Well what a great time we all had at the

Chip Baron’s Ball last week. The (not the)

Rolling Stones were excellent and we got

some great pictures from the photo booth

of people really enjoying themselves. I

have to say once again a massive thank

My name is Jeff Stephenson. I am responsible for the day-to-day operation of Premier1 Filtration.

Premier1 Filtration would like to introduce our latest model in the Merlin series of cooking oiland fat filter units.

THE MERLIN MASTERFRY

Since E. A. Bittering introduced their first fat filter unit in 1982 There have been many changesand improvements to the original design.

Probably the most important and significant change was when myself, Steve Hill and Barry Adams broke away from Bitterling to design and manufacture the Opal System 2000 filter unit using a stainless steel symmetrical spun base for perfect sealing of the filters, making sure that all the oil or fat to be filtered had to pass through the filter and none bypassed around the sides. (All todays’ machines are based on our original design).

However the machines only used a quite coarse viscous rayon sheet (which is still used today as our primary filter). It removed the heavy sediments but let the finer particles back through into the pan. During 2001/2002 we spent a lot of time with one of the UK’s major filter media manufacturers, developing our first “Superpad”. There was much experimenting and many changes made during that time in order to get the density and flow rate optimised.

We introduced the Superpad to our customers in July 2003 and it was an immediate success. By removing the micro - fines or cloudiness from the oil or fat we were able to make it last much longer between changes whilst substantially improving product quality during that period. In many cases because of soakage and freshening, some fryers were finding there was no need to completely change at all.

With improved filtration came the need to increase the size and power of the motor in order to obtain the suction necessary to filter through the Superpad. We also increased the capacity and flow rates of our pump in order to speed up the process. However we soon realised that increasing flow rates worked against optimal filtration so we settled on our 22 Liter/Min High capacity unit, which is now standard in all our machines.

Until now the most powerful motor available on any filter unit in the UK has been 0.25Kw. With the introduction of our latest ACTIVATED CARBON SUPERPAD, although our standard motor in the Merlin Top Fry is adequate to be used with them, we felt that our new MERLIN MASTERFRY needed upgrading, so we have uprated it’s motor to 0.37Kw making it the most powerful, the quietest and the most efficient machine available in the UK today.

The city is a rising power, especially in the marine aspects. It boasts the largest Aquarium in the UK and the

universities marine science courses are considered amongst the top in Europe. It was recently awarded Fish2fork’s first ever sustainable Blue City Award. Harbourside Fish and Chip shop are most definitely following this trend.

In April 2012 co-owners, Sarah Lock and Philip Thompson underwent a large scale refit of the shop. This included a completely new frying range (from KFE) and kitchen and many improvements and increases in the customer section. Along with the refit came a “vision for the future” which is now

the underlying focus on all plans moving forward.

Immediately after the refurbishment they became Plymouth’s first MSC certified shop and were selling only MSC certified cod and haddock. Manager, Tom Hughes says “this is where it all began really. The quality of the MSC fish was a real indicator of where the food side of the business should go. Ethical but brilliant quality. So we began to source meat products from local butchers and baked products fresh daily from a local baker. The results and feedback were outstanding.”

They also have pledged to the sustainable fish cities initiative and have a full recyclable

Plymouth is a city with a very well celebrated historical past. Its home to one on the country’s largest naval bases, was bombed multiple times during the Second World War

and is the home to the Mayflower steps, the site from which the Pilgrim Fathers set sail to discover America almost 400 years ago. Located only 50 metres away from the steps

is Harbourside Fish and Chip shop.

programme including food waste.Not all businesses are a success purely on

the standard of their food so Sarah embarked on a full training programme for the shop, wanting the staff to be knowledgeable about not only their product and business but also the industry they work in. Currently every full time member of staff are studying apprenticeships and the shop is pledged to the national Apprenticemakers scheme, helping other businesses benefit from the employment of apprentices. She says “not only does it help them further their careers it inspires them to want to do well for themselves. Tom came runner up in the Young Fish Frier of the Year Award 2014 and subsequently his training helped Lisa Lishaman and Andy Hilier both reach the semi-final in 2015. It’s so rewarding to see the progression.” This commitment to the future of their staff helped them achieve Investors in People accreditation in 2013 and they are the current holders of the Staff Training and development Award.

