Chinese New Year is the largest event in the Chinese calendar and this year will be our biggest event to date.春节是华人一年中最大的节日，而今年的华人新春庆典也将是我们举办的规模最大的一次活动。

Now in its 14th year the Birmingham celebrations have grown in popularity, with the 2015 festival attracting over 20,000 to Chinatown and Southside. As well as traditional lion dancers, singers and martial artists, this year’s festival will also see the introduction of a new street food market, which will be serving up a range of Far Eastern delicacies, as well as a fun fair. 到目前为止，我们已经成功举办了14届的伯明翰华人春节庆祝活动，并越来越受到公众的欢迎。其中2015年的华人新春庆典就吸引了超过20,000人来到伯明翰中国城参加我们的庆祝活动。今年的华人新春庆典将不仅有传统的舞狮表演、歌舞及武术表演，还会有一条新的小吃街为大家呈现各式各样的东方美食，就如同在嘉年华一般。

These new additions wouldn’t be possible without the support of the Southside community and those further afield. Last year Birmingham City Council announced that it would be unable to fund the festival due to ongoing budget cuts. Using money raised by the Birmingham Chinese Festival Committee and the Institute of Oriental Business (IOB), two Foo Dogs will be soon erected in Chinatown. Traditionally known in Chinese as Shi, the Foo Dog is actually a guardian lion which can often be found in front of Chinese Imperial palaces, tombs, temples and government offices and were believed to have powerful and mythic protective benefits.

Once installed in Chinatown, the Foo Dogs will offer all Southside businesses and visitors good fortune and protection. 凭借由伯明翰华人佳节筹委会及the Institute of Oriental Business (IOB)共同筹集的款项，两尊石狮将很快屹立于伯明翰中国城的街头。在古代中国“狮”通常作为守卫一般伫立在皇宫，衙门，寺庙和皇陵的门前。其原因在于人们相信狮子可以作为守护神带来一份祥瑞。伯明翰中国城的石狮建成之后同样会为南苑商区及其访客带来一份吉祥和安康。

Chinese New Year is the most important of the holidays for the Chinese. 春节对于华人来说是最重要的节日

Although its exact beginnings are unclear, the celebrations are said to have been first held during the Shang Dynasty (1766 BC – 1122 BC). Whereas many countries base their year on the solar calendar, the Chinese New Year is based on the lunisolar calendar which takes into consideration the phases of the moon. A lunar month is around two days shorter than a solar month. Every few years an extra month is added which is the reason why Chinese New Year is celebrated on a different date each year.虽然春节确切的开端已经无从考究，但传说第一次春节是在商朝（公元前1766-1122年）时期开始庆祝的。虽然许多国家的新年都是根据阳历来确定的，春节却是根据观测月亮相位的农历来确定的新年的日期。农历的每个月要比阳历月份大约少两天，所以每隔几年，就会加进一个额外的月份，这也就是为什么每年春节会在不同阳历日期的原因。

Celebrations usually last for around 15 days. During this time people will often travel across the globe to spend time with their families and loved ones and have a special meal on New Year’s Eve. This dinner will often consist of dumplings and fish, which signify prosperity. Money in red envelopes is often given to young children as a symbol of a lucky and long life. Fireworks will also be launched as part of the celebrations and to drive off evil spirits. 春节的庆祝活动一般会持续15天左右。在这段期间人们常常与家人和朋友团聚在一起，并在除夕晚上一起享用年夜饭。年夜饭一般会包含饺子和鱼，象征阖家团圆、年年有余。人们会包钱在红色信封里给小孩作为幸运和长寿的象征。当然，放爆竹也是庆祝活动中的一个重要组成部分，它意味着除旧迎新，消灾祈福。

outside China also celebrate this day 9. There are lots of greetings to say during CNY. The most common is

“Kung Hei Fat Choy” which means “Wishing you prosperity” 10. One of the most popular dishes of Chinese New Year is Lobster - the

literal Chinese translation of lobster is “Dragon Prawn” 11. The Chinese avoid getting angry over CNY as they fear that would

bring bad luck for the forthcoming year 12. Chicken in Black Bean Sauce Chow Mein (Crispy)Ingredients• 150g chow mein noodles• 150g chicken, cut into bite size pieces• 1 garlic clove, minced• ¼ each of green pepper, red pepper

and onion, cut into thin strips• ¼ thin red chilli, cut finely• 1 spring onion, cut into 5cm pieces• 1 tablespoon cornflour• ¾ cup hot chicken stock• 1 tablespoon oyster sauce• 1 teaspoon rice wine• 1 tablespoon black beans• 1 teaspoon of dark soy sauce• salt, pepper, sugar• vegetable oil

Method1. Add noodles to boiling water.2. When soft ( 2 minutes), drain the water

and set aside to cool. For best results, spread the noodles on a large service area for 10 minutes, to allow to dry.

3. Heat wok with 3 tablespoons of oil. When hot, add noodles to shallow fry. Leave on one side for 1–2 minute (keep the wok moving to prevent burning).

4. Flip to the other side and cook for

another 30 seconds (or when crisp).5. Drain oil and set aside on a plate.6. Heat 1 tablespoon oil over a high heat.

Add chicken pieces and pan fry until very light golden brown but not yet cooked through.

7. Drain and set aside.8. Heat 1 tablespoon of oil, pan fry garlic

for a few seconds then add chicken, peppers, onion, spring onion and chilli and stir fry for 30 seconds.

9. Add 1 teaspoon rice wine, chicken stock and 1 tablespoon black bean sauce. Bring this to the boil.

10. Add ½ teaspoon of sugar, ½ teaspoon of salt, ½ tablespoon of oyster sauce and ½ teaspoon of ground pepper.

11. Mix cornflour with ¼ cup of cold water, add to sauce to thicken (you won’t need the whole amount).

12. To finish add 1 teaspoon of dark soy sauce.

13. Place stir fry over crispy noodles and serve.
