SAFETY PRECAUTIONS FOR YOUR PRESSURE COOKER.
• Donotpluginorswitchontheunitwithouthavingthecookingpaninsidetheunit.
• Donotoperatetheunitonaninclinedsurface• Useyourunitwellawayfromwallsand
curtains,anddon’tuseinconfinedspaces.• Checkthepressureandsteamreleasevalve
beforeuse,andifcloggedcleanasnecessary.• Donotoperatetheunitwithoutfoodor
liquidinthecookingpan.Neverexceedthemaximummarkingsontheinsideofthecookingpan,ormaximumandminimumquantitiesstatedintherecipesprovided.Somefoodsexpandduringcooking,anditmayresultindevelopingexcesspressure.
• Placetheunitsothatthepressureandsteamreleasevalveispositionedawayfromthebody.
• Ensurethelidislockedbeforeuse.(Frypansettings–brown,sauté,simmerdonotrequirethelidtobeused)
• NeveruseanylidexceptthelidprovidedwithyourSunbeampressurecooker.
• Donotusethelidtocarrytheunit.• Neverplaceanypartofthebodyincluding

• Becarefulwhenliftingandremovinglidaftercooking.Alwaystiltthelidawayfromyouassteamishotandcanresultinseriousburns.Neverplacefaceovertheunit.
• Thepressurecookeroperatesunderpressure.Incorrectusemayresultininjury.
• Usehandlesandovenmittstomovetheunit,thecookingpanandthelidwhenhot.
• Unplugtheunitwhennotinuseandbeforecleaning.Allowtheunittocoolbeforeputtingonortakingoffpartstoclean.
• Certainfoodsarenotsuitedforpressurecookingastheycanfoam,froth,splatterandclogthepressureandsteamreleasevalve.Noodles,macaroni,spaghetti,cranberry,applesauce,rhubarb,splitpeas,pearlbarley,oatmealandothercerealsshouldnotbecookedinthepressurecooker.
• Donotimmersethebaseoftheunitinwateroranyotherliquid

Tip:Duringprogrammingifnobuttonhasbeenpressedafter20minutes,theunitwillenterthestand-bymode,andtheLCDscreenwillturnoff.

1.Removeallpackaging,plastic,paperandcardboardfromtheunit.
2.Ensurethepowerisswitchedoffatthepoweroutlet,andremovethepowercordfromtheunit.
3.Removethesafetylockinglidbyturningclockwisetounlock.Removethesealinggasketfromthelidandwashthegasketandthelidinwarmsoapywater.Drythesealinggasketandlidthoroughlybeforereattachingthesealinggaskettothelid.Seefigurebelow.Ensurethesealinggasketissmoothlyandsecurelyinplaceinthegasketholder.Ifthesealinggasketisnotinthecorrectpositionthelidwillnotbeabletoformasealandwillnotbeabletogainpressure.
4. Removethecookingpanandthecondensationcollectorandwashinwarm,soapywater.Drythoroughlybeforereplacingbackintheunit.

The Safety Lid
TheSunbeamPressureCookerhasbeendesignedwithsafetyinmindandhasvariousswitchoffsafetymeasures.1.Pressurewillnotbuildifthelidisnotshut
correctlyandhasnotsealed.2.Pressurewillnotbuildifthelidisnot
lockedintheLOCKposition.3.Pressurewillnotbuildifthepressureand
steamvalvehasnotbeenswitchedtothe‘SEAL’position.
4.Pressurewillnotbuildifthegasketorthevalveshavebecomeclogged.Thegasketandthevalvescanberemovedforcleaning.(Seepage24).
5.Thepressureandsteamreleasevalvehasanextendedfingertab,designedtokeepthehandawayfromthetopofthesteamvalve.Flickthetabto‘RELEASE’positiontoreleasepressure.
6.Oncethepressureincreases,thelidcannotbeopened.Safetysensorsensurethepressureremainswithinthesetrange.
7.Thepressurecookerrequiresliquidtowork.Iftheunithasbecomedry,aDryerrorwillappearintheLCDscreen.
8.Attheendofcookingthelidcannotbeunlockeduntilallthepressureisreleased.Thiscanbedoneusingthenaturalreleaseorquickreleasemethodslistedbelow.
Releasing Pressure at the End of Cookinga.NaturalReleaseMethod.Theunitis
turnedoffandlefttocoolgraduallyuntilthepressurereleasesonitsown.Thelidisthenabletoberemoved.Dependingonthevolumeoffood,thiscantake5–20minutes.
b.QuickReleaseMethod.Usinganovenmittflickthetabonthepressureandsteamreleasevalvetothe‘RELEASE’setting. Donotplaceanypartofyourhandorbodyoverthesteamoutletonthetopofthevalveassteamisveryhotandmayscald.Never use this method when cooking liquid ingredients such as casseroles, stocks and soups.Thepressureisreleasedwhensteamisnolongerescapingfromthevalveandthelidopensfreelywithnoforce.Onlythenisitsafetoremovethelidandservefood.
Note: Do not force the lid to open. If it does not open freely this means that the unit is still under pressure.
Note: During cooking, steam will build up in the unit, so when lifting the lid use a kitchen glove or mitt to protect your hand.
Tip:Rememberifthelidisnotshutcorrectly,ifthevalvesandgasketarecloggedandifthepressureandsteamvalveisnotinthe‘SEAL’position,theunitcannotgainpressureandanERRORmessagewillappearintheLCDscreen.Checkthegasketsealisplacedevenlyinthelid.ProgramErrorsaresummarisedintheTroubleShootingDisplayInformationGuideonpage30.

