Moors and ChristiansThis celebration has become a highly popular and spectacularfestivity because of the many attractions it offers to bothparticipants and spectators: farce, disguises, traditional costumes, music and gunpowder. The age-old tradition of the battlesbetween the believers in the Crescent Moon and the followersof the Cross are portrayed year after year in colourful paradesfeaturing local people dressed as Moors and Christians, beatingon timbals and blowing pipes called ‘chirimias’, shootingblunderbusses and flashing shining swords and scimitars. Thelargest feast is held in the town of Alcoi, in the month of April, although there are many other celebrations throughout theyear, such as in Biar, Ontinyent, Bocairent, la Vila Joiosa, Alicante,Callosa d’En Sarrià, Jijona, Cocentaina, Villena, Elda, Petrer,Benidorm, Crevillente, Bañeres, Albaida, Sax, l'Olleria, etc.

Las FallasThese are the unparalleled fire feasts, signifying renovation, spring cleaning, the change of the seasons. ‘Fallas’ are huge,float-like figurines assembled in the street, full of satire andhumour, and peopled with baroque figurines called ninots.Valencia holds these festivities honouring St Joseph from 12 to19 March, and many other towns in the region do likewise, suchas Alzira, Benetússer, Cullera, Benicarló, Benidorm, Burriana,Dénia, Elda, Gandia, Sagunto, Torrent, la Vall d'Uixó, Xàtiva...

Les Fogueres de Sant JoanOn the night of 24 June bonfires are lit everywhere. This solsticecelebration is full of fun and festivities, with parades, dances, and a full range of firework displays. Streets and squares fillwith people, and music and the smell of gunpowder float throughthe night air, as the bonfires keep their tryst with the feast ofSt John each year. In the city of Alicante, the highpoint isreached on the night of 24 June, when from the summit ofmount Benacantil, a majestic firework display imitating a palmtree is set off, embracing the entire bay of the city.

La MagdalenaThis is held on the third Sunday of Lent in Castellón, with anumber of traditional parades and ceremonies such as the pregó,the pilgrimage to the chapel, les gaietes, dances, processions, etc. The gaietes parade is a unique celebration combining artand glowing lanterns to mark the founding of the city.

The Mystery of ElxThe Mystery of Elx, now a UNESCO World Heritage event asof 2001, is a festivity listed as being of international touristinterest, consisting of a sacred/lyrical drama inherited fromthe 15th century where actors perform the last few days ofthe Virgin Mary, her death, her ascension to heaven and hercoronation. CUISIN

E

The Land of Valencia has gained a deserved place in the annalsof cookery thanks to its world-famous paella, the queen ofregional cuisine. But the culinary delights certainly don’t endhere. Apart from this traditional dish combining products fromthe land and the sea, each town and village has its own variationon the rice theme. In fact, there are thousands of ways toprepare local rice: arròs negre (with squid), caldoso (stewed),al horno (oven-baked), a la marinera (fisherman’s style), concostra (with omelette topping), rossejat (with chick peas), etc.

Then come the fresh vegetables from the local gardens, thehuertas, and fresh fish and shellfish, plus game, ‘free range’poultry, all used as ingredients for old recipes which havestood the test of time. Restaurants offer dishes such asfideuà, gazpachos, sausages, all i pebre, cruet de peix, driedfish roe, etc.

Fresh oranges, table grapes from Vinalopó, medlars from Callosad’En Sarrià or cherries from the Alicante mountain orchards aregood for dessert. Or perhaps some turrón, arnadí, ice-cream orhorchata from Alboraya.

To accompany fine meals, nothing better than some red andyoung rosé wines from Utiel-Requena, or ‘cava’ or sparklingwine, a sweet Fondillón from Alicante, or crisp white winesfrom the Alto Turia, plus the traditional Alicante liqueursknown as herbero and café-licor. These wines all have their‘denominación de origen’: Alicante, Utiel-Requena and Valencia.
