    Creamy Vegetable Soup (Terbiyeli Sebze Corbasi) 

    1

    onion, chopped

    1 carrot, chopped round

    1 large potato, cut into cubes

    1 cup sweet peas

    1 egg

    3 tbsp yogurt

    2 tbsp flour

    ¼ cup canola oil

    5-6 cups chicken stock 

    1 tbsp salt to taste

    ½ tsp black pepper

    In a pot, sauté onions in canola oil for about 3 minutes over medium heat and add flour and sauté till

    the flour turns yellow. Stir in potato cubes, carrots and peas. Saute for 2-3 more minutes and add

    chicken stock and salt. Bring to a boil and then, cover the lid halfway and simmer over low heat till thevegetables get soft (for about 6-8 minutes).

    Meanwhile, beat the egg and yogurt in a bowl. Stir the yogurt sauce into the soup slowly and turn the

    heat off.

    Sprinkle with black pepper and serve Creamy Vegetable Soup hot.

    3 yemek kasigi yogurt

    ¼ su bardagi kanola yagi

    5-6 su bardagi tavuk suyu

    1 yemek kasigi tuz

    1 cay kasigi karabiber

    Soganlari kanola yaginda yaklasik 3 dakika kadar orta ateste kavurun. Unu ilave edin ve un sariya

    donene dek kavurun. Sonra, patates, havuc ve bezelyeleri ilave edin. Yaklasik 2-3 dakika daha kavurun

    ve tavuk suyu ve tuzunu ilave edin. Kaynayinca kapagini aralik birakarak kapatin ve sebzeler pisene

    dek hafif ateste pisirin (yaklasik 6-8 dakika).

    Bu sirada, yumurta ve yogurdu cirpin ve corbaya yavasca karistirarak ilave edin. Ocagin altini kapatin.

    Corbanin uzerine karabiber serpin ve karistirip sicak servis yapin.

    Minestrone Soup (Sebzeli Italyan Corbasi) 

    1 onion, chopped

    2 carrots, roundly sliced

    1 zucchini, chopped

    3-4 Tbsp olive oil

    1 green/banana pepper, chopped

    2 cups tomatoes, crushed

    1 ½ cup beans (any kind), cooked

    ½ cup green beans, cut into bite sizes

    1 cup small shaped pasta

    ½ cup celery stalks, chopped

    4 cups hot water (chicken broth)

    1/3 cup parsley, chopped (optional)

    ½ tsp dried basil

    1 Tbsp salt to taste

    Black pepper to taste

    Saute onions and garlic with olive oil for about 3-4 minutes. Stir in carrots, zucchini, celery stalks,

    peppers and green beans. Cook for 8-10 minutes. Add hot water/chicken broth, beans, tomatoes, pasta,

    and basil. Add salt and pepper to taste. Bring to a boil.

    Reduce heat; simmer, uncovered, for 15 minutes. Stir in parsley. Cook 5 minutes longer or until past is

    tender. Serve hot.ENJOY

    1/3 su bardagi maydanoz, dogranmis (istege bagli)

    1 cay kasigi kuru feslegen

    1 yemek kasigi tuz

    Karabiber

    Soganlari zeytinyaginda yaklasik 3-4 dakika boyunca sote edin. Sonra, havuc, kabak, kereviz saplarini,

    biberleri ve yesil fasulyeleri ilave edin. Yaklasik 8-10 dakika boyunca ara sira karistirarak pisirin.

    Tavuk suyu/sicak suyu ilave edin. Kuru fasulye, domates, makarna ve feslegeni ekleyin. Tuz vekarabiberi atin, kaynamaya birakin.

    Kisik ateste uzerini kapatmadan 15 dakika kadar pisirin. Maydanozu ilave edin ve 5 dakika ya da

    makarnalar pisene dek pisirin. Sicak servis yapin.

    sweet potatoes, peeled and cubed

    2 tbsp canola oil

    1 large onion, chopped

    2 tsp ground cumin

    3-5 cup chicken broth

     cup yogurt2 tbsp parsley/cilantro, chopped

    ¼ cup toasted pumpkin seeds (optional)

    Saute onions with canola oil and cumin over medium heat for about 3-4 minutes. Add cubed potatoes

    and chicken broth. Simmer for about 20-25 minutes. Puree soup and add one cup yogurt and

    parsley/cilantro.

