By Jessica MackinThe ninth annual Hamptons

Happening Feast will takes place on Saturday in Bridgehampton to benefit the Samuel Waxman Cancer Research Foundation. Leading the feast will be renowned Chef Todd English and six of his restaurants and their respective chefs.

“I was honored and delighted when I was asked to guest chef this great event,” English told Indy this week. “Cancer research is something that is very near and dear to my heart, as it has affected my life and my family with the loss of my sister to breast cancer. I am always doing whatever I can to help support the fight to find a cure.”

English continued, “The work that Samuel Waxman and his foundation are doing is just remarkable and inspiring. There’s nothing better than getting together with like-minded people to enjoy good friends and good food and to give back at the same time. This event will help spread awareness and raise funds, so I’m really looking forward to it and to enjoying a nice weekend in the Hamptons . . . It’ll be my first trip out this summer!”

English’s participating restaurants will be Ca Va, Curly Cakes, Todd

English Olives, TE Todd English, Todd English Food Hall and Tuscany at Mohegan Sun.

Along with Todd English, Ruth Finley, founder of the Fashion Calendar will also be honored. Adam Alpert, owner of 4 AM DJS, has donated one of his hottest DJs, DJ Theory, guaranteed to keep the dance floor packed. MC for the evening is CBS Anchor, Chris Wragge.

The SWCRF is an international organization that is dedicated to finding the cure for cancer as well as preventing the disease, using minimally toxic treatments. Samuel Waxman told Indy, “The ninth Hamptons Happening is a special event for raising the visibility of the unique mission of the SWCRF’s international collaboration to provide the science to result in minimally toxic treatments for all forms of cancer.”

Waxman also spoke of this year’s event, “The remarkable Hamptons Happening team, local involvement and generous support from individual sponsors of research programs is an example of collaboration for a cancer cure.”

Marion Waxman, Samuel’s wife, has worked all year on this summers

extravaganza. “I am very excited that this years Hamptons Happening is our most successful event to date. This enables the SWCRF to support research in pediatric, breast cancer, and leukemia,” she said.

Marion continued, “We are very fortunate to have a generous community of talented chefs, amazing honorees, a great benefit committee, and a devoted staff as well as a talented event planner. Many local businesses like The Independent have contributed to this

success with media exposure each year.” The Independent Newspaper is a sponsor of this year’s Hamptons Happening Feast.

Co-chai r o f the Hamptons Happening Feast, Laurie Schaffran, also spoke to Indy and said, “As co-chair of the Hamptons Happening with Marion Waxman since its inception nine years ago, I am delighted and frankly amazed by the enthusiastic outpouring of support by chefs and ravenous guests, who

ARIES (Mar. 20 - Apr. 20) Lots and lots of energy this week. You may need to take time to do some physical exercise to burn it up. You are probably spending too much time in your head and you need to get back into your body. Physical exercise is the best way to do this. Take a walk or go for a swim, something to engage your body again. Sounds too boring - just try it!

TAURUS (Apr. 20 - May 21) Remember that the word satisfaction has the word action within it. This reminds us that to have satisfaction, we must be actively taking action on those things which satisfy us. Makes sense, eh? Well, then do it! Look for and find the things that move you and fill you up and make some room in your life to actually do them.

GEMINI (May 21 - June 22) Give attention to what your body needs and desires and make a point of giving it to them. Is it time to buy some new clothes or get your hair done? Make the time to take care of these small, mundane details, which are so personal. You are on the brink of moving into a very new space, so take advantage of this time and make sure your body is happy enough to move into the new which awaits you.

CANCER (June 22 - July 23) You are s t rong and you are resilient, remember this. You will have the strength to survive the current circumstances. Know that the Universe is ready with a huge cosmic second wind and take some alone time to tap into it when you need to. It is important that you remember how resilient you are. Also how resourceful. Take a break and come back to yourself and feel your strength again before making big decisions.

LEO (July 23 - Aug. 23) The best reason to do anything is the fact that we find ourselves moved to do the thing. So few things in life move us and so few people move us as well. Resist the urge to sit on the couch until you get over the desire. Stop trying to talk yourself out of doing things and become your greatest source of encouragement and biggest fan and talk yourself into doing them. It is easy to sabotage ourselves and then we run the risk of living on the sidelines and never being in the game.

VIRGO (Aug. 23 - Sept. 23) What are you focusing on? Are you seeing all your cups half full or half empty? Worse yet, are you scanning your life to find the things that are ‘wrong’ just so you can stay focused on fixing your life rather than enjoying the things which are going well? Whatever you focus on, will expand. Focus on what is going right and what is working and you will surely get more things which are coming together. The added bonus of this kind of view of your life is that you will be having a much better time.

