Whether it’s a scorcher or a wet one the holiday season is nearly

upon us. It is time to make the most of every opportunity and make hay whilst the sun hopefully shines.Once again this month we highlight some tremendous examples from partnerships across this amazing industry. My favourite has to be the tremendous recent promotion for fish and chips (or one and one as it is known) by the Irish Traditional Italian Chipper Association (ITICA). In one incredible day they served over 200,000 portions of fish and chips between them (180 members), and once again

Jon Grubb the former chairman of Visit Lincolnshire, is hoping to launch The Skegness Fish & Chips Festival along

with David Lambert from Cultural Solutions next year.

And the duo have already applied to the Coastal Communities  Fund  for more than £250,000 of funding, an amount that they feel can help secure the festival for at least four days.

Jon said: “Everyone loves fish and chips – it’s a part of our heritage that crosses age, social and cultural boundaries – and yet there is no event to celebrate them.

“It’s time we put that right and I can’t think of anywhere better placed as the home of such a festival then the East Coast.

“This county grows many of the nation’s potatoes and its peas and traditionally landed the fish in the north of the county. Skegness even sports The Jolly Fisherman as its mascot.

If successful then Chippy Chat will work alongside David and Jon to make sure that it goes with a bang and we receive maximum results from the event.

to offer our help, and become a partner too, there are lots of ways we can help make this festival a fantastic experience.”

Although still in its early stages, a whole range of ideas for the event has already been put forward.

These include a regional Battle of the Batters, as well as a series of debates and public taste tests to find the nation’s favourite potatoes, cooking oils and types of fish.David Lambert who was very pleased with our input said “If the powers that be see the golden opportunity of having the UK’s first Fish and Chips Festival along the Lincolnshire Coast, then we look  forward  to working  with ‘Chippy Chat’ on ensuring the whole country gets to celebrate our national dish. Next to the Queen there is possibly no other British icon with a higher, international profile. And with it comes a level playing field so many other arts and cultural events would give and arm and a leg to have. When it comes to demographics, Fish and Chips hits every audience segmentation, and therefore offers  Lincolnshire  an audience base not rivalled since the 2012 Olympics!

We know we’ve not had our Summer yet but the Chippy Chat community are a very organised bunch of

people and we are last month we officially launched the Christmas Ball. Each year (and I know because I’ve attended the last three) the Ball has got better and better. This year hopefully Kevin and Mark will kick off their shoes light a proverbial cigar, and join us as we look to carry their tradition on, of having a great time whilst raising some money for charity too.

The Venue The CC Christmas Ball is likely to be coming home to Peterborough this year to the old home of the Chip Baron’s Ball. Further details will be given nearer the time.

Places for this event are limited (we can fit in just shy of 300 people) and are sure to be popular. Please can you email [email protected] if you wish to attend and also how many tickets you require. Tables of ten will be cheaper too.

More than 200,000 people took part in National Fish & Chips Day with half-price ‘one and one’

More than 200,000 people visited their local chipper to celebrate the fifth National Fish & Chips Day On Wednesday 28th May 2014

, according to the Irish Traditional Italian Chippers Association (ITICA), which introduced the occasion five years ago.

Over 160 ITICA members throughout Ireland took part by offering half price fish and chips to their customers for the day.

“It’s been an incredible five years since we formed ITICA,” said association chairman Peter Borza. “This year’s ITICA National Fish & Chips Day was without doubt our most successful ever; we have built on the solid foundation of the last 5 years and delivered a memorable and fun day to all of our members customers”.

“Our media campaign hit tv, radio and social media from April onwards and created a great “buzz” around the day. Each year our members put in a huge effort, a massive amount of preparation goes into this day in

every shop and full credit goes to the owners and staff for making this years ITICA National Fish & Chips Day such a huge success.”

