ROMPEnDO O CERCO…Breaking the siege…

Escolhi a expressão ‘rompendo o cerco’ para título deste editorial porque, apesar de não ser nova nem original, é bem ilustrativa do que pretendo transmitir aos leitores da nossa Agenda. Pese embora tal expressão possa ter múltiplos significados e ser aplicada em outras tantas áreas da ação municipal, o que com o seu uso agora se pretende é caracterizar o estabelecimento de políticas públicas municipais que conduzam a uma reflexão estratégica e que suscitem e sejam promotoras tanto de propostas de ação, como da exploração de alternativas em face aos contextos em que vivemos.É o que ocorre com a área do Turismo, eixo essencial da nossa economia e empregabilidade. Ainda recentemente, dois membros do Governo estiveram entre nós com o objetivo de melhor conhecerem a experiência e o sucesso da nossa aposta no ‘Turismo Criativo’, passo decisivo no sentido da diferenciação, pois que bem começa a ficar patente a necessidade de encontrar outros caminhos que não passem apenas pela oferta de um turismo de massas.Esta nova geração de Turismo, enfocado na participação dos turistas em atividades criativas com a população local, deu já origem à nossa marca de ‘Loulé Criativo’, envolvendo um conjunto de artesãos e

I chose the term ‘breaking the siege’ as the title of this editorial because, although not new or original, it is quite illustrative of what I intend to convey to readers regarding our Agenda. Although this expression may have multiple meanings and be applied in many other areas of municipal action, the use now intended is the characterization of the establishing of municipal public policies that lead to a strategic reflection that raise and promote both action plans and the exploration of alternatives given the contexts in which we live.This is what is happening in the tourism industry, an essential axis of our economy and employability. Recently, two members of the Government came to see us with the purpose of becoming better acquainted with the experience and success of our investment on ‘Creative Tourism’, a decisive step towards differentiation, which made it clear that we need to find other alternatives to the offer of mass tourism.This new generation of Tourism, focusing on tourists’ participation in creative activities with the locals, gave rise to our brand ‘Creative Loulé’, involving a set of artisans and craftsmen who become lost in time and whose traditions are now recovered through a set of initiatives that seek to add value,

sabedores de ofícios que se perdem no tempo e cujas tradições se recuperam agora através de um conjunto de iniciativas que as pretendem valorizar, conduzindo os turistas que nos procuram à sua experimentação e à experiencialização.Trata-se, pois, de utilizar este novo ativo turístico, em associação com outros segmentos turísticos – o patrimonial, o gastronómico, o dos congressos –, fundindo o material com o imaterial, numa complementaridade que só enriquece a nossa oferta turística enquanto destino de qualidade que cada vez mais nos caracteriza, ao mesmo tempo que contribui para a promoção da autoestima da nossa população.E como já vem sendo hábito, faço no final do editorial uma chamada de atenção para os principais eventos culturais, religiosos, desportivos e recreativos que o Concelho irá presenciar. neste mês de abril, destaco claramente a Festa Grande da nossa Padroeira, a nossa Senhora da Piedade, que ocorrerá no dia 10. Outros acontecimentos, contudo, são merecedores de realce: a realização do XV Triatlo de Quarteira, nos próximos dias 2 e 3 de abril, prova já incluída nos calendários nacional e internacional; um conjunto de manifestações culturais inseridas na Programação do Cineteatro, das quais saliento o Festival de Tunas Académicas; a presença do músico Mário Laginha, nas comemorações do Dia Internacional de Jazz; e, no dia 15 de abril, a peça de teatro ‘Plaza Suite’, protagonizada pela dupla de atores Alexandra Lencastre e Diogo Infante.Perante tão interessantes e diversificadas propostas não posso deixar ainda de endereçar os meus parabéns à Casa da Cultura de Loulé pela passagem de mais um aniversário (e já lá vão 37…), e que tem no dia 23, no Cine-Teatro Louletano, o seu momento comemorativo.