LIBRA (Sept. 23 - Oct. 23) Take a break. You must begin to get good at nurturing yourself first and then others. It is important not to burn yourself out, so if you are feeling like taking a long leisurely bath, do it. Take time for yourself and really get good at caring for yourself the way you would someone you love. You will end up with more energy and more quality to share with others if you make a point of taking out some time for yourself

SCORPIO (Oct. 23 - Nov. 22) Okay, take two steps back from your life. You need to get a bigger view of things. You may be micro managing

or putting things too intensely under the microscope. So take the time to get a good overview of your life and see all you have to be thankful for and all that’s really cool. Take a trip; just leave the microscope at home.

SAGITTARIUS (Nov. 22 - Dec. 21) Yes, it’s true, one choice is to worry. But, there are other choices, like not worrying! Worry serves no purpose and helps no one; it only serves to make us crazy. This would be a great time to break the habit. That is all that it is, a mental habit. Do something else with your mind; there are many other things to think about and many other ways to think about things. Get creative and change your mind!

CAPRICORN (Dec. 21 - Jan. 20) Potentially a big week. Use this week to begin some new business project or bring new life to an existing business. Spend some money if you need to, for money spent right now will have a larger pay off down the road. You could say this is a good time to invest. But the best investment will be yourself, so invest time and/or energy into developing what it is you most want to accomplish in the world.

AQUARIUS (Jan. 20 - Feb. 19) Feeling inspired? No? Well take

another look around. Inspiration is there; you just need to claim it. Take advantage of this burst of energy and get some things done, or at least take notes about what you want to accomplish and what you are feeling during this time.

PISCES (Feb. 19 - Mar. 20) Can you feel your power? You should be able to by now. Coming into and using your power wisely is the goal this week. Honor your intuition, too. There are things that you know -- really, really know. Take them to heart and begin living from that knowing. Feel the power within yourself and use it for good. For your own good.

Today’s Birthday: Jennifer Lopez, 1969To say Jennifer Lopez is multifaceted would be an understatement. She first burst on the scene primarily as a dancer, touring with the

New Kids On The Block and later, featured on the hit TV series “In Living Color.” She earned three Grammy nominations for her dance albums.

Lopez did and does command front pages in the tabloids for high profile relationships with the likes of Ben Affleck (remember “Bennifer?”) and Puff Daddy.

Lopez switched to Pop music and in 2001 her album, J-Lo, hit number one on the charts and was one of the top selling albums in the world.

Did we mention she’s an actress? She played the title role in Selena (1997) and has prominent roles in several other big-ticket films including Anaconda and Out Of Sight with George Clooney.

She most recently appeared as a judge on “American Idol.”Lopez has never strayed from her roots, though. She grew up in a Puerto Rican neighborhood in the Bronx,

the daughter of hard-working middle class parents who stressed their work ethics with their children. Lopez went to Catholic School and starred in track, gymnastics, and softball. She was so talented she competed on a national level in track, often venturing out of state to championship meets.

She dropped out of college after one semester to pursue her dream of a show business career and immediately found work as a dancer, landing on Broadway in only a few months.

Lopez, divorced three times, is the mother of five year-old twins.

Coming Soon

Wolverine (PG-13) Hugh Jackman is back in the title role, in this X- Men’s

first solo outing. James Mangold (3:10 To Yuma) directs. Add a star if you buy into the whole Marvel thing.

New To Theaters

Red 2 (PG-13) The gang from Retired Extremely Dangerous is back for another go after the first film went viral worldwide. Bruce Willis, as Frank Moses, is, well, Bruce

Willis. But John Malkovich damn near steals the show again – except of course, for the presence of Helen Mirren and Mary-Louise Parker. Oh yeah, Anthony Hopkins is in it, too. It’s more of the snappy banter and action, but of course, it seems a bit more contrived this time around. It’s still the fun movie of the summer.

New On DVD

Hansel And Gretel: Witch Hunters Really. We don’t know how Jeremy Renner got roped into taking this role, but we suspect a great deal of money had a lot to do with it. Gemma Arterton plays the sister, and the pair merrily hunts down evildoers until they themselves become targets. You’d have to be pretty lonely or very bored. BTW -- it bombed in theaters – who woulda thunk it?

eagerly anticipate this special event year after year.” Schaffran called the event “truly a sensory experience with something for everyone.”

Along with English and his restaurants, the event will include bites provided by an array of sweet and savory chefs including Peter Ambrose, Erica Kalick, Todd Jacobs, Gil Chico, Greg Grossman, Fabiola Scarbrough, and Jason and Therese Belkin, just to name a few. “The best part is that every morsel of food and sip of wine and tequila have been generously donated by all of our gracious chefs and vendors,” said Schaffran.

