well as Environment and Safety Management culminating in the production of the first-ever Environmental Audit Report of Cadbury Nigeria Plc conducted and prepared in-house under my leadership in 1997.

This period witnessed unprecedented growth in the Development of New Food Products in Cadbury’s portfolio of products, including such new introductions as Dadawa, Cheff Peppersoup Cubes, Toffee, Improved Sorghum Extracts, Take-5 Multi-vitamin Sweets and particularly the pace-setting introduction of the first voluntary Vitamin-Mineral Fortified Food Drink in Nigeria, Bournvita, in June 1994. This was before the advent of the Nigerian Food Fortification Programme and the invaluable experience of which has I have continued to provide leadership

in the National Fortification Alliance in Nigeria till today. It was for this reason that I was appointed Country Consultant to the Geneva- Based Global Alliance for Improved Nutrition in Nigeria in August 2007 and continued to support GAIN in various project initiatives, including the First-ever National Large- Scale Fortification Compliance Survey in Nigeria for which I was Project Leader with

Bells University as Grantee (Value $160,000) conducted in 2012, after the Nigeria office was later opened in April 2011.

ii) As Quality Assurance Controller and later as Director, Quality Assurance in Honeywell Flour Mills Limited, I was charged with the responsibility of managing Quality Assurance, Development of New Products, Environmental and Safety Management as well as personally driving the achievement of ISO 9001:2003 which status was attained without the support of any external consultant in November 2005. By this achievement, Honeywell Flour Mills Ltd became the first Flour-Milling Company in Nigeria to be ISO-Certified for Quality Management Systems.

iii) In this position, I was also charged with driving the achievement of the National 10% Cassava inclusion Policy of the Government for the entire Flour Milling Industry which was successfully done as an enduring legacy till today, as well as the commencement of a very successful In-House Training School with a comprehensive 3-week curriculum for Local Bakers as a means of improving the quality and status of Baking Technology in Nigeria. It was from this position that I was persuaded to voluntarily return to the University system as a Professor of Food Science and Technology here in Bells University of Technology in 2005 before eventually assuming duty in 2006.

GENERAL

A. I am privileged to be one of the few scientists in Nigeria to have had such rich and unique scholarship experiences in a career spanning, Research, Academics and Industry, combining theory and practice at the highest levels. My various pioneering experiences over the last forty years of my career have prepared me adequately for this position.

B. The unusual industrial experience and knowledge of the relevant stakeholders in Development Space spanning Government, Private Sector Organizations and International Development Partners, which was the basis of my appointment in 2007 as the Country Technical Consultant for the Food Fortification and other Initiatives in Nigeria by the Global Alliance for Improved Nutrition (GAIN) have also added to my pioneering experiences and helped me to build an international network that will be useful for the University Grants and Fellowships Directorate which is an imperative need for the benefit of academic staff and particularly for staff development

C. In addition, I am personally blessed with a goal-driven, creative and highly analytical mind with excellent organizing, planning and practical trouble-shooting skills which many of my peers will readily attest to. I have always believed in a principled and systemic approach to issues as a way of building a sustainable institutional culture.

D. I am also team-oriented and possess the critical financial and accounting management skills (from the highly reputable Lagos Business School) necessary in the present atmosphere of dwindling resources and opportunities in the country and especially low internally generated revenue in Bells University which is likely to affect both public and private Universities in the long run and which therefore calls for creative leadership and prudent management of resources at this time. In this regard, it is my intention to strongly explore the avenues for creating attractive spin-off industries from academic research outputs of Bells staff as the first of its kind in Nigeria.