leading the tourists who seek us to trying and experiencing them.It is all about using this new tourist asset, in association with other tourist segments – of heritage, gastronomy, congresses –, merging the material with the immaterial, in a complementarity that enriches our tourism as the quality destination that increasingly characterizes us, while contributing to the promotion of our population’s self-esteem.And as I usually do at the end of each editorial, I shall make a reminder of the major cultural, religious, recreational and sports events that the Municipality will hold. For this month of April, I clearly highlight the Great Festivities of our Patroness, our Lady of Mercy, which will take place on the 10th.There are, however, other events worth highlighting: the completion of the 15th Triathlon of Quarteira, on the 2nd and 3rd of April, a race already included in national and international calendars; a set of cultural manifestations included in the Programme of the Cineteatro, with special emphasis on the Academic Music Groups Festival; the presence of musician Mário Laginha, in commemoration of the International Jazz Day; and, on the 15th of April, the play ‘ Plaza Suite ‘, featuring the duo of actors Alexandra Lencastre and Diogo Infante.Given such interesting and diverse proposals, I must congratulate Loulé’s Casa da Cultura (House of Culture) for yet another birthday (now on its 37th), which will be celebrated on the 23rd at the Cine-Teatro.


TEMA DE CAPACOVeR THeMe

Diversas manifestações pascais realizam-se no Algarve, celebrando a alegria pela ressurreição de Jesus. no entanto, tem particular destaque a festa em Honra de nossa Senhora da Piedade – Mãe Soberana para os louletanos, festa que também se inicia no Domingo de Páscoa, designada como “Festa Pequena da Mãe Soberana”. As festividades da Mãe Soberana constituem uma tradição que data do século XVI.A imagem de nossa Senhora, Padroeira desta cidade, desce do cerro onde se encontra o seu Santuário, seguindo em procissão em direção à Igreja de S. Francisco. A descida da Santa obedece a uma marcha, com os Homens do Andor a conduzirem a pesada estrutura até ao templo, ao som da Marcha da Mãe Soberana, interpretada pela Banda Filarmónica Artistas de Minerva. Durante quinze dias permanecerá nesse local, onde se realizarão diversas atividades religiosas. Depois, terá lugar o momento alto das festividades: a Festa Grande. nela se faz o regresso da Padroeira ao Santuário. Após a saída da Igreja de S. Francisco, a procissão percorre as ruas do centro de Loulé, ao ritmo de marchas. no espaço circundante ao monumento erguido em memória do Eng.º Duarte Pacheco, tem lugar a missa campal.Depois desce até à Igreja de S. Francisco, seguindo-se o caminho de volta ao Santuário. Este cenário imenso da religiosidade louletana, de características tão próprias, como únicas, só pode ser sentido na alma de cada crente, quando vivido. Uma vivência feita de fervor religioso e de testemunho cristão, cuja explicação reside unicamente na essência dogmática da própria fé. Esta festa atrai milhares de peregrinos e visitantes, sendo um dos principais cartazes turísticos do Concelho de Loulé, uma das mais enraizadas tradições louletanas, bem como a maior manifestação religiosa a Sul de Fátima.

“MÃE SOBERAnA”“sOVereign MOther”

Several Easter events are held in the Algarve to celebrate the joy of the resurrection of Jesus. However, we give special emphasis on the feast in honour of nossa Senhora da Piedade - Sovereign Mother for the “louletanos”, which starts on Easter Sunday, described as “Sovereign Mother Small Feast”. The Sovereign Mother’s festivities are a tradition dating from the 16th century.The image of nossa Senhora da Piedade, the Patroness of the city, is brought down from her hilltop Sanctuary, following in procession into the S. Francisco Church. The descent of the Saint follows a march, with the “Homens do Andor” carrying the heavy structure to the temple, at the sound of the Sovereign Mother March, played by the Banda Filarmónica Artistas de Minerva. The Saint remains in the temple for fifteen days, where various religious activities will happen.Then, the high moment of the festivities will take place: the Great Feast. The Patroness returns to the Sanctuary. After leaving the S. Francisco Church, the procession goes through the streets in the middle of Loulé, walking with the sound of the marches. The outdoor mass takes place at the area surrounding the building erected in honour of Eng. Duarte Pacheco.Then the procession goes down to the Espírito Santo Convent following the way back to the Sanctuary.This vast scenery of religiosity in Loulé, with own and unique characteristics, can only be felt in the soul of every believer, when it is lived. An experience made of religious fervour and Christian evidence, whose explanation lives solely in the dogmatic essence of their faith. This festival attracts thousands of pilgrims and visitors, being one of the main touristic events in this municipality and one of the most rooted traditions in Loulé, as well as the largest religious manifestation south of Fátima.

wALkInG STORIESThe Municipal Library of Loulé has this project, aiming to promote the books and reading, the use of services that Bibliomóvel provides, decreasing the distance between the Library and the schools and kindergartens in the countryside of the Municipality and also to enable the enjoyment, by these children, in similar activities carried out at the Main Library.