The Feast is not the only event to benefit the SWCRF this weekend. The fun kicks off Friday with a three-day trunk show at the home of Maria and Kenneth Fishel featuring Blumarine clothing and accessories, a line of clothing by Bibhu Mohapatara, which sells exclusively at Bergdorf Goodman’s, Jennifer Argenti’s clothing line Charlotte Brody, and Irene Lummertz exclusive fine jewelry line from Palm Beach. The hours of the shows are Friday from 11 AM to 5 PM, Saturday from 10 AM to 4 PM and Sunday from 11 AM to 3 PM.

The Hamptons Happening Feast takes place from 6:30 to 9:30 PM on Saturday evening at the home of Maria and Kenneth Fishel in Bridgehampton. Tickets are $300 and $175 for those under 30. For ticket information call Linda B. Shapiro at 631-725-2023 or email [email protected].

By Jessica MackinDon’t forget to drink your juice,

baby. New this summer is Juice Baby, a mobile fresh pressed juice and smoothie truck that has set up shop at the Hayground School in Bridgehampton.

Juice Baby uses fresh fruits and vegetables in all of their juices, with no additives. Juices are made to order, so customers can get their greens super fresh.

Founder Victoria Smith targets popular workout and fitness studios to provide juice or smoothies as a perfect complement to a successful workout. Juice Baby is conveniently located next to The Barn at 264 Butter Lane, home of popular Hamptons fitness studios SoulCycle, Physique 57, and Personal Best. Juice Baby also receives a lot of traffic from the Haygound School's camp and the Hayground's farmers market, which takes place on Fridays.

I stopped by this week to check it out. It was great meeting Victoria as she explained her process and love of fresh juice. I tried the popular “Renegade Lemonade”

Drink Your Juice, Babywith local kale, local spinach, celery, local apple, lemon and ginger. My husband, Joe Cipro, tried the “Sweet N’ Dreamy” made with natural peanut butter, cocoa powder, banana, organic agave and almond milk. Other options include the “Skinny Green Bitch” juice made with local kale, local spinach, celery, local cucumber and pear and the “Watermelon Freeze” smoothie with watermelon, cucumber and lemon juice.

We then did shots of ginger, which were extremely powerful and potent. The pineapple chaser definitely helped the burn. The energy boost it gave me for the rest of the day was definitely worth the initial shock.

Juice Baby believes seasonal produce makes the most healthy juices, so check out what's new each week. Juice Baby is open daily from 7:30 AM. You can also order your juice in advance for easy pick up.

Our nightly Prix Fixe Special from 5-7pmTwo Tex-Mex Dinners for $25

Choice of any 2 entrees from our Southo’the Border Menu, plus a Nacho appetizer.

Ingredients (serves 4)

1 ½ lbs salmon fillet¾ c light brown sugar

1 orange juiced and zest removed2 tbsp Kosher salt

2 tbsp minced ginger2 c wild rice

1 white onion diced1 handful chives

1 handful micro greens½ c dried cranberries

Orange And Ginger Cured Salmon With Wild rice

3 tbsp butter1 tbsp olive oil

½ c toasted walnutssalt and pepper to taste

Method

For this recipe it is ideal to cure the salmon overnight, or for at least four or five hours. Begin by portioning the fish into 6 oz steaks. Heat the brown sugar, kosher salt, orange juice, ginger, and orange

zest over medium heat for about five minutes. Let the liquid sit and cool before pouring it generously over the salmon. Cover in plastic wrap and put in the fridge overnight.

The following day, star t by sautéing the diced white onion in olive oil until it’s translucent. Add a tbsp of butter and the rice. Stir until it is coated by the oil and butter.

Add two quarts of water. Cover and cook on medium high for about 35 minutes, or until the rice is cooked. While the rice cooks remove the salmon from its curing liquid and pat dry the skin side.

Heat a large non-stick sauté pan over medium low heat and add a tbsp of olive oil. Place the salmon skin side down in the pan. Lightly press the fish against the pan when it puffs up. Allow the fish to cook on the skin for about five minutes at the medium-low temperature, so to crisp the skin.

When the rice is close to finished, you are about ready to assemble your plate. Place the fish in a 400 degree oven to cook for another five minutes. When the rice is cooked, fork in two tbsp of butter, along with the toasted nuts and the cranberries. Season to your liking and cover to keep warm until the salmon has finished cooking.

To plate, simply place the salmon over a nice portion of the rice and garnish with some chives and micro-greens.