They do not intend to stop here though as they wish to make improvements moving forward. Philip Thompson says “we want to explore the full dining experience for our customers while understanding the needs and wishes of today’s customer. We are bringing healthier options to the menu and exploring an extensive children’s menu as it is our belief that many children’s menus are generic and boring and why can’t we offer them the same as their parents. They will be the ones cooking for us one day after all!” The introduction of a new grill will allow pan fried and grilled alternatives to the traditional fried classics.

Harbourside is the regional winner for the South West and are extremely proud to be representing so many brilliant shops in these counties and they are certainly looking forwards. Sarah says “we are improving year upon year but it’s not just about us. It’s about the future of this industry. That’s why are plans are so focused on what’s to come. We have a responsibility to generations to come. To allow them to be able to enjoy what we have all enjoyed, oceans full of fish and a full menu of different things to try!”

Acquired by Collins Seafoods in 2011, Wraggs has received a huge amount of investment, gaining a

new warehouse, stores and a fleet of new vehicles with the website being the final addition to its revitalisation.

Combined, Collins and Wraggs list fish and chip shops across the North of England and wholesalers throughout the UK and Ireland amongst its customers and source fish from the Faroe Islands, Russia, Norway, Iceland, Germany, France, Spain and the UK.

Derby-based Zan Fish Express is hitting the road to offer the traditional British dish for nuptials, corporate events,

festivals and sporting events around the Midlands.

The specially-adapted trailer would be able to cater for up to 200 people for brides and grooms who want a taste of the seaside on their special day.

The idea was spawned after Zan Fish scored a hit with Derby County fans, serving food outside the iPro Stadium in a specially-adapted trailer. The range is built and supplied by Hewigo.

An advertiser at the iPro Stadium, Zan Fish owner Nickos Zannetou thought that it made perfect sense to be able to serve his fish and chips exactly where they were being advertised.

After gaining the agreement of the football club, Mr Zannetou invested some £50,000 in adapting a trailer to look exactly like one of his shops.

It is believed to be one of the first of its kind in the country, and, having been a regular feature at Derby County home games, is ready to be put through its paces elsewhere.

Positive feedback from Rams fans gave the company the confidence to spread its wings around the region.

Mr Zannetou said: “We had never done anything like this before.

“At the iPro Stadium we were telling people that we had the best fish and chips in Derby but no one at the stadium could actually taste them.

“That got me thinking about creating a mobile operation and, after negotiating with the football club, we made an agreement and had the trailer built.

“After investing so much and working so hard on it, I didn’t want the trailer sitting around doing nothing between home matches.”

Zan Fish currently has five fish and chip outlets in and around the city, including restaurants in Allenton, Littleover, Heatherton, Sinfin and Stenson.

These outlets, as well as the Express mobile service, all have five-star hygiene ratings.

“We’re delighted to launch our new Express service to complement our shops,” said Mr Zannetou.

“We see this as bringing the best fish and chips to people’s events, giving them a different option to cater for their guests.

“Imagine a different twist on food served at your wedding, serving up your loved ones with a great British tradition.”

We also organised the world’s first potato street race featuring local farmers produce in which the teams ran with 20kg of potatoes on their backs.”

Chip shops across the country can benefit from increased sales and repeat custom by registering for

the popular promotional Week. Backed by a national PR campaign, Chip Week, which is run by Potato Council, offers a superb platform for chippies to boost sales and promote chip shop chips.

One chip shop which has been using the high-profile campaign as a platform to showcase its tasty chip offering is Burton Road Fish and Chip Shop in Lincoln. After registering for the campaign, Des Anastasou and Lesley Graves, who run Burton Road Chippy, made use of the free promotional material – including themed posters and bunting – to draw in customers throughout the Week.

Des, who has been in the fish and chip business for over 35 years, said: “Chip Week presents us with the perfect opportunity to not only showcase our quality chips, but to encourage the local community to support the campaign and enjoy a portion of our freshly cooked chips.

“Taking part in Chip Week is a great way to promote your business and highlight the quality of your chips; holding events during the Week  attracts local  publicity which also brings new custom, and of course it’s great fun!”

Burton Road organised a number of fun competitions and activities during Chip

Week 2014 to encourage loyal customers and passing trade to support the campaign. ‘Guess How Many Chips’ to win a £10 Burton Road Chippy Voucher, ‘Pin the Chip in the Mouth’ to win free chips and ‘Potato and Spoon Races’, were just some of the fun activities which took place during the week, creating a real buzz and

helping to increase publicity and sales.“We felt that running different daily

activities would appeal to customers of

all ages and it was also a great way for our team to have fun!” explained Des.