FOTOGRAFIA DE VASCO CÉLIO, LUíS DA CRUz E FERnAnDO MEnDESA exposição fotográfica Mãe Soberana de um Povo é composta por um conjunto de imagens da autoria de três fotógrafos: Fernando Mendes (Setúbal, n. 1957), Luís Henrique da Cruz (Loulé, n. 1968) e Vasco Célio (Lubango, Angola, n. 1975). Esta exposição pretende criar um diálogo entre o trabalho individual destes fotógrafos, apresentando um conjunto de dezassete fotografias da Festa da Mãe Soberana realizadas ao longo das últimas três décadas. Para tal, privilegiou-se a face mais visível deste multi-secular culto mariano, isto é, a chamada «Festa Grande» em honra de nossa Senhora da Piedade. Deste modo, propomos-vos uma abordagem diferente, por intimista e eclética, desse Dia Maior dos Louletanos. Retrata-se o antes, o durante e o depois da Festa. numa tentativa de documentar alguns dos seus aspectos menos visíveis e mais desconhecidos do grande público.

PHOTOGRAPHy EXHIBITIOn By VASCO DE CÉLIO, LUíS DA CRUz AnD FERnAnDO MEnDESThe Sovereign Mother of a People photography exhibition is composed of a set of images by three photographers: Fernando Mendes (Setúbal, n. 1957), Luís Henrique da Cruz (Loulé, n. 1968) and Vasco Célio (Lubango, Angola, n. 1975).This exhibition aims to create a dialogue between these photographers’ individual work, presenting a set of seventeen photographs of the Feast of Sovereign Mother, held over the past three decades. To this end, we focused on the most visible face of this Marian devotion for centuries, that is, the so-called “Great Feast” in honour of nossa Senhora da Piedade. Thus, we propose to you a different approach, intimate and eclectic, this Greater Day in Loulé. we show the before, during and after Feast. It is an attempt to document some of the less visible aspects and more unknown to the general public.

A Vida Humana é Frágil, assim como as criaturas que Pinto da Silva nos apresenta na sua exposição desde que nascemos, quando espreitamos os primeiros raios de luz e precisamos de proteção, até à nossa partida que nunca se sabe quando acontece. Estamos em contrarrelógio em contagem decrescente, numa vida vertiginosa entre casa e trabalho. Sobra pouco para a família para os Amigos. não se chega a saborear verdadeiramente os prazeres da vida. Resta a Solidão, a tristeza e o Abandono.Pinto da Silva não nos quer submeter a uma perspetiva melodramática ou fatalista mas antes a sua perspetiva de uma sociedade apática, competitiva, disfarçada e desigual. Mas as pessoas também são solidárias e amigas especialmente de aperto ou dificuldades.Somos seres complexos e surpreendentes, tal como esta exposição.

Human Life is fragile just like the creatures presented by Pinto da Silva in this exhibit, from the moment we are born, when taking our first peek at daylight and feeling the need for protection, until our departure, undated and unannounced.we live in a rush against time… a countdown … a vertiginous race between home and work. Time for family and friends is scarce. Actually, the true pleasures in life are never truly savoured. Ultimately, what is left is Solitude, Sorrow and Abandonment.It is not in Pinto da Silva’s mind to submit us a bleak or fatalistic perspective, instead he leads us through his own concept of an apathetic society, competitive, misleading and unequal…. But where people can also become sympathetic and kind, particularly in moments of great tension and difficulty…Humans are Surprising and Complex Beings and so is this exhibition.