Pressure CookingPressureCookingisanidealwaytocreatequick,flavoursomeanddeliciousmeals.PressureCookingisamethodofcookingfoodinliquid(water,stock,wineetc)inasealedcookingpan.Thesealedunitretainssteamandbuildspressureraisingthetemperatureoftheliquidinsidethepanaboveboilingpoint.Theincreasedtemperatureoftheliquidandthesteamresultsinreducedcookingtimes.Italsocausesthefibresinfoodtobreakdownmorequickly,resultingintender,flavoursomemeats.Vitaminsandmineralsareretained,naturalflavoursandcoloursareintensifiedandlessseasoningcanberequired.Asthemeatscookedinapressurecookertendtobemoretender;tougherandmostlycheaperyetflavourfilledcutsofmeatscanbeusedsuchaschucksteak.
HIGHPressureSetting is70kpa.Itissuitableforawiderangeoffoods.
LOWPressureSetting is30kpa.Itismoresuitedtodelicatefoodslikechickenfillet,fishandsomevegetables.
KEEPWARMSetting. Whencookingtimeiscompleted,thePressureCookerautomaticallyswitchestotheKeepWarmsettingtopreventovercookingandtokeepyourcookedfoodwarmuntilserving-perfectforbusyfamilies,thoseontherunandthosewhoneedflexiblemealtimes.Thissettingisnothotenoughtocook,andshouldonlybeusedtokeephot,cookedfoodwarmforserving.
IdealMealstoPressureCook. Soups,stocks,casseroles,sauces(e.g.pastasauces),meat,driedbeans(notsplitpeas),rice,firmvegetables(beetroot,potatoes)anddesserts(suchaspudding,crèmecaramel).
Capacity. WhentheunitisusedonthePressureCookmenu,themaximumcapacitytouseistheMAXPCmarkingontheinsideofthecookingpan.Theunitcannotgainpressureandthereforecannotworkwithoutliquid.Usingwithoutliquidcanseverelydamagethemachine.
Note: The unit can not work without liquid. Ensure a minimum of 250ml of liquid is used inside the removable cooking pan.

Slow CookingSlowCookingachievesflavourfilledmeals,andtendermoistmeatscookedtoperfection.Asthenamesuggests,mealsarenotcookedunderpressurebutarecookedoveralongperiodoftime.SlowCookingprovideshealthy,simpleandeconomicalcooking.Itrequiresminimalsupervision,shortpreparationtimesandquickcleanuptimes.
LOWSetting. Thisissuitableforsimmeringandslowcooking.
HIGHSetting. Thisisforfastercooking.Typically1houronHIGH=approximately 2-2.5hoursonLOW.
KEEPWARMSetting. Whencookingtimeiscompleted,theAvivaautomaticallyswitchestotheKeepWarmsettingtopreventovercookingandtokeepyourcookedfoodwarmuntilserving-perfectforbusyfamilies,thoseontherunandthosewhoneedflexiblemealtimes.Thissettingisnothotenoughtocook,andshouldonlybeusedtokeephot,cookedfoodwarmforserving.
TheSlowCookmenudoesnotrequirepressuretocook.Itcookssimilartostandardslowcookersanduseslowtemperaturesandlongercookingtimestoachievetender,flavoursomemeals.

