Practice baking (and tasting!)

On the baking front, it’s never too early to start practising. Here are three fool proof recipes to try from woman&home.

1. Heat the oven to 160C fan or Gas 4. Whisk the butter and sugar until pale and light; gradually beat in the eggs. Mix in the vanilla, then sift over the flour and baking powder and fold in gently. Mix in the milk, a tablespoon at a time. Divide the mixture evenly between cupcake cases and bake for 15 to 20 minutes until well risen and golden brown.

2. To make the topping, mix the cream cheese and icing sugar in a bowl until smooth, then beat in the milk and peanut butter. Gently fold in the caramel to create a ripple effect.

3. Once the cakes have cooled, add the topping and sprinkle over a little sea salt.

Salted peanut caramel cupcakesMakes 12 100g unsalted butter, softened 125g caster sugar2 eggs, beaten1tsp vanilla extract 125g plain flour 1tsp baking powder 2tbsp whole milkFor the topping 200g full-fat cream cheese 40g icing sugar, sifted 1tbsp whole milk100g peanut butter 100g canned caramel pinch of sea salt flakes

1. Heat the oven to 160C fan or Gas 4. Melt the chocolate and butter together in a large saucepan over a low heat. When completely melted, stir in the sugar, then the eggs one by one. Fold in the flour and salt, then spoon into the cupcake cases so they’re nearly full, and bake in the centre of the oven for 12 minutes.

2. Remove from the oven, and leave to cool completely on a wire rack. While they’re cooling, heat the cream and icing sugar together until steaming, allow to sit off the heat for a minute, then tip in the chocolate. Leave without stirring for 2 minutes, then stir to combine into a thick ganache. Leave to cool. Transfer to a piping bag and pipe swirls on to the brownies at once before it sets. Decorate with hearts.

Brownie cupcakes Makes 12125g dark chocolate (70% cocoa solids)100g unsalted butter175g light muscovado sugar2 large free-range eggs75g plain flour, sifted¼tsp sea salt flakes For the ganache topping100ml double cream50g icing sugar200g dark chocolate, finely choppedchocolate hearts, to decorate

Gluten free lemony cupcakesMakes 12175g spreadable butter175g golden caster sugar3 eggs175g gluten free self-raising flour 25g ground almonds½ tsp baking powderthe grated zest and juice of 1 lemonFor the icing150g/5oz icing sugar

1. Heat the oven to 140C fan or Gas 3. Place all the cake ingredients in a large bowl with half the lemon zest and 2 tbsp lemon juice. Beat well with a wooden spoon until smooth. Divide between cupcake cases. They should be about three quarters full.

2. Bake for 25 minutes until risen, golden and just firm to the touch. Allow to cool for 5 minutes, then remove from the moulds and leave to cool on a wire rack.

3. Mix the icing sugar with just enough lemon juice to make a thick pouring consistency. Drizzle over the cooled cakes. Decorate with the remaining lemon zest. These cakes will keep for up to 2-3 days in an airtight container.

'Whoever you are, whatever your background is, life is full of choices. After my diagnosis, I took to the sofa because I felt my life had lost all meaning. But I soon realised that I could stay on the sofa, or embrace the new journey that dementia had presented.

For me, it’s about living in the moment. I don’t remember what I did a few hours ago and I’ve no idea what’s in my diary for tomorrow. Yes, I used to enjoy baking with my grandchildren, but sadly I’m unable to do that anymore. But I’m not about to give in to the dementia, I just purchase a packet mix and, hey presto, perfect cupcakes every time.