Em todas as famílias, existe sempre alguém que, pelos seus comportamentos invulgares, se distancia das atitudes generalizadas do bom senso.Violando o bom nome do clã, conquistado através de gerações, os traços da sua personalidade vislumbram-se apenas em algum ente querido já falecido, cujo rosto aprendemos a conhecer pelos álbuns escondidos no sótão das nossas memórias.Fotografias e informações deliciam-nos em reuniões familiares e oferecem-nos a desejada tranquilidade, quando se descobre a quem saiu o estranho e inoportuno intruso.Ficam, então, justificados os incómodos provocados por essas criaturas insólitas e aliviadas as consciências. Porque tais incómodos têm a sua origem num qualquer ADn longínquo, que não lhes permitiu escolher a sua maneira de ser.Joaquim Manuel Pinto Serra – Médico psiquiatra aposentado da carreira hospitalar (chefe de serviço), reside em Lisboa, depois de ter vivido em Coimbra quase sessenta anos.Atualmente exerce a atividade clínica como profissional liberal no Hospital de Loulé, sua terra de origem.

In all families, there is always someone who, by his unusual behaviour, distances himself from the general attitudes of common sense.Breaking the good name of the clan, achieved through generations, the traits of his personality verified only in a loved one who passed away, whose face we know by the photo albums hidden in the attic of our memories.The photos and information delight us at family gatherings and offer us the desired quietness, when we discover with whom the strange and unwelcome intruder is similar.Then, the damages caused by these unusual creatures are justified and the consciences are relieved. Due to such discomforts have their origins in any distant DnA, they could not choose their way of being.Joaquim Manuel Pinto Serra - retired Psychiatrist in the hospital career (Head of Service) lives in Lisbon, after having lived in Coimbra for nearly sixty years.Currently, he works as a liberal professional at Hospital of Loulé, his homeland.

O Dia Internacional do Jazz será celebrado com a atuação do trio de Mário Laginha com Bernardo Moreira e Alexandre Frazão, e com o convidado João Frade. Todos estes músicos são ícones do panorama jazzístico e presenças habituais ao longo das várias edições do Festival Internacional de Jazz de Loulé. Juntam-se agora para um alinhamento especial que explora diálogos e pontes entre os universos, estilos e influências musicais de cada um deles.A “casa” de Mário Laginha é o jazz, mas recusa encerrar-se lá dentro. Para Mário Laginha fazer música é sobretudo um ato de partilha. Do trio com o contrabaixista Bernardo Moreira e o baterista Alexandre Frazão, resultaram dois discos: Espaço (2007) e Mongrel (2010). The International Jazz Day is celebrated with the performance of Mário Laginha Trio with Bernardo Moreira and Alexandre Frazão, and with the guest João Frade. All these musicians are icons in the jazz and regular attendance on the various editions of the International Festival of Jazz of Loulé. They join now for a special alignment exploring the dialogue and connections between worlds, styles and musical influences.The Mário Laginha’s “home” is the jazz, but he refuses to lock in there. According with Mário Laginha, making music is above all an act of sharing. The trio with the bassist Bernardo Moreira and the drummer Alexandre Frazão, resulted in two albums: Space (2007) and Mongrel (2010). The Mário Laginha’s style, guided by a recognized creativity, rhythmic solidity and harmonic and melodic richness, is today a reference to countless musicians, with a career longer than 20 years.

Depois de, no Domingo de Páscoa se ter celebrado a Festa Pequena, a Santa regressa ao seu altar numa tradição que movimenta milhares de fiéis.A escalada do caminho que dá acesso ao altar da nossa Senhora da Piedade é um documento espantoso da fé cristã nesta terra. Ao esforço gigantesco dos homens que transportam a Virgem, alia-se a força espiritual dos muitos fieis que, em vivas à nossa Senhora, em passo vivo e na cadência musicada dos homens da banda, vão “empurrando”, no calor da fé e calçada acima, o pesado andor da padroeira.Para além do programa litúrgico, o fogo-de-artifício é o culminar de uma Festa que tem também uma forte componente cultural e turística.

A VIDA, O TRABALHO E A LUTA DOS SAPATEIROS DE LOULÉ Tendo por base de investigação o acervo do Arquivo do Sindicato nacional dos Sapateiros do Distrito de Faro, cuja sede foi precisamente em Loulé, depositado no seu Arquivo Municipal, pretendemos traçar e analisar a história desta importante classe operária que encontra as suas raízes nesta localidade desde pelo menos o séc. XIV, em fontes escritas.O nosso estudo abarca essencialmente o período que medeia entre 1890 até 1945.Percorreremos o seu quotidiano, o seu saber-fazer, a seu sistema de produção de calçado e a sua luta e prol da melhoria das suas condições de trabalho. Portugal.Joaquim Manuel Vieira Rodrigues é licenciado em História pela Faculdade de Letras de Lisboa e professor efetivo do Ensino Secundário.Investigador do IHC.É Mestre em História Contemporânea, tendo apresentado a sua tese sobre a Indústria de Conservas de Peixe no Algarve (1865-1945). Tem elaborado estudos e conferências sobre temas principalmente relacionados com o Algarve. É doutorado com a tese O Algarve e a Grande Guerra A Questão das Subsistências (1914-1918).