    Serve soup with a dollop of remaining yogurt and a sprinkle of pumpkin seeds or parsley if desired.

    Soganlari kanola yagi ve kimyon ile birlikte 3-4 dakika orta ateste soteleyin. Dogranmis patates ve

    tavuk suyunu ilave edin. Kisik ateste yaklasik 20-25 dakika boyunca pisirin. Blendir ile corbayi pure

    haline getirin ve bir su bardagi yogurt ile maydanoz/kisnis yapragini ilave edin. Guzelce karistirin.

    Corbaya kalan yogurttan bir miktar ilave edin ve arzu ederseniz kabak cekirdegi ya da maydanoz ile

    Tortilla Soup (Tortilla Corbasi)-Mexican 

    3-4

    piece 6 inch corn tortillas

    ¼ cup canola oil

    1 onion, chopped

    2 gloves of garlic, finely chopped

    1 medium pepper, chopped (mix chili and pepper if desired)

    4 cups chicken broth/stock 

    1 ½ cups tomato, diced

    1 ½ cups cooked chicken, shredded

    ½ cup mild melting cheese (Monterey jack/cheddar), shredded

    1 cup corn kernels (optional)

    1 ripe avocado

    Chopped cilantro/parsley/dill

    1 lime/lemon, cut into wedges¼ tsp cumin (optional)

    ½ tsp sugar

    1 tsp salt to taste

    Cut the tortillas into 2 inch long finger strips and fry them in a large skillet with the canola oil. Both

    sides should be lightly browned. Leave them aside.

    In a pot, sauté onions over medium heat with the remaining oil. Then, stir in garlic and pepper. Cook

    for 2-3 minutes and add tomatoes, salt and sugar. Bring to a boil and reduce the heat. Simmer for 10

    minutes and stir in chicken and cook for 5 more minutes. Then turn the heat off and add cumin and

    corn kernels (optional).

    To serve, cut the avocado into 1 inch slices. Divide tortilla strips into bowls, ladle in soup. And then,

    top with avocado, cheese and cilantro/parsley/dill. Serve warm with lime/lemon wedges.ENJOY

    4 su bardagi tavuk suyu

    1 ½ su bardagi pismis tavuk eti, ince didilmis

    1 olgun avocado

    ½ su bardagi eriyen peynir (kasar peyniri/cheddar), rendelenmis

    1 su bardagi misir tanesi (istege bagli)

    Dogranmis kisnis yapragi/mayadanoz/dereotu

    1 limon, dilimlenmis

    ½ cay kasigi kimyon

    1 cay kasigi seker1 tatli kasigi tuz

    Tortillalari parmak kalinliginda seritler halinde ve yaklasik 4 cm uzunlugunda kesin. Genis bir tavada

    sivi yagda her iki taraflari da hafifce kizarana dek kizartin. Bir kenara ayirin. Haslanmis olan tavuk

    etini ince ince didin ve suyunu daha sonra corbada kullanmak uzere ayirin.

    Bir tencerede, sogani ve geri kalan siviyagi alin. Orta ateste kavurun ve sarimsak ile biberi ilave edin.

    2-3 dakika pisirin. Sonra domates, seker ve tuzu ilave edin. Biraz cevirin ve tavugu hasladiginiz suyu

    ilave edin. Kaynamaya baslayinca hafife alin ve yaklasik 10 dakika kadar kaynatin. Daha sonra tavugu

    ilave edin ve 5 dakika daha pisirin ve atesten alin. Kimyon ve misir tanelerini ilave edip karistirin

    (istege bagli).

    Servis yaparken, corba kaselerine kizartmis oldugunuz tortilla seritlerini paylastirin. Avokadoyu 2-3

    cm kalinliginda dilimleyin. Corbayi kaselere dokun ve uzerine avocado dilimlerini, peynir rendesini vekisnis yapragi/maydanoz/dere otu koyarak, yaninda limon dilimleri ile servis yapin. AFIYET OLSUN
