Precise, long, fine and
savory; Chablis offers a wide
variety of expression and is a
fantastic beginning to any
meal. Look to Dauvissat for
precision and minerality and
Raveneau for broad fruit and
rich texture.
~~
Chablis Ier Cru “Montée de
Tonnerre” Simonnet-Febvre
2008 (Bin 2320) Precise and
punchy with lovely texture,
crunchy talcy citrus & excellent
length. This wine drinks well
above its price point.
~~
Corton-Charlemagne
Grand Cru, Capitain-
Gagnerot 2005 (Bin 102x)
This is a really classical
rendering of Corton-
Charlemagne. Excellent
density of material,
minerality and marvelously
juicy acidity. Try with
pheasant, veal or salmon.
~~
There's a reason we list so
many Meursault-Perrières
bottlings. While technically a
Premier Cru, it's my opinion
that it possesses Grand Cru
quality & ageability.

Notice the wines of Marcel
Hugg, exclusive to us in the
United States. Traditional,
dry, clean & precise wines
from Bergheim. The 2007's
are brilliant.
~~
There is a good reason
there are so many wines
from Zind-Humbrecht
on the list: Olivier
Humbrecht is one of the
world’s greatest winemakers
and growers. Each bottling
typifies its varietals and site
at its most intense and
expressive. Some of the
wines retain some residual
sugar but have marvelous
balancing acidity.

Marsannay, René Bouvier
“Clos du Roy - Vieilles
Vignes” 2008 (Bin 2438)
Really precise, fresh & firm
with crisp, meaty black fruit
and medium body.
~~
The wines from the
vineyards around the village
of Gevrey-Chambertin are
fueled by dark fruit and a
dark minerality. These are
wines of a particular
masculine and spicy
character. I like them best
matched with organ meats,
richly-flavored & fatty meats
and all manner of mushrooms.
~~
Clos de Vougeot Grand
Cru, Leroy 1995 (Bin 706)

Vosne-Romanée Ier Cru
“Les Chaumes-Vieilles
Vignes” Bernard Rion 2006
(Bin 2221) Rion made a
beautifully aromatic wine
from this historically
important vineyard in 2006.
Complex aromatics include
black fruit, black truffles,
copper and allspice which
lead to a silky, firm and fresh
palate of plump black fruit
that is reinforced by a rich
tannic structure.

Notice the Château Calon-
Ségur (St. Estèphe) 2004
(Bin 2171), a marvelous
third classified growth.
This wine is much more
traditionally produced than
other top classified growths
these days. Robust and
earthy fruit and minerally
palate presence truly begin
to show after an hour of
decanting.
~~
Pontet-Canet (Pauillac) is
an estate that was classified
as a fourth growth but has
performed qualitatively as
a second since the mid to
late 90s. The Le Hauts de
Pontet-Canet 2000 (Bin
2506) is a marvelous
example of the second label,
a medium-bodied little
brother to Château Pontet-
Canet. With twelve years of
bottle age, it is beginning to
drink generously.
~~
Château Ducru-Beaucaillou
is a second growth estate that
is my personal favorite of St.
Julien. The balance of
length, finesse, minerality
and beautiful, satisfying,
complex fruit is unrivaled.
The Croix de Beaucaillou
2008 (Bin 2343) is an
individual parcel providing a
different wine that is a bit
softer as a young wine and is

Château Le Carillon
(Pomerol) 2006 (Bin 208x)
is a wonderfully ripe, soft
Merlot-based wine.
Enjoy with gamebird or
light meats from the grill.
~~
Château Petrus (Pomerol)
2001 (Bin 2328) is a
relative value. The 2000
garnered perfect scores
from most critics so the
wine is three times the
price of the 2001.
Unfortunately for the
owners of the 2000, the
wine will be perfect to
enjoy in 2025. The 2001
is already fantastically
attractive, detailed and
pure and is a wonderful
opportunity to enjoy
something that is largely
ungettable in the world.
~~
Château Pavie-Decesse
(St. Émilion) 2001
(Bin 2150) An absolute
powerhouse.
~~
Château Joanin Bécot
(Côtes de Castillon) 2008
(Bin 80) This wine is a pet
project of Juliette Bécot (of
Beau-Séjour Bécot in St.
Émilion fame). Medium-
bodied, precise, aromatic
and somehow silky & firm
at the same time. The wine
is a great favorite for lamb
in particular.

Château Malescot, located
behind Château Margaux,
is probably my favorite
terroir in the village of
Margaux. The 2002 (Bin
2442) shows good power,
robust fruit, vibrant acid
and very focused minerality.
With a little decanting time
the wine is magnificent.

