SELECTION:
• Fresh lemons can be found in your produce section throughout the year as well as in the grocery section as a natural or concentrated juice.
• Inspect the fruit for any brown or soft spots and avoid lemons with an extremely shriveled, dull colored peel. • When shopping for fresh lemons look for oval-shaped shiny, firm lemons with a bright yellow color.
FUN FACTS:
• Lemons belong to the citrus family and were first cultivated for their decorative bright yellow appeal in India more than 2,500 years ago. It wasn’t until the 1400’s that lemons were first introduced as a food source.
• From a scientific perspective, lemons are quite unusual because they are the only food source that contains an ion with a negative charge (anionic). All the rest of the food that we eat contains an ion with a positive charge (cationic). Cellular energy results from the interaction between negative and positive charges and lemons are the only food source that contributes to this unique health benefit.
• Unlike many other fruits, the entire lemon lends itself to a variety of culinary uses from custards and garnishes, to marinades, gelato, and flavored beverages. Not only is it’s rind grated to infuse flavor in dressings, fish, and pastas, but its peel and white inner pulp are a an excellent source of pectin which is used commercially in canned goods such as jelly and jams.

Ingredients: 8 servings
• 18 cups (2 quarts) of water
• 2 tbsp. Whole flaxseeds
• 1 Lemon peel
• Juice of 1-2 lemons
• 6-8 (single serving) bags of green tea
Directions:
1. Cut the lemons in half and squeeze the juice into a bowl or glass, set aside.
2. Slice 1 of the squeezed lemons. Discard the other.3. Add the lemon slices, water and flaxseed to a
medium sized sauce pan. Bring to a soft boil.4. Simmer for 10 minutes, and then pour the mixture
through a cheese cloth or fine strainer (fine enough to catch the seeds), into a pitcher. Add the lemon juice.
5. Place tea bags in the pitcher, so the tea is submerged in the water. Steep for 2-3 minutes and then remove the bags. Discard.
6. Serve immediately by pouring tea over a glass full of ice.
7. Store the remaining in the refrigerator for up to 3 days.

Ingredients: 4 servings
• 16 oz. very lean ground beef
• 4 oz. baby portabella mushrooms
• 2 garlic cloves
• 4 oz. smoked Gouda cheese
• 1 tsp. dried oregano
• 2 tsp. onion powder
• 4 whole wheat buns
• Desired toppings (lettuce, onion, tomato, ketchup, etc.)
Directions:
1. Finely mince the garlic and mushrooms. Finely shred the cheese.
2. In a large bowl, add the ground beef, spices, minced garlic, and onion. Using clean hands, gently mix all the ingredients. Shape it into 8 equal sized balls.
3. Place one ball on a plate and gently press it down to form a 3½ to 4 inch wide patty. Top the patty

• To prevent sticking, lightly oil the grill by dipping a folded paper towel in olive oil. Use tongs to hold the oiled towel and rub it over the rack.
• Avocados, tomatoes, and lettuce with a little ketchup and a dash of pepper is a great combo for topping these burgers.

• One 12-16 oz. Turkey Kielbasa• 1 Large yellow bell pepper, sliced• 1 Large green bell pepper, sliced• 1 medium onion, chopped• 8 oz. whole wheat pasta
• 2 tbsp. canola or olive oil• One 12-14 oz. can crushed tomatoes• ½ cup shredded cheese (cheddar or
mozzarella)• 1 tbsp. dried oregano or Italian
seasoning • Garlic powder and black pepper
to taste• 10 oz. of fresh baby spinach
leaves (optional)
1. Cook the pasta according package directions. Drain and set aside.
2. While the pasta is cooking, over medium heat bring the oil to temperature in a large skillet add the onions and peppers, and just a dash of salt (so the vegetables can sweat), and cook until the peppers begin to become tender—stirring to assure they don’t burn. Add the kielbasa and brown—if needed to prevent burning, add a little bit of the crushed tomatoes.
3. Once the kielbasa is browned and the peppers are
tender, add the remaining tomatoes, and spices. Turn heat down to medium and cook until heated through. About 2 minutes. Stirring.
4. Add the drained pasta and toss to coat. If adding spinach, sprinkle it over the top of the pasta and place a lid on the skillet for a 1 to 2 minutes, to just wilt the leaves. Gently toss the mixture to incorporate the spinach.
5. Serve ¼ of the skillet dinner on a plate and sprinkle with ¼ cup of your favorite cheddar cheese.
A lot of the time we might default to food that’s convenient and easy to cook when we’re pressed for time or just too tired to make the effort. Often these types of foods can be higher in sodium and unhealthy fat, two things we often think of limiting in trying to maintain a nutritious diet.
Most of the sodium in our diet results from the commercial food processing. This means that processed foods such as some canned products, frozen dinners, boxed dinners, and deli and cured meats, and some foods served in restaurants tend be higher in sodium.
A high nutrition quality diet and a healthy eating pattern do not have to be an all or nothing effort. You have to balance taste preferences, time, and budget. In other words, you have to balance mind, body and spirit. Even if meals that you prepare at home aren’t perfect nutritionally, chances are they are still of higher quality than most of your runs to a fast food drive-thru or dial-up for pizza delivery! This is because you can control the ingredients, portions, and means of preparation.
To bring your keep your sodium intake in check at the level consistent with the recommendation of the Dietary Guidelines for Americans, does not require that you totally eliminate processed foods from your diet or that you have to cook all of your meals at home or even foods that are high in sodium. Truly it is about balance. Meaning that you can choose some high sodium foods to incorporate into your meals but the other items should be low in sodium. A good way to accomplish this is to fill half of your plate with fruits and vegetables. Fresh produce is a sure way to assure that you are not consuming added sodium, since it hasn’t been processed. However, not all produce has to be fresh to keep your sodium intake in check. Choose the frozen and canned items that have the dietitian approved thumb tag, because we did the work for you, and identified the choices that are considered low sodium and limited added unhealthy fat and sugars.
The best course of action is to cook more meals at home. Use salt to season at the table rather than add it while cooking. One case where salt may be needed in a cooking technique where vegetables are being sautéed, as a little salt helps to “sweat them” and release the natural waters to enhance flavors and prevent burning. Other than that, wait to season your meats and pasta dishes until you are at the table.
This meal takes a prepared, processed item, turkey kielbasa sausage, and balances it with whole wheat pasta and a ton of colorful vegetables to make a tasty dish. You don’t need to sacrifice your favorites in maintaining a nutritious diet, just find your balance.
