Cocktail Maestro Salvatore Calabrese brings a splash of ‘Liquid History’ to the iconic Donovan Bar at Brown’s Hotel, with an exclusive menu of Vintage Cocktails made with his
own personal collection of rare and historic spirits.
True to the hotel’s ethos of delivering traditional elegance with contemporary flair, the Donovan Bar’s vintage list offers
a playful nod to its location in London’s first ever hotel which opened in 1837.

The beginning of the long-awaited truffle season calls for a menu of its own in Beck at Brown’s, celebrating the different
truffles from the best of our Italian and British foragers.
Kicking off the programme is the fresh White Alba Truffle with sea bass carpaccio, vegetable crudités and cannellini
beans coated in a truffle oil emulsion; pumpkin ravioli served with an irresistible truffle oil and parmesan fondue; veal fillet,
fried in truffle butter and served with baby artichoke and spinach; and hazelnut crumble with white chocolate mousse and liquorice, each coated in a grated layer of fresh truffle.
