The local cuisine is as varied and rich as the land itself and it is based on fish, seafood, vegetables and fruit. There are fish and molluscs such as guiltheadbream, plaice, cuttlefish, sea urchins, sea anemones, dogfish, bluefish, bream, clams, white prawns, king prawns, shrimp, burgaos shellfish; vegetables suchas carrot and tomato and fruit such as watermelon and melon in summer, oranges, lemons, strawberries and muscatel grape, which is exported to otherareas of Spain and abroad. This grape is used to make the famous muscatelfrom Chipiona. This muscatel has been made in Chipiona for over five centuriesand plays a leading role in the “Muscatel Festival” in the month of August.
Chipiona municipal borough has a coastline stretching 12,600 metres, the 4main beaches taking 7,600 and set apart thanks to their light, environmentalconditions, setting, location and access, all holding unquestionable interest forvisitors. All Chipiona beaches have their own lifeguard service. The followingbeaches are truly outstanding: Playa Montijo-Niño de Oro, Playa Cruz del Mar-LasCanteras, Playa de Regla, Playa de Camarón-La Laguna and Playa de las TresPiedras-La Ballena. Since 1989 our beaches have been awarded the EuropeanBlue Flag for Clean Water year after year. The fishing weirs and the high iodineindex of the waters, very beneficial for the health, are highlights within the region.
Our Lady of O church with its beautiful bell tower and the neo-gothic Our Lady of Regla Shrine with its Mudejar cloister dating from the 15th century are both high-lights. The Lighthouse, Chipiona's distinguishing asset, is the highest in Spain andone of the highest in the world. Measuring 69 metres high with 344 steps, it was builtin 1867 by the engineer Font. The fishing weirs are crafted stone walls that are loc-ked together and which, rising from sea level, gradually get taller heading away fromthe water; this is where the fish are caught in the tide and where the catarro or gathe-rer then fishes them out in waist-high waters. Another highlight is the Castle, a for-mer fortress dating from the 13th century, which is presently undergoing restoration.
Chipiona Carnival takes place between February and March and is the“village celebration” par excellence. Carnival groups of the town, whichoffer typical local produce to all attendees, have always been of greatimportance. The closure is marked by the “Great Humour Cavalcade” - anauthentic spectacle of light and colour. There is also the Our Lady of ReglaNight: marking the end of the summer season every year on the 8thSeptember is Chipiona's Patron Saint's day where the Virgin is paradedaround the town, ending in a magnificent firework display.
Located in the centre of theCosta de la Luz, Chipiona is oneof the busiest tourist areas inAndalusia thanks to its excellentinfrastructure and natural settingwith out standing marvellous be-aches. Neighbouring Sanlúcar deBarrameda and Rota, Chipiona isfound in the Cadiz county of BajoGuadalquivir. Its origins dateback to the Roman city ofCaepionis Turris, name which co-mes from the so-called CaepionisTower, an ancient lighthousebuilt on the Guadalquivir river es-tuary to warn boats about thePiedra de Salmedina reef, the ro-ot cause of so many sea wrecks.
However, Chipiona is presentlyknown for another lighthousebuilt in 1867 on the ruins of anancient Roman lighthouse, who-se light can be made out over 25miles away, even from Portugal.Measuring 69 metres high with344 steps, it is the highest inSpain and one of the highest inthe world.
Another of the city's emblematicmonuments is the Shrine ofNuestra Señora de Regla (OurLady of Regla), an ancient forthousing the Virgin of Regla sta-tue. Dating from the first half ofthe year 300, this icon remainedhidden from the Arabs until the15th century when, according tolegend, a religious member ofthe Order of Saint Augustine dis-covered it after seeing it in a vi-sion. Today the Virgin of Regla isthe city's patron saint and vene-rated by many faithful who, every year, hold a procession of
great interest to tourists on the8th September.
Chipiona's historical artistic heri-tage is rounded off with another ex-tremely important monument - theNtra. Sra. de la O Parish Church(Our Lady of O) built in the 16th cen-tury and housing great paintingsdating from the 16th and 17th cen-turies as well as a large neo-classi-cal altarpiece and a silver chalicedonated by King Philip IV.
Enjoying almost 13 kilometres ofcoastline, Chipiona can boast
about having the best beachesin Spain, many awarded theEuropean Blue Flag for CleanWater year after year. This is truefor Chipiona's busiest and mostemblematic beach, Playa deRegla, located extremely near the
city centre and Playa Cruz del Mar-Las Canteras next to the Marina.Other recommended beaches are:Playa de Montijo-Niño de Oro,between Sanlúcar de Barramedaand the Port; Playa de Camarón-La Laguna with four elevatedpaths leading to the beach pro-tecting the dunes, the chamele-ons' natural habitat, and Playa deLas Tres Piedras-La Ballena, onthe border with Rota municipalityand next to Costa Ballena - a mo-dern tourist complex with four ki-lometres of virgin sands, greenareas and a complete selection ofleisure attractions.
Chipiona's coastline also playshost to some truly natural monu-ments inherited from the Romanfishing tradition - the so-calledFishing Weirs which are a type ofenclosure built at different loca-tions along the coast to keep thefish entering with the high tidealive until ready for consumption. The molluscs and algae havestuck to the stones like naturalcement creating a special spotwith enormous ecological value, playing home to a large variety ofanimal and plant species.
These weirs are still used todayto collect seafood, an essentialingredient to the exquisite Chipiona cuisine alongside fish. The cuttlefish, sea urchins, sea anemones, guilthead bream, prawns, king prawns andshrimps stand out amongst themost appreciated dishes to besavoured in any restaurant in thearea accompanied by a goodmuscatel - a valued wine typicalin the county and made from alocal grape. In fact, the MuscatelFestival, one of the town's mostinteresting celebrations, takesplace in August althoughChipiona is also known for itsspectacular Carnival and the Vir-gin of the Pine Pilgrimage.
