Summarizing Ardya Commissary situation before my interference was as follow:

1.Dispatching area was missed2.Bread and viennoiserie mixed in 1 room3.Washing area implemented in the middle of the commissary4.Offices implemented inside the production area5.Missing an area for the sandwich production6-Hygien check list system didn’t exist 7-The facilities did not take into consideration any freezers to store frozen breads, croissants and deep freeze Items as well as the cycle of deep freeze was unknown.8-The division of the dish washing room as it is was (no separation with production area) Was a hazard and contradict hygiene guideline and disrupted the cycle between clean and dirty. 9.Mixing production for mise en place, salads, sandwiches and bread in single area, also disrupted production.10.No hand washing sink is placed in all the commissary.11.No reception area.

Studying the demanded quality of SBX

I had established and qualified the

needed raw material.

This home work gave us a clean view

of what qualities of row material is

needed and consequently I requested

our procurement department to see

best local suppliers or even identify

international manufacturers for long

term based on the said study I

arranged for the necessary storage for

said quantities for a period of 3 months

located at the second floor yet

allowing for necessary fridge or cold

stores for products which need stored

in cooled environment.

Further we have study the necessary

logistic to separate long-term storage

from daily consumption to insure

quality products.

Kuwait Delivery

·Plan a proper line of production and

flow of activities to insure

accumulation of end products in

suitable locations ready for

distribution

·Assemble delivery containers in

identified locations allocated for the

different 40 shops to avoid any mix

up while expediting loading to

transportation vehicle

·Coordinate allocating necessary

vehicles needed to secure timely

delivery to all outlets.

detailed strategy adapted to insure

meeting the smooth delivery target

The situation of DIP Commissary plant, facilities & production organisation before my interference was as follow:1- dispatching area is missed2-Bread and viennoiserie are mixed in 1 room3-missing an area for the sandwich production4-Walk in freezer location & size will not respond to SBX consumption5-no vegetable washing area6-no storage space7-no Dry store 8-no A/C adjustment to seperate the dough areafrom temperature required to viennoiserie .9-no area for sandwiches preparation 10-Toilettes were opened to the production area11-proofer room fixed far from the oven room12- no rest room etc...