THE LOULÉ SHOEMAkERS’ LIFE, wORk AnD STRUGGLEBased on researching the collection from the Archive of national Syndicate of Shoemakers in the District of Faro, with headquarters exactly in Loulé, put at the Municipal Archive, we intend to outline and analyze this important working class’ history who finds the roots in this location since at least the 14th century, in written documents.Our study covers mainly the period from1890 to 1945. we will refer their everyday life, their know-how, their footwear production system and their struggle and support for the improvement of their working conditions in Portugal.Joaquim Manuel Vieira Rodrigues is graduated in History from the Faculty of Letters of Lisbon and High School effective teacher.He is a Researcher at IHC.Joaquim Rodrigues is Master in Contemporary History, having presented his thesis on the Fish Cannery in the Algarve (1865-1945). He has elaborated studies and conferences on topics related mainly with the Algarve. He is doctorate, with the thesis The Algarve and the Great war The Issue of livelihoods (1914-1918).

QUARTEIRA RECEBE TAçADA EUROPA DE TRIATLO“Quarteira volta a receber uma das principais provas de Triatlo em Portugal, nos dias 2 e 3 de Abril. O XV Triatlo Prof. Carlos Gravata – Cidade de Quarteira 2016 insere-se na Taça da Europa de Elites, Taça da Europa de Juniores e Campeonato nacional de Clubes.à semelhança de edições anteriores, o evento conta com cerca de três centenas de triatletas estrangeiros (provenientes de 35 países), nomeadamente europeus, mas também a presença dos melhores triatletas nacionais.Os participantes começam a prova com o percurso de natação, segue-se o ciclismo e finalmente o atletismo. no sábado, dia 2, decorre a Taça da Europa de Elites, com a prova feminina a arrancar às 13h45 e a prova masculina às 16h30. no domingo, dia 3, é a vez dos juniores femininos (8h45) e masculinos (10h00) entrarem em ação na Taça da Europa. às 11h30 decorre o Campeonato nacional de Clubes que contará com a presença da nata do triatlo português.Por outro lado, pretende prestar homenagem ao principal promotor da prova, o Professor Carlos Gravata, que foi o grande mentor, organizador e impulsionador deste Triatlo.

QUARTEIRA HOSTS THE TRIATHLOn EUROPEAn CUPOn 2nd and 3rd April, “Quarteira hosts again one of the main Triathlon races in Portugal. The 15th Triathlon Prof. Carlos Gravata - City of Quarteira 2016 is part of the Elites European Cup, Junior European Cup and Clubs national Championship.As in previous editions, the event has about three hundred foreign triathletes (from 35 countries), particularly from Europe, but also the best national triathletes.The athletes start the race with the swimming route, followed by the cycling and finally the athletics. On Saturday, 2nd April, the Elites European Cup happens, with the women’s race that starts at 01:45 pm and the men’s race starts at 04:30 pm. On Sunday, 3rd April, the junior women (08:45 am) and junior men (10:00 am) will race regarding the European Cup. At 11:30 am the Clubs national Championship takes place, which will have the best of the Portuguese triathlon.On the other hand, it intends to honour the main promoter of the race, Professor Carlos Gravata, who was the great mentor, organizer and promoter of this Triathlon.

LOULÉ RECEBE AS “24 HORAS STROnG RUn”A Vertical navis Associação Portuguesa para a promoção do Exercício Físico, em conjunto com a Camara Municipal de Loulé, leva a cabo a 1ª Edição das “24 Horas Strong Run - Team Challenge”.A prova realizar-se-á dia 16 de Abril de 2016, em Loulé, pelas 16h00, com uma duração de 24 horas.O desafio é realizado em equipa, constituída por 4 elementos cada, que poderá ser feminina, masculina ou mista.O circuito de aproximadamente 6 km, em estrada e trilho, englobando a zona histórica da cidade de Loulé e a zona do Cerro de Santa Luzia, o objetivo é efetuar o maior número de voltas ao circuito durante o tempo da prova.no final, serão atribuídos prémios coletivos à 1ª, 2ª, 3ª, 4ª e 5ª equipa classificada, e ainda à volta mais rápida.A prova está aberta a uma caminhada solidária, em que o valor da receita reverterá na totalidade a favor de duas associações de caracter social do concelho de Loulé.