Cornas, Jean-Luc
Colombo “Les Ruchets”
2003 (Bin 215) Great
ripeness of Colombos’s
Syrah from 2003 is ideal
for his very modern
winemaking style and
yields a wine with deep
intensity of flavor.
~~
St. Joseph, Philippe Faury
2004 (Bin 2134x) This
delicious Syrah from a
great grower has excellent
terroir and tremendous
food flexibility.
~~
Côte-Rôtie, M. Ogier
“La Belle Helene” 2003
(Bin 313) This is a wine
of great purity, soul
and spicy, hedonistic
character.
~~
Marcel Guigal bottles
three single-vineyard
Côte Rôtie. Every vintage
receives special attention
in the vineyard and the
cellar. The wines typically
spend 42 months in oak
casks during their
upbringing and often
seem to “die” in barrel.
A few years later they are
reborn when bottled.
Uniquely intense and
balanced individual
expressions; La Turque
is to Beethoven as
La Landonne is to
Brahms and La Mouline
is to Chopin.

Domaine de la Charbonnière
“Les Hautes Brusquières”
2007 (Bin 2127) Old-vine
Grenache grown in very
strict conditions fuels this
wine of roasted fruits and
dried herb character. The
intensity & density manages
to be neither heavy nor sloppy.
~~
Domaine Lafond
“Roc-Epine” 2007
(Bin 2534) Black berries,
red plums, dried herbs,
finishes with loads of
minerals & dusty tannins.
~~
André Brunel “Les Cailloux
- Cuvée Centenaire” 2003
(Bin 2014) This is Brunel's
top bottling of 100% one-
hundred year-old Grenache
fruit raised up in new oak
barrels. It is a wine of very
forceful personality.
~~
I drink (note: drink, not
taste, think about, ponder
over, etc) more Châteauneuf
du Pape’s than anything else.
Why? For satisfaction,
complexity, interest,
flexibility with food and
a large window of
drinkability, a good
Châteauneuf-du-Pape is
hard to beat. Currently I
love the freshness and body
of 2006. The 2004's are
lovely, balanced and
drinking now.

traditionally made Barbera
from Serralunga without oak

Peter Michael’s “Les Pavots”
bottlings are the greatest
wines produced in the
Knights Valley which
occupies the border between
Napa & Sonoma counties.
These Bordeaux inspired
Cabernet-Sauvignon
dominated blends are always
polished, complex, deep,
long & satisfying.
~~
Paul Hobbs “Beckstoffer to
Kalon” (Napa Valley) 2005
(Bin 190) Probably one of
the best wines produced in
California is this particular
bottling from a historically
important vineyard made by
Paul Hobbs, a winemaker
renowned for his over-the-
top style. He achieves every
bit of outrageous black
currant fruit & voluptuous
complex personality that his
grapes are capable of.
~~
Mt. Eden Estate Vineyards
(Santa Cruz Mountains)
2004 (Bin 2148) One
of the historically important
California wineries. The
Cabernet is more medium-
bodied than full, intensely
flavored black fruit, grilled
herbs and spicy oak on the
finish. The style is
reminiscent of the top
California Cabernets of
the 1970's. Lovely balance
for food.

Woodhouse “Daríghe”
(Columbia Valley) 2002
(Bin 90) From an excellent
vintage, with great breadth,
sweet tannins and vibrant fruit,
this wine drinks well above its
price point.
~~
Viña von Siebenthal “Montelìg”
(Aconcagua Valley) 2006
(Bin 2402) A wine that shows
some of the ferrous minerals
of the wine of Pomerol. Clearly
from a great terroir in the
Aconcagua Valley, it shows
balance, power and finesse.

Panther Creek “Shea
Vineyard” (Willamette Valley)
2004 (Bin 2332) A dense &
powerful style of Oregon
Pinot Noir from an excellent
vintage. The is not light,
fruity Pinot for salmon.
~~
Tom Dehlinger has, over the
years, been my favorite
producer of California Pinot
Noir. His wines always have
excellent intensity and
expression. They show
charming fruit but are not
alcoholic fruit bombs.
~~
Calera “Mills Vineyard” (Mt.
Harlan) 2009 (Bin 2012) is
from a higher altitude and
historically important site that
has produced Pinot Noir in
the Santa Cruz Mountains for
thirty years. It is made in a
more traditional style
meaning it has a balance of
brilliant red fruit and elegant
spices with sufficient acid &
tannin to handle more robust
cooking than most American
Pinot Noir and can age
attractively for 10-15 years.

aromatically distinct,
bolstered by a bit of wood
seasoning to give it tannin for

Carménère is most
successful with grilled
meats like lamb, venison
and buffalo. The fresh
blue & black fruit, grilled
herb character and natural
freshness balance the
intensity of flavor in these
dishes. Terrunyo is the
benchmark producer of
Carménère in Chile with a
classic bottling and the
legendary Carmin de Peumo.

We’ve chosen a few
particulary ageworthy
wines to offer in large
formats in part because
the larger format allows
the wines to age more
successfully and
because of course, it is
always more festive to
have a big bottle at the
table. It is best to allow
us some decanting
time, or order a bottle
a day or two in
advance, so we can
properly care for it and
it can be served as
intended, the show-
stopping centerpiece of
your dinner party.