“ Aside from half price fish and chips we gave away thousands and thousands of instant prizes including a brand new Fiat 500 in Libero’s

in Deansgrange! Many thanks go to all of our member outlets and of course to our wonderful

customers that make the whole thing worthwhile.”ITICA was created to promote and build on the

traditional values and ethos of the Irish Italian chipper community, which was started in the 1880s by immigrants from a group of small villages in Val Di Comino in southern Italy. All member chippers carry the official ITICA logo (right).

This month in our chip shop(s) abroad feature we look at ITICA in

Ireland. They are a passionate group of chippers who are held

together by their roots and some great core values.

About ITICAThe Irish Italian chipper culture was started by members of the Irish Italian community.  The history of the Irish Italian community goes back to origins when Italians arrived in Ireland in the 1880s. All members of this community come from the villages in Val Di Comino in Southern Italy. These families bore the names well-known at the local chipper today. The Irish Traditional Italian Chipper Association was formed to celebrate the unique identity of the traditional Italian chippers in Ireland and to mark the contribution we have made to the community.

The forum was the genius brain child of Mark P and is a great area to swap ideas and suggestions. We would love

now for the forum to carry on this tradition and grow even more.

The CC forum is a discussion area off the main website. Members (sign up if you’re not) can post discussions and read and respond to posts by other forum members. A forum can be focused on nearly any subject and a sense of an online community, or  virtual community, has developed among forum members.

CC Forum also allows members to make posts and start new topics.

Before a prospective member joins the CC forum and makes posts to others, he or she is required to register. You must agree to follow certain online rules, such as to respect other members and refrain from using profanity. Once a member is approved by the administrator or moderator, the member

usually chooses his or her own user name and  password, although sometimes, a password is supplied.

The separate conversations in our forum are called threads, and they are made up of member-written posts. Members can usually edit their own posts, start new topics, post in the i r choice of threads, and edit their profile.

An Internet forum administrator or monitor may also participate in the forum. We would love to nominate new administrators from the trade who can not only post themselves but also help set the agenda.

Papa John’s, has announced franchisee Jay Singh has opened his third Papa John’s store.  The latest opening, on East Street in Farnham, will employ up to 18 staff to deliver pizza to the Hampshire town and surrounding area.

The KFE Summer Ball is always a superb event but this year surpassed all expectations...

Recently KFE hosted their 16th Annual KFE Dinner Dance at the beautiful Forest of Arden Hotel and Country

Club near Birmingham. The day started with the traditional Kiremko KFE Golf Tournament.

The overall winner was NFFF President Gregg Howard of Our Plaice, Hagley.

The evening event was a great success with many friers and suppliers saying that the X Factor runners up Jive Aces band were one of the best they had seen.

The nearest the Pin challenge and raffle held at the event raised over £1,000 for The Fisherman’s mission.

The offer of 99p cod and chips meant that over 40,000 fish and chip fans across the country were

able to get into the Norway Day spirit by buying a portion in one of 40 regions, and many shops sold through their 400 99p portions in a matter of hours. Great news too is over 188 million people read about the campaign or heard it on the radio through 270 media articles achieved on the campaign.

A total of 16 tonnes of sustainably caught Frozen At Sea Norwegian cod was gifted to the 99 participating fryers by Norwegian fishing vessels, the Ramoen, Atlantic, Andenesfisk, Geir, Frøyanes and

Granit, to celebrate the 200th anniversary of the Norwegian constitution.

Andrew Cook, from Skippers Fish Bar in Exton, told us: “It was absolutely fantastic. We served over 800 portions and completely sold out of every bit of fish in the shop.  We have has great feedback too, some people had not had fish and chips for a while so loved the offer. I have spoken to other shops that took part and they all commented on what a success it was.”

The campaign kicked off in style on Friday 16th May with a Brit-infused Norwegian celebration at The Ritz London. Guests of honour, Monica Mæland, the

For this event, the NSC joined forces with Innovation Norway and Norwegian coastal cruise specialist Hurtigruten, to provide a showcase of the very best seafood from the Norwegian Fjords and Seas, accompanied by best-of-British ingredients. Guests enjoyed their own portion of Norwegian cod & chips, (we did ask Ritz executive chef John Williams for his batter recipe, but he refused) the delectable delights of Red King crab and paid homage to old chippy favourites such as pickled quails eggs and a mushy pea velouté.

