N O B I L I S S I M A S P I R I T O F I T A L Y Tasting Notes: Our 2016 Nobilissima Prosecco DOC is a light straw yellow, with lively, persistent and crunchy bubbles. The bouquet is elegant with hints of wild flowers and scents of apples, pears and peaches. The flavor is sapid, full and balanced, with intense and elegant fruitiness. Viticulture and Terroir: Nobilissima Prosecco is produced in the renown Prosecco DOC area. The appellation is characterized by a volcanic mineral-based soil and Mediterranean climate protected by the Alps and influenced by the mild sea breezes. The new DOC includes the regions of Veneto and Friuli-Venezia Giulia. Production: The grapes of Prosecco, Glera, are harvested by hand, softly pressed and fermented without maceration with selected yeasts at a controlled temperature lower than 20°C. Refermentation follows the Long Charmat method; yeast stays at least 30 days in tanks.
