Benvenuti The Pilu at Freshwater wine list has been created to take you on an ‘adventure in wine’, and is designed to compliment our chef/owner Giovanni Pilu’s Sardinian cuisine. We specialise in Italian wine and pay extra attention to the south of Italy, due to its compatibility with our food -‐ our extensive Sardinian selection being the highlight. We have a diverse range of local wine too, largely from our own state of New South Wales, as we love to showcase local produce. We continue to offer a range of Sardinian wine imported exclusively for us. In 2017, we continue to offer a selection of rare wine from the cellar of a private collector -‐ these wines have been aged in a natural underground cellar and are in the very best condition possible. For a quicker selection, you can turn to the Sardinian wine section, complete with maps and information on the history and varietals of each region. In the main list, Italian and Australian wines are listed together, by varietal, to assist in navigating through the list more easily. We have a large range of wine by the glass, as well as small and large bottles. If you require guidance, a member of our wine team will be happy to assist.

Organic, Biodynamic and Natural Wines
As increasingly popular as they are controversial, organic, biodynamic and natural wines are now an important part of our wine culture -‐ here we offer a little information for those who may be curious about, or new to them. Although it may all seem a little new-‐age to some, it is worth noting that many of the best wines in the world from some of the most prestigious estates are made using these methods. Organic wines are produced from grapes grown without the use of chemical fertilizers, pesticides, fungicides and herbicides. Biodynamic methods were developed by Austrian philosopher Rudolf Steiner and wines are made using a wholistic and sustainable approach. Grapes are grown using the same core principle as organics, with the addition of special preparations added to the soil, which improves soil structure, nutrient and mineral levels, as well as plant growth and development. Recycling of farm and wine residues back into the vineyards improves overall sustainability of the land. Natural wines are more difficult to define, as there is no governing body set up to control production methods, resulting in various interpretations. They are generally made with ‘minimal intervention’, using natural yeasts, and minimal or no sulphur is added. Wine is often left on skins (both white and red) and there is no filtration, fining or adjusting. Natural wines look and taste a little different to ‘conventional’ wines, they will be darker in colour and cloudy, and will evolve dramatically in your glass. They are food friendly, vibrant and interesting though, so whilst not for everyone, they are most certainly worth trying.

Sardegna Sardinia is the second largest island in the Mediterranean and is 200 kilometres off Italy’s west coast. It is a unique region that has spent much of its history under Spanish rule -‐ the Spanish influence remains in Sardinia’s food, culture and wine. The Phoenicians were Sardinia’s first foreign invaders and introduced winemaking to the island, but it was the Spanish, controlling the island from the 14th to 18th centuries, who contributed the most to Sardinia’s wine production. The climate is Mediterranean, with short, mild, wet winters and long, hot, dry summers. With rugged mountains and dry plains, soil types vary from sandy clays in the south, the granite of Gallura in the north, to alluvial, gravelly soils around Oristano in the west. Today Sardinia is home to a unique range of grape varieties, predominantly of Spanish origin. Previously known for producing bulk, fortified and ‘Meditazione’ wines (including the famous Vernaccia di Oristano from the west coast), Sardinia is now known for its high quality table wine from Vermentino, Cannonau and Carignano. Beyond these, lay an exciting range of lesser known varieties such as Nuragus, Torbato, Monica and Bovale, adding diversity and interest to the Sardinian range.
Spumante e Frizzanti
Sparkling wines are produced from a variety of local and international grapes in Sardinia (if only in fairly small quantities) and can be dry or sweet. Mesa, Vigne Surrau and Tenute Olbios both make a sparkling wine in the ‘Metodo Classico’ (Champagne method) with Sella e Mosca using the Charmat (Tank) method.

Vermentino
Sardinia’s most important white varietal arrived on the island in the late 19th century via Corsica. Thought to be a sub-‐variety of Malvasia, it is grown widely throughout Sardinia. Flavour characteristics include citrus, melon, fennel, peach, herb and honey, with floral notes and lemony acidity. The best examples are found in the granite soils of Gallura in the islands north-‐east, with Vermentino di Gallura being Sardinia’s only DOCG.

Nuragus
Nuragus is Sardinia’s most planted varietal and is found mostly in Campidano and Cagliari. Possibly of Phoenecian origin, it is a popular local style, with its floral aromas, medium body, juicy green apple flavours and lively acidity. Consume with bottarga, shellfish and fried seafood.
2015 Argiolas ‘S’Elegas’ – Nuragus di Cagliari DOC Serdiana 75 2016 Agricola Quartomoro ‘NRG’ -‐ Arborea Oristano 110 Nasco
Nasco is an ancient Sardinian varietal, its name is derived from the Sardinian ‘nuscu’, meaning musk. Nasco is grown only in the southern half of the island, and is usually made into sweet wine styles. It makes a robust and fruity dry wine, with musk, banana and pineapple flavours. Dry versions can be consumed with rich fish and white meat dishes.