If we walk down any high street, the number of food outlets is on the increase and we are easily able to access food from all four continents from the myriad of takeaways, pubs and restaurants. There is a fantastic choice for the consumer, but this can lead to complaints arising from neighbours due to unwanted cooking smells particularly in densely populated areas.

Environmental Health and Local Planning Officers are tasked with advising, approving and policing kitchen exhaust ventilation in line with best practice guidance published by DEFRA in 2005 and 2010. Any new food outlet must comply with this guidance in order to get planning consent, and any existing establishment must ensure that the emissions do not become a nuisance to neighbouring properties. One recent example I have seen concerned a high street fried chicken outlet which had operated for over thirty years, but then

received complaints from residents occupying a newly built apartment block. As a result the local council quickly served a notice on the owners to rectify the situation or cease trading.

Luckily there is a range of grease, odour and smoke control solutions available including activated carbon filters, electrostatic precipitators and advanced oxidation technologies such as ozone injection and UV-C. However it is important to choose the correct equipment after all a pizza takeaway will not have the same grease issues as a Chinese.

Activated carbon is probably the best known form of odour control as it has been around for the longest. This acts like a sponge to absorb gaseous odours, but its performance drops over time and so requires changing every 3-6 months when the odours begin to break through. A common misconception is that activated carbon stops grease, but in fact

grease in the kitchen exhaust air significantly reduces the performance of activated carbon. This is because it coats the surface and stops the gaseous odours being absorbed – imagine dipping a sponge into oil and then using the same sponge to soak up water, it just won’t be as effective as a clean sponge, and what a mess! So it is important to pre-filter air to thoroughly remove grease if using activated carbon.

maintenance, activated carbon is heavy and bulky, and has significant ‘back pressure’ because it sits inside the ductwork and so needs more fan power to push the air through it – you will have to use more energy to power the fan or fit a bigger fan. Again, imagine blowing through a straw, and then stuffing the straw with some tissue. This will require more ‘puff’ to blow through...try it for yourself!

From our experience, and in line with DEFRA best practice guidance, it is vital to remove grease particles first followed by gaseous odours, and by far the most effective way of doing this in a fish and chip shop is by combining an ElectroStatic Precipitator (ESP) with UV-C light. ESPs have a low back pressure and work by ionising and trapping 95% of the grease and smoke particles onto washable collector cells; the air then passes through a set of ozonating UV lamps which attack any residual grease particles and the odours by a combination of UV-C light and ozone.

Not only will this combination clean the air, but by removing the grease it will reduce the grease build up in the ductwork after the equipment and so reduce duct cleaning costs.

The correct equipment choice is vital for the smooth running of your fish and chip shop, from the choice of frying range to odour control equipment. The correct choice on day one will help to keep your business in line with DEFRA guidance and will keep your neighbours, the EHO and your customers happy, leaving you to get on with cooking the best tasting fish and chips.

Potato News2013 CropThe beginning of June has seen adequate supplies with a slow demand. This put free-buy prices under pressure as growers wish to clear remaining stocks.

With a wide range of prices reflecting the frying qualities, strong demand was seen for the very best Markies and Agria. Stocks of Maris Piper, Ramos and Challenger were mainly exhausted as cleaning and pressure bruising issues have forced samples into the processing market.

2014 CropConditions have been ideal and growth has been rapid, with blight spraying a priority.The first Earlies with suitable dry matters are expected at the end of June

The Drywite/NFFF Young Fish Frier Competition started in 1995 and every winner has become nationally known through the publicity the competition creates.

The competition was initiated by the Directors of Drywite Limited, Kelvin Lee and Briar Wilkinson, in memory

of their late father Malcolm Lee, who had always encouraged young people to succeed.

