Last year, our first time celebrating Christmas here on the is-land, we wondered why no one sold Christmas Trees? Back in Missis-sauga and in the states, there seemed to be pop up tree shops on every corner where one could go pick out their trees, get them wrapped up and taken home. Obviously, trees are plentiful around here and even if you don’t have any on your prop-erty that you’re willing to cut down, someone you know might. But does everyone?

We have an artificial tree, primarily because our cats would destroy a real one and to be quite honest, they’re a bit of a mess after a while. The cats would destroy the artificial one too if they could, but fortunately the qual-ity of the trees have really improved over the years.

When we asked a few people about where they get their Christmas trees, most said either they too had a fake one or they just cut down their own. For those that weren’t talking about getting them off their own property they somewhat discretely implied they were poached. It wasn’t until this year that it was mentioned to us that it’s legal for you to cut one down off the highway.

There are several news articles written about cutting down Christmas trees for free on crown land, however, it

was not too easy to get an official answer. Maybe it’s just not that big of a deal? We have seen a few places in the Sault selling trees and there are far, far fewer than we ex-pected, and this likely a big reason why. While we cannot 100% say off the highway anywhere is okay (please check with an official before you cut anything, and confirm you are not on someone’s property), the Ministry of Natural Resources and Forestry did confirm via phone call that in Northern Ontario you are allowed to cut one tree per year on crown land at no cost. AT CHRISTMAS-TIME, MEN ANDWOMEN everywheregather in theirchurches to wonderanew at the greatestmiracle the world hasever known. But thestory I like best to re-call was not a mira-cle—not exactly.

It happened to a pas-tor who was very young. Hischurch was very old. Once, longago, it had flourished. Famous menhad preached from its pulpit, prayedbefore its altar. Rich and poor alikehad worshiped there and built itbeautifully. Now the good days hadpassed from the section of townwhere it stood. But the pastor and hisyoung wife believed in their run-down church. They felt that withpaint, hammer, and faith, they couldget it in shape. Together they went towork.

But late in December, a severe stormwhipped through the river valley, andthe worst blow fell on the littlechurch—a huge chunk of rain-

soaked plaster fell out ofthe inside wall just be-hind the altar. Sorrow-fully the pastor and hiswife swept away themess, but they couldn’thide the ragged hole.The pastor looked at itand had to remind him-self quickly, “Thy will bedone!” But his wifewept, “Christmas is onlytwo days away!”

That afternoon thedispirited couple at-tended an auction held

for the benefit of a youth group.The auctioneer opened a box andshook out of its folds a handsomegold-and-ivory lace tablecloth. Itwas a magnificent item, nearly 15feet long. But it too, dated from along-vanished era. Who, today,had any use for such a thing?There were a few halfhearted bids.Then the pastor was seized withwhat he thought was a great idea.He bid it in for six dollars andfifty cents.

He carried the cloth back to thechurch and tacked it up on thewall behind the altar. It com-pletely hid the hole! And the ex-

Wild Turkey

Most of us will be eating turkeys over Christmas and many of us will see wild ones on our travels through-out the island. The wild turkeys were introduced to St. Joseph Island back in 2004 as a collaborative effort between the SJIHAA and the MNR. In total, 84 wild turkeys were released on St. Joseph Island at 3 separate sites.

Occasionally, we see large groups numbering well over a dozen, and sightings pretty much happen everywhere so it’s probably safe o say they are doing quite well and reproducing at a stable rate. By 2008, only four years after the initial release of wild turkeys, the MNR determined that all of the criteria had been met to open a spring hunting season.

Interestingly enough, the wild turkey (Meleagris gallopavo) is the same species of turkey we eat for Christmas and other holidays. They are native to North America (the wild turkey here originally came from southern Ontario). The turkey probably got its name from the domesticated variety being imported to Britain in ships coming from the Levant via Spain. The British at the time therefore associated the wild turkey with the country Turkey and the name prevails.

Before seeing them here we had no idea turkeys can actually fly. While this is usually just a very small burst, they can be seen in trees occasionally and can travel up to 400 meters. Wild turkeys consume a variety of foods such as acorns, nuts and other hard mast of various trees, including hazel, chestnut, hickory, and pinyon pine as well as various seeds, berries such as juniper and bearberry, roots and insects. Turkeys also occasion-ally consume amphibians and small reptiles such as lizards and snakes. Poults have been observed eating insects, berries, and seeds. Wild turkeys often feed in cow pastures, sometimes visit back yard bird feeders, and favor croplands after harvest to scavenge seeds on the ground. Turkeys are also known to eat a wide variety of grasses.

We actually got to try some yummy wild turkey at the Hunter’s and Anglers’ Wild Game Dinner last year and we bet they will have it again.

Tree Lighting and Carolling

Saturday was deceivingly cold, the sun was shining and blue sky made a rare winter appearance. In reality the temperature was quite low but that did not bother those who came out to carol for the Matthews Memorial Hospital Association tree lighting ceremony.

Many showed their support both by showing up for the ceremony and by making donations to the hospital. See the following page for the list of generous donors. To quote Lavera Crack “May none of you need the hospital this Christmas season, but be glad that it’s there if you need it”.

As 2017 draws to a close, I would like to thank all my clients and friends for their prayers, cards and emails of encouragement and good wishes over the past year. Recipe Corner Part 2 from last week Pastry Cream1 quart milk½ cup sugarPinch of salt6 large egg yolks½ cup all-purpose flour2 teaspoons vanilla extract4 oz semisweet or bittersweet chocolate1 recipe Sponge Cake Layers (recipe follows)½ cup dark rum½ cup apricot jam1 cup heavy creamFresh raspberries for garnish

To make the pastry cream, bring 3 cups of the milk, the sugar, and salt to a simmer in a heavy saucepan over medium heat, stirring to dissolve the sugar. Remove from the heat.

In a large heatproof bowl, whisk the egg yolks and the remaining 1 cup milk until blended. Place the flour in a sieve and sift it over the egg yolks, whisking until smooth. Beat in the hot milk a little at a time.

When all of the milk has been added, transfer the mix-ture to the saucepan and return it to the heat, until the mixture begins to boil. Reduce the heat and cook for 30 seconds more. Remove the pan from the heat and stir in the vanilla.

Divide the cream between two bowls. Break up and add the chocolate to one bowl and let stand until softened. Stir until the chocolate is completely melted and there are no streaks. Cover both bowls with plastic wrap, pressing the wrap against the surface of the cream to prevent a skin from forming, refrigerate until cold. (the pastry cream can be made up to 24 hours ahead.)

To assemble, choose a large deep serving bowl with at least a 3 quart capacity. Split the cake layers horizon-tally in half so that you have 4 layers. Don’t worry if they are not perfect. Stir together the rum and jam.

Spoon half of the vanilla pastry cream into the bottom of the bowl. Place a cake layer on top and brush with one quarter of the rum mixture. Spoon half of the chocolate cream on top. Place another layer of cake on top and brush with the rum mixture. (don’t worry if the layers slide…. Remember, this will be more like a soft spoonable trifle than a layer cake. Spoon the remain-ing vanilla pastry cream over it. Place another cake layer on top, and brush with the rum mixture. Finish with the remaining chocolate cream, cake and the last of the rum mixture. Cover tightly and refrigerate for 3 hours or up to 24 hours.

Just before serving, in a large bowl with chilled beaters, whip the cream until soft peaks form. Spoon the cream on top of the dessert. Garnish with raspberries…..
