Preparing the omelette Making the FIT5 salad

Crack 3 eggs into a bowl and add a splash of milk. Whisk using the fork.

If using a block of cheese, use a grater to grate a handful into a bowl.

Rip a handful of spinach by hand and add to your egg mix.

Put the frying pan on to the heat on your hob and add 1 tablespoon of oil.

Pour your egg mix into frying pan once hot and stir gently using the fork. Allow the outside of the omelette to cook.

Flake the smoked fish onto the top of the omelette and top with a handful of grated cheese.

Place into an oven for 5-7 minutes or until the omelette has begun to rise and the cheese is nicely melted.

Whilst waiting for the omelette in the oven, prepare your FIT5 Salad. Add as little, or as much, of the following as you like: Sliced red onion, sliced cucumber, sliced pepper, chunks of tomato. You can use any of your favourite salad ingredients and mix with the baby leaves.

Carefully remove the omelette from the oven, using an oven glove, and allow to stand before carefully taking out of the pan and placing onto a plate. Serve and enjoy!
