(NAPSA)-Here’s something tocheer about: Food experts sayWhoopie Pies are the hottest dessertaround these days. What’s more, mak-ing your own can be easy and fun todo, when Lisa A. Sheldon, MS, authorof the “Olive Oil Baking” cookbook,shows you how:

WHOOPIE PIE COOKIES

Ingredients:1 cup sugar 1⁄3 cup Pompeian Extra Light

Tasting Olive Oil 2 eggs 2 cups all-purpose flour 1⁄2 cup baking cocoa, sifted 1 tsp. baking soda 1⁄2 tsp. salt 4 Tbsp. milk 1 tsp. vanilla extract 2 tsp. instant coffee powder

Filling: 6 oz. cream cheese, softened 2 cups confectioners’ sugar 1⁄2 tsp. vanilla extract 1-2 Tbsp. milk

Preparation: Preheat oven to 375° F. Line a bak-

ing sheet with parchment paper. Inmixing bowl, beat sugar and olive oiluntil crumbly. Add eggs and beat untilmixture is light and thickened. In sepa-rate bowl, combine flour, cocoa, bak-ing soda and salt. In small bowl, com-bine milk, vanilla and coffee powder.Add milk mixture and dry ingredientsalternately to sugar mixture and stiruntil smooth and well combined.

Cover and refrigerate cook_iedough for 1-2 hours. With lightlyfloured hands, roll dough into 2-inchballs. Place cookies at least 2” apart onprepared cookie sheets. Bake at 375° Ffor 12-14 minutes or until tops arecracked. Cool for 3 minutes beforeremoving to wire racks to cool.

Filling: In mixing bowl, beattogether cream cheese and confec-tioners’ sugar. Beat in milk andvanilla extract until fluffy.

Assembly: Place about 1-2tablespoons of filling on the flat bot-tom of cooled whoopie pie and topwith another whoopie pie to make asandwich.

By using olive oil, you can besure the cookies are moist and deli-cious and lower in saturated fat andcholesterol than when you bake withbutter. In fact, you can use ExtraLight Tasting Olive Oil for all yourbaking needs, as well as for sautéingvegetables and with sea_food, with-out significantly changing taste.

A tablespoon of olive oil con-tains only about one-third of the sat-urated fat of a tablespoon of butter,only 2g saturated fatty acid (com-pared to butter’s 7g) and no choles-terol. According to Sheldon, “Oliveoil is a smart choice for increasingyour intake of monounsaturates.”

The U.S. Department ofAgriculture’s new DietaryGuidelines seem to agree. They urgepeople to cut back on saturated fatsand suggest switching from butter tooils derived from plant sources.

Hello, Woopie: An American Pie (NAPSA)-A surefirerecipe for entertaining yourkids-after school and duringschool breaks, vacations or“staycations”-is to bringthem into the kitchen.Baking is an inexpensivefamily fun activity that canhave delicious results.

Mastering cooking tech-niques can also reinforcemath skills such as count-ing, measuring and separat-ing, as well as improve eye-hand coordination.

Parents should remem-ber to be flexible, not expect perfec-tion and to have fun! Make sure theprojects you attempt are age appropri-ate. For example, while you may haveto read preschoolers the recipe, theycan learn to wash hands and surfaces.Once you have premeasured ingredi-ents, you can let kids add them to thebowl. Preschoolers can cut with plasticknives and, with supervision, cutshapes with cookie cutters. They canalso sprinkle baked goods with can-dies, chopped fruits and sugars.

Kindergartners to second gradersmay be able to read recipes and chopsoft foods, grate cheese, wash fruitsand vegetables, measure, stir battersand knead dough.

Third to sixth graders can read therecipe and assemble ingredients, usesmall appliances and preheat the oven. Interest has risen in cooking classesfor kids, an increasingly popular formof entertainment at kids’ parties andscouting events.

You can also find classes offeredby recreation departments and collegesor by private instructors. Here’s a funrecipe from the Clabber Girl CulinaryClassroom cooking camp for kids:

BUNNY EARS

4 tablespoons softened butter 1 cup flour 3 tablespoons sugar 1⁄2 teaspoon Clabber Girl baking

powder 1⁄2 teaspoon salt 1⁄3 cup milk 3 tablespoons brown sugar 1 teaspoon cinnamon

powdered sugar (to taste)

1. Read all steps in advance. 2. Have all ingredients and utensils

out and ready to go. 3. Preheat oven to 400°. 4. Place butter in glass dish.

Cover and melt in micro-wave for 1minute on low heat. (Or, use asaucepan on the stovetop over lowheat. Be careful not to burn or brownthe butter.) 5. In a large bowl, combine flour,sugar, baking powder and salt; mixby hand.

6. Stir in 3 tablespoons of thebutter and milk. Mix until you havea smooth dough.

7. Lightly dust countertop orboard with flour; pat dough into rec-tangle.

8. Brush surface of dough withremaining butter.

9. Combine brown sugar andcinnamon in the bowl; sprinkle onrectangle.

10. Roll up the rectangle tightly;pinch along the seam to seal.

11. Cut the roll into four evenpieces; place on baking sheet cutside down.

12. Flatten each piece with yourhand and shape into “Bunny Ears.”

13. Place baking sheet in oven soit is not touching oven sides oranother pan. Bake 10-12 minutes.

14. Remove the finished BunnyEars from oven and cool on wirerack.

15. Sprinkle with powderedsugar.