Since its conception the competition has highlighted the vast number of highly trained young professionals working in our Industry and all finalists have benefited from great publicity even if they did not ultimately win. It is not only the young fish friers that benefit from entering the competition – the winning shop will receive thousands of pounds worth of free publicity and an upturn in takings too.

The current owner, Mrs Ilda Margaritelli , started working in the shop in 1948 and in 1950 she and her husband bought it

from her brother- in -law Mr Serafino Pesci. The shop is now run by Ilda’s son Giuliano.

Ilda recalls the coal range of yesteryear , replaced by a Preston & Thomas in the 1950s and by three more since. “ I well remember the old coal range. One day I put some wood on by mistake,a small fire started and we had to close the shop for a week. I’m pleased to say that since then we have had no further incidents”

“In the early days our main fish was hake. It was delivered by train from the docks and on a Thursday I would clean and cut 10 stone of hake in preparation for the Friday trade. In those days we also removed the heads of the fish. The potatoes came in large sacks.The Frymax was delivered directly from the Peerless factory. I remember the rationing of oil and how pleased we all were when it finished“ Today the main fish is cod and plaice,the Maris Pipers come in 25kg bags and the Frymax comes from Catering Connect. “ In the 1950s a portion of chips cost 3 old pence (1.25p) today the cost is £1.40. We have changed our menu to offer smaller portion sizes to an ageing population and we now stay open in the afternoon as many of our customers like to visit us then” Two things haven’t changed. The batter is a special recipe paseed down through the generations and the oil is Frymax. “ We have used Frymax for 60 years because it is a top quality product. It has no smell; it isn’t greasy and most important of all the food tastes lovely”

There used to be six fish and chip shops in Ferndale supported by a workforce of miners and their families. “ Friday was fish day and after the cinema people would queue out in the street for their fish and chips from 10.30 . We stayed open and were busy until midnight “ recalls Ida. “Today we are the only fish and chip shop in Ferndale. The younger generation may have moved away in search of work but they come back to us from Cardiff , Pontyprydd and all the local villages for their fish and chips”

Giuliano was born into the trade. In fact he was born above the shop and started working in the shop when he was nine years old, standing on a box to serve the customers. He formally joined the business after leaving school and has now clocked up over 30 years. Giuliano believes that two factors have helped Margaritelli’s maintain their business over so many years while others in the area have closed. “ Most important is the quality of our food. We use top quality ingredients to produce the best tasting food for our customers. We cook well. Frying is always done by a member of the family experienced in our procedures and knowledgeable about our range. Secondly we are a part of the community. We have been here for over 70 years and I have been in the shop for over 30 years. Our customers know us and more importantly we know our customers. That’s why even though many have moved away they drive back to us for their fish and chips”Much has changed in the Rhondda during the past 70 years but Margaritelli’s have shown that by maintaining high quality standards and adapting to meet the needs of a changing community there is still a place for a quality fish and chip shop in Rhondda Fach.

Seventy Five Years In The ValleysMargaritelli’s the only remaining fish and chip shop in Ferndale , Rhondda Fach, has been

trading for over 75 years and has been using Frymax since its launch in 1954.

FriFri introduced Maxfry to Super Easy range

The Hybrid Standard MaxFry system delivers a small measured dose (once an hour) of a 100 per cent

organic, vegetable-based additive, which is proven to extend the life of the oil. Trials have shown that it can at least double life span and protects frying oil from the effects of heat and oxygen and so improves the quality of fried food.

The pint size army was assembled to mark the opening of the 500th Pizza Express restaurant, which was launched in Beijing.

Annabel used the brand’s pizza dough to sculpt her tiny troopers, painstakingly cutting and arranging minute slices of pizza dough to form flat little soldiers that when cooked fill out to just the right depth.

It’s a delicate time consuming operation that demands a lot of patience.

A former taxidermy and sculpture student, Annabel has specialised predominantly in creepy horror cakes which have earned her the nickname “Annabel Lecter” but she can fashion almost anything out of edible ingredients.