Sardegna Torbato
Torbato is most likely a member of the Malvasia family and of Spanish origin; it is known as Tourbat in Southern France. Traditionally grown only around Alghero, in chalk rich white soil, today it is only produced by the Sella e Mosca estate, who make both sparkling and still versions. It makes a viscous and exotic wine, with creamy texture, pistachio and spicy fruit characters. Consume with bottarga, sea urchin, seafood and spicy dishes.

The name Vernaccia is derived from the Latin ‘Vernaculus’, which defines all that comes from a given place. Vernaccia di Oristano is unique to Sardinia and unrelated to Italy’s other Vernaccia’s -‐ it may be indigenous, or was introduced by the Phoenecians. Vernaccia di Oristano is a historical wine, usually dry, made from over-‐ripe grapes in a similar style to Spanish Sherry. Wines are aged in a system similar to Sherry’s ‘solera’ where the wines will develop ‘flor’, but Vernaccia di Oristano is rarely fortified. These are complex wines, with deep colour and flavours of orange rind, dried apricot, roast hazelnut, tobacco, tea and winter honey. Granazza is the local name for the same grape around the area of Nuoro in the centre of the island. Contini ‘Karmis’ is made in a dry table wine style and is great with rich fish and white meat dishes.

Malvasia is of Greek origin (from the Peloponnese) and is thought to have been brought to Sardinia in the Byzantine era. This drier version is best served with rich seafood or truffled Pecorino cheese.
2005 Giovanni Battista Columbu – Malvasia di Bosa DOC 500ML NATURAL Bosa, Oristano 210 Semidano
The Semidano grape is of uncertain origin, perhaps introduced in Sardinia in ancient times by Phoenician or Roman traders. It spreads in the current Campidano area where it was originally used to soften wines made with Nuragus grape. The Semidano variety has mediumevigor and average productivity but not very steady. The Semidano grape gives a pale yellow wine, of delicate and very fragrant scent, with floral and fruity notes and hints of peach and apricot.

Rosé wines are produced by most Sardinian wineries and are usually made into dry, savoury styles. These wines are traditionally consumed as an aperitivo, but are great with antipasto, cured meats and pasta.

Known as Grenache in France and Garnacha in Spain, Sardinia’s most planted red varietal was considered to have been introduced by the Spaniards in the 15th century but according to most recent study, it might have been present in Sardinia well before Spanish occupation. Cannonau is grown all over the island, with the best examples coming from the area around Nuoro in central Sardinia. Medium to full-‐bodied in weight, wines have juicy, sweet raspberry and blackberry fruit, with hints of chocolate, warm spice and earth characters. With soft, fine tannins and low acidity, they can reach quite high levels of alcohol. Cannonau is great with suckling pig and game dishes -‐ styles range from medium-‐bodied and soft to rich, supple and powerful.

Argiolas ‘Turriga’
With the winemaking prowess of Sassicaia’s famed oenologist Giacomo Tachis, Argiolas Turriga has cemented itself as Sardinia’s premier wine. Aged for approximately 24 months in new French barriques and then aged a further 12 months before release, this wine truly shows the excellent ageing potential of Sardinian wine
1992 Argiolas ‘Turriga’ – Isola dei Nuraghi IGT Cannonau-‐Carignano Serdiana, Cagliari 400 Nebbiolo
Legend has it that the grape vareity Nebbiolo arrived in Gallura in the mid 1800’s from Piedmont, brought to the island by an Army General who was taken with the country side and wine growing potential of the regions granite hills. Cantina Tondini are one of the benchmarks of this beloved grape producing a complex and elegant wine with lingering notes of chocolate and tobacco

Sardegna Bovale / Nieddera
Bovale/Nieddera (also known as Muristellu or Muristeddu) is related to the French Mourvedre and Spanish Monastrell. In Sardinia there are two distinct clones; Bovale Sardo (regarded as the superior clone), and Bovale Grande (or Nieddera), which is widely planted around Oristano. Wines produced are medium to full bodied and supple, with earth, spice, and dried herb flavours. Drink with lamb, goat and beef dishes.

Monica is one of Sardinia’s oldest varietals and was possibly brought to the island by Spanish monks in the 11th century. It is grown in the southern half of the island, mainly on the Campidano Plain, where it produces a medium bodied, well structured wine with firm acid and plum, black pepper and star anise flavours. Consume with suckling pig and game dishes.

Drinks well with meat dishes

Cabernet Sauvignon
Cabernet Sauvignon was made famous by the great wines of Bordeaux in France and has been in Italy since the early nineteenth century. It has become the base of some of the countries most famous reds, including Sella e Mosca’s ‘Marchese di Villamarina’.

Santadi began its Sardinian wine legacy in the 1960’s, first growing grapes for local wineries and then moving into producing their own label in the 1980’s. Like Argiolas, they procured the wine making knowledge of Italy’s premier wine maker Giacomo Tachis and landed themselves international fame and exceptional quality wines. The ‘Terre Brune’ is their flagship red with 95% Carignano and 5% Bovaleddu. The wines are bold and concentrated whilst showing finesse and restraint from the time spent in oak and in bottle. Dark fruits, spicy notes and an alluring nose will ensure you never forget this wine.

