English! Is there method to the madness?No language in the world has more words spelled the same way but pronounced differently. Here’s a top example: the sound: “ough” as in: through, thought, thought, tough, plough, thorough, hiccough, and lough (an Irish-English word for loch, pronounced roughly the same). That’s 8 pronunciations of the same letter sequence!

Soup of Butternut Squash, Parmesan & Sage

Ingredients 1 whole butternut squash (peeled, de-seeded and diced)

2/3 large peeled white potatoes

1 large white onion finely diced

1 garlic clove finely chopped

3 pt vegetable stock or water

salt & pepper

8 fresh sage leaves

¼ pt double cream or crème fraiche

4 oz grated fresh parmesan

2 tbsp olive oil

Method1. Cut squash in half, peel skin and remove seeds, dice into 2” cubes,

peel and dice potatoes the same size.

2. Gently sauté the onions and garlic in 2 tbsp of olive oil. When softened add squash and potatoes, stir - careful not to colour or burn ingredients. Add 4 sage leaves, stalks included.

3. Cover with the 3 pt stock or water (I prefer a light stock), cover pan and simmer until squash and potatoes are cooked and not hard in the middle, about 20-30 mins.

4. When cooked, remove the pan from stove, using a blender blitz soup to a smooth velvety texture, if too thick add a little more stock.

5. Add cream or crème fraiche to the required consistency & colour. Season to taste.

6. Finally chop the remainder of the sage and add to the soup with the grated parmesan.

You can use this method of cooking soup also with pumpkin, sweet potato, leek & potato, etc. It’s the vegetables that help thicken the soup so consider the ratio to stock/water. Great for autumn’s chillier days.

Crowborough Conservation is a voluntary conservation group set up to protect wildlife and greenspace in and around Crowborough.

A major part of Crowborough’s appeal is having the Ashdown Forest within easy reach, yet there are natural areas in Crowborough that few are aware of. Take Crowborough Country Park , site of the former claypits used by the Jarvis Brook brickworks up until 1980. This little gem is off Osbourne Road and consists of wet woodland, heathy glades, an area of fen and two ponds. In 1995 it was designated a Site of Nature Conservation Importance (SNCI) for its diverse mosaic of habitats and rich wildlife assemblage. Under the ownership of Crowborough Town Council it became a Local Nature Reserve (LNR) in 2010.

Crowborough Ghyll is another important natural area, a 20 hectare area of wooded stream valley between Green Lane and Burdett Road that forms an important green spine through Crowborough. Also an SNCI, the Ghyll is shortly to become an LNR.

We are lucky to have so much wildlife living on our doorstep, yet much of this goes unnoticed. Crowborough Conservation has been instrumental in identifying Dormice (a seldom seen and endangered species) at the Ghyll and the nearby Pellings Wood.

There is a common feeling that we do not experience wildlife in the way we used to. But to value our green spaces and the wildlife it supports, we need to be aware of it.

That is why Crowborough Conservation has started an exciting new project which aims to identify and monitor key species of wildlife in Crowborough and give local people of all ages the chance to see wildlife up close. During October and in spring 2012 Crowborough Conservation will be hosting field trips to see reptiles and amphibians in their natural surroundings at various sites around Crowborough.

The tiresome task of getting out the lawn weed killer to attack the perennial dandelion invasion is probably something most of us have a dull dread of. Last year my husband’s tactics were to mow down as may as possible before they had a chance to spread their seeds… it didn’t work.

Ithinkit’sfairtosaythesedarkthoughtshavelikelycloudedourappreciationofthismosttenaciousofplants.

However,theirLatinname,Taraxacum,isderived from the Greek taraxos (disorder), and akos (remedy), on account of the plant’s manycurativeactions.

Apparantly we usedtobeabletodistinguishbetweenvariousshadesofbitternessnoless!Sodandelionsleaveswhicharemorebitterthanmostleafyvegetablesarebettermixedinwithsweetrootsvegetables,forinstanceorspinach.

Therootscanbedriedandusedtomakeacoffee-likedrink.And,ofcourse,onecanmakedandelionwine…

Local Charity, Open Hands

Sometimes it’s easy to take things for granted living in the Ashdown Forest area. Not just the beautiful views, laid back life, and looking for the pooh-sticks bridge with your kids, I mean the fact we have such a brilliant education system, particularly for those with special needs. I know it’s far from perfect, but compared to some of our fellow Europeans we have a first rate system.

Nowhere is this more evident than Romania, where I have visited a number of times working for Open Hands, a charity seeking to improve the lives of the most needy individuals, particularly neglected children, within Romania.

On a visit to Suceava last year, we became aware of the sheer scale of problems concerning autistic children. Many receive no education, and very little, or no support. There are no special needs teachers in Romanian schools, and many children are undiagnosed and simply expelled or thought “stupid”

and unable to teach. Children are often bullied, neglected, or simply ignored by society. It was clear to us that something had to be done.

Open Hands teamed up with Fara charity in Romania, to establish an autism daycare centre. The aim of the centre is to integrate children into society by giving them the communication and social skills they so desperately need.

As anyone who knows autistic children, little can be achieved without qualified staff, even with the best intentions. Earlier this year my wife and I accommodated two people who received specialist training here in Sussex who are now putting what they learnt into practice.

Aside from making a donation towards the general costs of the centre, we also sent over materials, and built an outdoor playground for the children.

It has been a wonderful transformation to see the shabby, old building we visited

last year transformed into a beautiful daycare centre.

It opened in May 2011 and supports 16 children along with their parents.

Many families freely admit it’s an embarrassment to have a child with special needs, and purposely exclude their child from society.

By working with dedicated Romanians who want to see a change in their country, we hope to equip them with the tools and knowledge to provide a better future for their children.

Len was born and bred in Crowborough and walks Crowborough Common every day of the year with his faithful terrier, Rose.

The common has been an important part of Len’s life for nearly 80 years.

‘Soon after I was born, my mother was pushing me in a pram over the common. This was in the early 1930s. Some of my clearest memories are from when I was a young boy at the outbreak of war. My friends and I were fascinated to watch the Royal Observer Corps build an early warning look-out post on the summit of the common by Southview Road. This was manned day and night to watch for German planes coming up from the channel at Cuckmere Haven.

‘Later on we witnessed the installation of nine foot wooden posts on open areas of the common – this was to stop enemy planes using the common as a landing place for the expected German invasion’ remembers Len.

‘Brittany House, on Beacon Road, was the base for a French Canadian tank unit. They parked their tanks in a long line on the common as they prepared for D-Day.’

Len recalls a tragedy on the common: ‘There is a disused quarry on the High Broom part of the common, and it was here that the Canadian soldiers stationed in Crowborough set up a rifle range and performed their training exercises.

‘One day a German flying bomb landed close by killing nine soldiers. A stone memorial to their memory was built on the common and every July the British Legion lay a wreath.’

Len considers the common Crowborough’s greatest asset. Covering over 220 acres, it is literally the town’s largest public recreation space.

‘The common is registered with East Sussex County Council. It is an ancient common and I have been able to trace it back to the days of Shakespeare and Queen Elizabeth I.’ says Len.

The common is also home to Crowborough Beacon Golf Club. Less than half the common is used for golfing activities. The public may walk wherever they wish, including the golfing areas. The common is great for rambling, bird-watching, exploring and, of course, walking the dog.
