Value-Added Beef Workshop: Production and Cost Considerations for Finishing Animals for Direct Marketing Workshop Locations Alcoa – September 30, 2013 Clarksville – October 7, 2013 Cookeville – October 14, 2013 Spring Hill – October 21, 2013 Greeneville – November 14, 2013 Jackson – December 10, 2013 A meal will be served at each workshop but seating is limited so please pre- register soon to reserve a seat. There is no cost to attend the workshops but PRE-REGISTRATION IS REQUIRED for meal count no later than one-week prior to the workshop. These workshops are conducted as part of the Tennessee Value-Added Beef Program and made possible in part by funding from the sale of agricultural specialty license plates (the “Ag Tag”). Funds received from Ag Tag sales are returned to the agricultural community in the form of grants for youth programs, marketing development projects and other agricultural activities. The Tennessee Value-Added Beef Program is also funded in part by funding from the USDA, Federal-State Market Improvement Program. Programs in agriculture and natural resources, 4-H youth development, family and consumer sciences, and resource development, University of Tennessee Institute of Agriculture, U.S. Department of Agriculture and county governments cooperating. UT Extension provides equal opportunities in programs and employment. This workshop qualifies as a “half-credit” toward the educational requirements for 50% TAEP cost share for agriculture diversification programs. For a full credit, the “half-credit” from this workshop must be combined with the “half-credit” available by participating in the “What You Should Know About Beef Quality and Meat Cuts” workshop. Both “half-credit” workshops must be completed by December 31, 2013. The workshops are for producers that are interested in creating more value from their animals by finishing them with the goal of providing consumers the products they are willing to buy. The emphasis in these workshops will be on production practices and developing budgets for various production systems. Topics will include:

ρ Production considerations for grain-on-grass beef

ρ Cost of production factors ρ Production budgets for grain-finished, grass-finished and grain-on-grass beef