SteamingTheSteammenuisperfectforgentlysteamingfishandvegetables.Itispre-programmedtousetheLowpressurecookingsetting.Whensteaming,usethecookingrack.TheSteammenudoesnotcookunderpressureasfoodstendtobemoredelicate.
Capacity. WhentheunitisusedontheSteammenu,themaximumcapacityofliquidshouldbejustundertherackwires,sothattheliquidisnottouchingthefood.
Brown, Sauté, SimmerTheFrypanmodehasthreeheatsettingsBrown,SautéandSimmer.Changetheheatsettingdependingonthefoodthatyouarecooking,andyourstyleofcooking.ItisidealtousepriortoPressureCooking,andSlowCookingtobrownmeats,sautéonions,vegetablesetcforeasyonepotcooking. TheBrown,SautéandSimmermenusdonotcookunderpressurebutcooksimilartoafrypan.Thereforeunlessinstructedinyourrecipe,donotusethelidonthesemenus.
Brown isthehighestheatsettingandcanbeusedtosearmeatsforcasserolesandsoups.Browningmeatpriortopressurecookingandslowcookingnotonlygivesyourfoodgreatcolour,italsosealsinthejuicesandflavoursandkeepsthemeattender.

Sauté isamediumtemperatureandissuitabletosautéonions,andmirepoix(mixtureofchoppedonion,carrot,celery)oftenusedinpressurecookerandslowcookerrecipes.Sautéingonionsallowscaramelisationwhichcontributestoflavourandcolourintheenddish.

Cooking Pot markings
Insidetheremovablecookingpanaretwosetsofmarkings.OnesideismarkedMAXPCwhichindicatesthemaximumfilllinewhencookinganyfoodotherthanrice.TheothersideismarkedMAXCUPRICE. Forwhiterice,themaximumisthe12cupline(riceandwatercombinedshouldnotexceed12cupline).Forbrownrice,themaximumisthe10cupline(riceandwatercombinedshouldnotexceed10cupline).The1/5,2/5,3/5,4/5and2/3markingsarehandyguidestouseinyourrecipes.
Note: Except when cooking rice, never load the cooking pan above the maximum ingredient level line marked MAX PC on the inside of the cooking pot. Foods that expand during cooking (e.g. legumes) should never go above the 3/5 mark.
NOTE: The unit can not work without liquid. Ensure a minimum of 250ml of liquid is used inside the removable cooking pan.

Using the Pressure Cooker menu
PlacethePressureCookeronaflat,levelsurface.Plugintheunit.Theunitwillbeep,andtheindicatorlightsandtheLCDscreenwillilluminate.ThePressureCookerwilldefaulttothePressureCookermenu,ontheHIGHsetting.‘Pressure’and‘HIGH’willflashonthedisplay.1.Placeyourfoodandliquidinsidethe
removablecookingpan.
2.Placethelidon,andlockbyrotatinganti-clockwisetotheLOCKposition.
3.Usingthefingertab,flickthepressureandsteamvalvetothe‘SEAL’position.
4.IfthemenuisnotsettoPressureCook,setthecookingmenubyscrollingthroughtheMENUbuttonuntilalightappearsnexttoPressureonthecontrolpanel,andHIGHisflashingintheLCDscreen.
5.ToselectthepressuresettingofLOW,presstheMENUbutton,andLOWwillflashintheLCDscreen.
6.Toselectthecookingtime,presstheTIMEbutton,andthenpressthe and buttons,untilyourdesiredtimeappearsintheLCDscreen.Eachbuttonpresswilladjustthetimeby1minuteupto20minutes,andincrementsof5minsthereaftertoamaximumcookingtimeof2hours.
Note:theminimumcookingtimeis2minutes,andthemaximumcookingtimeis2hours.7.OnceyouhavesetthedesiredMENUand
cookingTIMEsettings,pressSTART.
8.ThePressureCookerneedstogainpressurebeforepressurecookingcancommence.Whentheunitisgainingpressure,‘Cooking’willflashintheLCDscreenandthetimewillnotcountdown.Whenpressurehasbeenreached,‘Cooking’willstopflashingandthetimewillbegintocountdown.
9.Afterthesetcookingtimehaselapsed,theunitwillbeepandwillautomaticallyswitchtotheKEEPWARMsetting. TheLCDscreenwillthereforechangefrom‘Cooking’to‘KeepWarm’.ThePressureCookercanstayintheKeepWarmsettingfor4hours.

Using the Slow Cooker menu
TheSlowCookmenudoesnotcookunderpressure,butdoesneedthelidlockedtocommencecooking.Itcookssimilartostandardslowcookersanduseslowtemperaturesandlongercookingtimestoachievetender,flavoursomemeals.PlacethePressureCookeronaflat,levelsurface.Plugintheunit.Theunitwillbeep,andtheindicatorlightsandtheLCDscreenwillilluminate.ThePressureCookerwilldefaulttothePressureCookermenu,ontheHIGHsetting.‘Pressure’and‘HIGH’willflashonthedisplay.1.Placeyourfoodandliquidinsidethe
removablecookingpan.
