The Thrift Store carries a large variety of previously owned items in addition to hand crafted stepping stones, birdbaths, birdhouses, Adirondack furniture and plants all manufactured by individuals in this program. Steve Shindle has been “hot smoking” cheese and salmon for over 45 years, much to the joy of hundreds of people throughout the Paci� c Northwest and nationally. Using true western cedar smokehouses that turn out thousands of pounds of carefully hand cut smoked salmon and cheese, he capitalizes on two ingredients chef’s love to incorporate into their menus. Both are “hot smoked” in separate all western cedar smokehouses which is known as the most aromatic of all woods. The cheese is smoked for 6 hours, and turned every hour allowing the rich smoke � avor to truly penetrate the center of each 1/4 lb. cube. The salmon is picked up fresh, never frozen, rubbed with spices and smoked 12 hours later, promoting the freshest, most succulent salmon you will ever taste. Executive chef Jason McClure from Seattle’s Sazerac restaurant uses Shindle’s products, despite his personal preference for making everything in-house. “I’m the guy who would make everything in my restaurant, and never would have considered buying smoked salmon because I make my own. Honestly, though, when I sampled his salmon, I realized it is by far the best hot-smoked salmon I’ve had.” Sample his salmon and cheese and you will know it is by far the best you will ever eat!