“All the money raised from our Chip Week events was donated to our chosen charity of the year, while 20p from every portion of chips sold during the Week was also donated to the charity.”

What’s more, for the second year in a row the chip shop officially claimed the title of ‘Best Chippy Chips’ in Great Britain in the Choice Chip Awards 2014, with the highest number of votes from customers who felt they served perfect portions of freshly cooked chips.

Des said: “After winning the Choice Chip Awards we saw an increase in sales of 10% which was amazing as February and March is usually a quiet time of year. We continue to use the Chip Week loyalty cards as they proved to be very popular; offering customers a stamp each time they spend over £5 and then offering £5 off when the card is full has been well received.

“We  would recommend every chippy signs up for Chip Week 2015 - by registering you receive all the promotional material you need and it’s all free. What have you got to lose?!”

Casey’s, on Bank Street, Ossett, will welcome the elderly, the lonely and the vulnerable, and cook them a hot

meal this Christmas.Owners John and Sue Casey will also

deliver food to charities helping others.Mrs Casey said: “It is a really special time so

we want to do what we can to help.“We want charities to get in touch and we

will help by giving them hot food for people who need it.

“We will also be serving mulled wine which always goes down well.”

T h e couple, who have run chip shops for 18 years, opened their chippy in March this year.

They previously ran Tony’s Fish Shop in Bank Street, as well as shops in Horbury and Heckmondwike.

Mrs Casey said: “People were always asking us when are we going to come back to Ossett.

“We moved away thinking the grass was greener on the other side but when the chance came to come back we jumped at it.

“We are quite well known and really enjoy helping out in the area.”

After opening their shop on Christmas Day, the pair plan to spend the rest of the day with their family.

Casey’s will be open from 11.30am to 1,30pm.

More than 300 finalists  were at the awards which recognised such categories as Best Indian

Restaurant, best  Oriental, best street food, bistro, hotel restaurant, fine dining and Takeaway.  

  Earlier on in the night  Chamberlains  won best in the Midlands beating off other local competition Oh My Cod and Merchants and later also beat off regional finalists from the North,  South and Wales.  Judging was based on customer’s votes on line and in food magazines. 

  Simon Shaw,  co owner said, When  Chamberlains  won “Quality Award Champion” at the 2014 National Fish & Chip Awards we were delighted but then to scoop this award it really tops off a great year as we were up against other fish & chip businesses and also other takeaway food such as Indian, Chinese, Pizza & chicken establishments.  It is great to bring this national award to

Birmingham and great for the Fish & Chip sector too.  The awards were presented by Rachelle Perez (former Miss United Kingdom) 

  When asked for the key to success, Simon added  lots of hard work and really focusing on what customers want, which is freshness & choice.   We offer 10  types of fish & seafood available daily, customers can choose vegetable oil or traditional beef dripping and every piece of fish is cooked fresh to order.  This can sometimes mean a bit of a wait at peak times but customers are pleased to know that their food is cooked fresh right in front of them.  Customers can also choose to eat in as there is a 76 seat licensed restaurant which is open 7 days from 12-9pm and ample free car parking front & rear of Chamberlains.

The Hollywood actor – best known for his roles in gangster film The Departed and the 1979 borstal film

Scum – filmed scenes for a new ITV crime drama at Mario’s Fish Bar in Eccles.

And he enjoyed a good spread at Mario’s for his role as former armed robber Jimmy Roberts in the three-parter The Trials of Jimmy Rose which is being filmed across Greater Manchester.

Winstone, who plays an ex-con grandfather trying to win back the love and trust of his family after a life of crime, tucked into a plate of fish and chips, chips and beans and a full English breakfast of bacon, sausage, mushroom, tomatoes and beans washed down with a cup of tea and a cappuccino.

Owner Bash Hussain said: “He had our

fish and chips, beans and chips and full breakfast. It was part of filming so he only took a few bites from each dish but he was a little hungry. “He shook my hand and said ‘I like your food’.

“We always get somebody famous in once or twice a year and he filmed with us before for a different programme eight years ago. We showed him the picture from his last visit.”

The shop in Southway was closed while filming took place.

Shoppers stopped to watch as filming took place and the 57-year-old was happy to take time out to pose for photos with fans.

Mr Hussain added: “The filming went very well. The crew arrived at 8am to set everything up and Ray Winstone came into the shop at 2pm and continued filming until about 4pm.”