Sardegna Carignano
Carignano is known as Carignan in France and Cariñena in Spain, and probably introduced in Sardinia by the Phoenecians over two thousand years ago. Planted in the sandy clays of the Sulcis region in the south-‐western corner of the island, Carignano is deep garnet in colour, making powerful and structured red wines with savoury dark berry fruit and earthy flavours. Wines made from Carignano are rich in tannin, acidity, colour and palate weight. Drink with slow roasted lamb, goat and beef dishes.

Dolci
Italian winemakers have a real passion for making sweet wines; they love to dry grapes on the vine, on mats in the sun, or in ventilated barns -‐ a method is known as ‘passito’. Sardinia is no exception and with its hot climate, many intense styles are produced. Sardinian sweet wines are usually made from Nasco and Moscato and are typically rich, sweet and decadent.

Vini Spumanti e Frizzanti Franciacorta
The wine region of Franciacorta is in the heart of Lombardy, in northern Italy, and gives its name to Italy’s most important ‘Metodo Classico’ (Champagne method) sparkling wine. Franciacorta is made in the same way as the great wines of Champagne in France, where the second fermentation takes place in the bottle. Wines are made from a blend of Chardonnay, Pinot Noir and Pinot Bianco.

This ever popular wine style is made using the ‘Tank’ or ‘Charmat’ method, where secondary fermentation takes place in stainless steel tanks -‐ preserving the delicate aromas and fruit flavours of the grapes. Until recent changes in Italian appellation law, Prosecco was the name of the grape used, but as of 2010, the grape is called ‘Glera’ and the zones where it is grown are known as ‘Prosecco’. DOCG status was awarded to the Valdobbiadene, Conegliano and Colli Asolani zones due to their superior quality. ‘Dry’, ‘Extra Dry’ and ‘Brut’ (the driest) styles are produced.

Rosso Sangiovese + Blends
Sangiovese is the most cultivated red grape varietal of Italy. It seems that Sangiovese was already known to the Etruscans and that the name derives from Sanguis Jovis, Blood of Jupiter. It can produce wine with perfect balance, with very fine perfumes, floral, but fragile. Possibly the most popular and important wine derived from Sangiovese is Brunello di Montalcino. Produced in the medieval village of Montalcino in the province of Siena, in 1980 Brunello di Montalcino was awarded the first Denominazione di Origine Controllata e Garantita (DOCG) designation and today is one of Italy's best-‐known and most revered wines. Vineyards in Montalcino are planted in varied soils, including limostone, clay, schist, volcanic soil and a crumbly marl known as ‘galestro’ at altitudes ranging from 149 m to 500 m. This diversity in terroir contributes to the vast range in quality and potential complexity of Brunello di Montalcino. Brunello di Montalcino is made 100% from Sangiovese. Traditionally, the wine goes through an extended maceration period where color and flavor are extracted from the skins. Following fermentation the wine is then aged in oak. Traditionally, the wines are aged 3 years or more "in botte"—large Slavonian oak casks that impart little oak flavor and generally produce more austere wines. Some winemakers will use French barrique which imparts a more pronounced vanilla oak flavor. There is a middle ground where the wine is aged in small barrique for a short time and then spends a longer sojourn in the traditional botte. The current aging requirements were established in 1998 and dictate that Brunellos are to be aged in oak for 2 years and at least 4 months in a bottle before release.

Marchese Mario Incisa della Rocchetta was the first to plant Cabernet Sauvignon in Tuscany, and began planting vines on his Tenuta San Guido estate from the early 194o’s. For years he produced wine only for the family, but in 1968 the wine was released commercially under the VDT and then IGT regulation. In the late 1990’s it became the only wine in Italy to be awarded it’s own DOC. Made from 85% Cabernet Sauvignon and 15% Cabernet Franc.

Rosso Nebbiolo / Chiavennasca
In the heart of the rolling hills of Langhe in the northern Italian region of Piedmont the ancient Nebbiolo grapes give birth to one of the greatest Italian red wines: BAROLO, the king of wine and the wine of kings. Barolo was one of the first three Italian wines to be awarded DOCG status when the classification was introduced in July 1980. The Barolo area is restricted to a handful of ‘communes’ which produce slightly different styles according to soils and mesoclimates. Wines from the villages of La Morra and Barolo are generally aromatic and fruity with La Morra producing the most perfumed and graceful wines, while the one from Barolo tend to be more complex and textural. Castiglione-‐Falleto, Serralunga d'Alba and Monforte produce more structured wines that require longer aging with Serralunga d’Alba barolos being the most tannic of the five. Castiglione-‐Falleto produce full-‐bodied wines of good balance and aromas and the Monforte D'Alba wines are rich, concentrated and intense. Barolo wines must undergo at least 38 months' aging prior to commercial release of which 18 must be spent in barrel. For the riserva, the total aging time increases to 62 months. Traditionally Classic Barolos are subjected to long fermentation and aged in large wooden casks requiring at least ten years cellaring to tame their tannins. Modern Barolo producers however have reduced fermentation times and introduced the use of new French barriques resulting in a fruitier and more accessible style which is approachable at a much earlier stage in its life.