Mario’s in Southway has photos on display of celebrities who have filmed at the fish bar over the years, including comedian Bobby Ball, Hi-de-Hi actress Ruth Madoc and Solider Soldier and Wire in the Blood star Robson Green.

Fish ‘n’ fritz chip shop on Market Street in Weymouth is urging people to donate toys and money for the Dorset Echo’s annual Christmas toy appeal.

The chip shop is one of dozens of businesses across the area including three Daniels Fish and Chips shops that are supporting this year’s appeal by placing a collection bins in the store.

Fish ‘n’ fritz owner Paul Hay said: “We have been supporting the toy appeal for many years and it’s something I’m really passionate about.

“We are really happy to support the toy appeal and give something back because so many people support us throughout the summer.

“Everybody needs a bit of help from time to time whether it’s young children, teenagers, young parents. Christmas is a special time for everyone and this is a time when people come together and help out those less fortunate than ourselves.

“It would be brilliant if more business could get on board and donate because a little really goes a long way, nothing is too small.”

Owner John Redman is delighted with how quickly he was able to raise £25,000 to set up the

enterprise after outlining his business plan online.

“I was amazed at the speed of raising the money. Within 48 hours, £25,000 had been pledged by 27 different people and, once I had selected my investors, the money was in my bank account in the next 48 hours.

“The investors don’t own a share of the business - they are lenders who I pay

back with an agreed interest figure.”The Crossings, which is close to the

railway line, has created five new jobs, three of which are full time, and the other two, part time. In November two further full time jobs plus one part time, are set to be created once deliveries are introduced.

Business has been promising since The Crossings opened and has attracted visitors from the nearby Walks Park. There is seating for 16 and this area has designed to be spacious for parents with buggies and prams.

The shop is open six days a week, from 11.30am to 2.30pm and 4.30pm to 8.30pm.

Mr Redman also owns the River Lane Fish Bar in Gaywood and strongly believes in using quality fish. “We use deepwater Atlantic cod, which is the best you buy and our chips don’t travel far - they are supplied fresh several times a week from just four miles away.”

The Dutch factory flew Union Jacks in front of the factory to welcome the group on their visit and showed them true Dutch hospitality with goodie bags filled with Florigo memorabilia as well as Dutch delicacies after their long journey! The group were able to able to fry and try

Dutch snacks such as Kibbeling on a Dutch style range in the factory’s test kitchen as well as get an in-depth tour of the factory itself, getting a real close-up view of the current ranges being built, ready to be shipped to all around the UK and beyond.

The Dutch team were on-hand to show the group all of their state-of-the-art machinery and to explain in detail the work that goes on behind building one of the best ranges in our industry.

The day was then finished off with a bit of sightseeing in Amsterdam with a tour along the city’s iconic canals and then a meal in Bier Fabriek, a micro-brewery that specialises in charcoal grilled free range chicken!

Potatoes NZ chief executive Champak Mehta said the shortage was a result of adverse weather that

led to to poor growing and harvesting conditions.

“Currently there is more demand than supply because none of the previous season’s main crop is left in storage and new season’s product is slower than normal growth,” Mehta said.

Growers had reported crops were down between 20 and 40 per cent, which was reflected in a price rise of 20 per cent.

New Zealand has two growing seasons. The early season potatoes are planted in

about May and harvested from September for the Christmas market.

The weather in Pukekohe, where the early crop had been growing, was colder with increased winds and rain.

The main crop, stored for winter, is usually planted in December and harvested from April. However, harvesting last season’s main crop was late because of wet weather and the planting of this year’s main crop was delayed.

Winds had delayed planting of both the fresh market main crop and processing crop in Canterbury, where irrigation had been deployed to soften ground before planting.

Manawatu potato grower Tony Parlato said there had been a cold, slow start to the season and everyone should be worried after the tough growing season in Pukekohe.

He had only just finished planting his main crop but windy and wet weather had taken its toll on an earlier crop, which would affect yields.

Percy’s Fish Shop in Kaikohe recently had to turn customers away who wanted ‘home-made’ chips, and reverted to selling frozen chips.

Co-owner Cheree Cooper said it was the first time in 26-years they couldn’t get the ‘graded’ potatoes.

“I have put in an order with the suppliers, but at this stage I am not sure if we will get them because there is such a shortage. We just have to wait and see.”

If the shortage was long-term, chip shop prices throughout the country would either go up or portions get smaller, she said.