LOULÉ HOSTS THE “24 HOURS STROnG RUn”Vertical navis Portuguese Association for the Promotion of Physical Exercise and Câmara Municipal de Loulé, organize the 1st Edition of “24 Strong Run - Team Challenge”.The running will be held on 16th April, 2016, in Loulé, at 04:00 pm, with duration of 24 hours.The challenge is done in team, consisting of 4 elements each, which can be female, male or mixed.The running path has about 6 km, road and rail, including the historic centre of Loulé and the area of Cerro de Santa Luzia and the goal is to run as many rounds you can in the path during the time of the trial.At the end, the collective prizes will be awarded to the 1st, 2nd, 3rd, 4th and 5th ranked team, and also the fastest round.The trial is open to a solidarity walk and the amount of the revenue will be given entirely to two social associations in the municipality of Loulé.

O Quarteira Sport Clube tem como objetivos a promoção cultural desportiva e recreativa dos seus associados e servir a freguesia de Quarteira nas suas diferentes modalidades.nos primeiros anos da sua existência o Quarteira Sport Clube praticou Andebol onde participou em diversos jogos amigáveis e torneios. na época de 1990/1991, o Quarteira Sport Clube, que já tinha nas suas fileiras uma equipa de Voleibol, inscreveu pela primeira vez uma equipa de futebol masculino no Campeonato Distrital de Seniores – II Divisão tendo garantido no ano de estreia um honroso terceiro lugar que permitiu á equipa ascender ao Campeonato Distrital de Seniores – I Divisão.no ano de 1992 a equipa de voleibol foi campeã do Torneio de Inatel, no entanto, o clube algum tempo depois optaria por desistir dessa modalidade. Em determinada altura o clube iniciou um novo capítulo da sua história desportiva com a criação de uma equipa de Futebol Feminino obtendo no seu ano de estreia o título de campeões.na época de 2007/2008 o Quarteira Sport Clube obteve o seu primeiro título no futebol sénior masculino, sagrando-se, campeão distrital da II Divisão, ascendendo, uma vez mais ao campeonato Distrital de Seniores I Divisão onde se tem mantido até à presente data.na época de 2010/2011 o Quarteira Sport Clube foi finalista da Taça do Algarve.no futuro, o clube quer construir uma equipa só com jogadores do Concelho de Loulé.

The Quarteira Sport Clube was founded on 21st november, 1978, to promote the sport and recreational culture of its members and to offer the parish of Quarteira its different sports. In the early years of its existence, the Quarteira Sport Clube played Handball and participated in several friendly matches and tournaments.In 1990/1991, the Quarteira Sport Clube, which already had one volleyball team, registered for the first time a men’s soccer team in the Senior District Championship – 2nd Division that secured, in the debut year, a creditable third place that allowed the team to rise in the Seniors District Championship – 1st Division.In 1992 the volleyball team won the Inatel Tournament, however, the club chose to give up this sport later.At some point, the club started a new chapter in its sporting history with the creation of a women’s Soccer team, getting the champions title in its debut year.In 2007/2008, the Quarteira Sport Clube got its first title in the men’s senior soccer, and was the district champion of the 2nd Division, rising again in the Senior District Championship of the 1st Division, where it has remained until today.In 2010/2011, the Quarteira Sport Clube was finalist in the Algarve Cup.In the future, the club wants to constitute a team only with players from the Municipality of Loulé.


GASTROnOMIAGASTRONOMY

InGREDIEnTES• 1 Galinha • 100 g de toucinho • 100 g de linguiça (chouriço de carne) • 2 Cebolas • 2 Colheres de sopa de azeite • 1 Colher de sopa de banha • 1 Colher de sopa de manteiga • 2 Dentes de alho • 1 Molho de salsa • 1 dl de vinho branco • Arroz

PREPARAçÃO:Coze-se a galinha inteira ou cortada em 4 partes, em água com o toucinho, a linguiça, 1 cebola e um ramo de salsa. Escorre-se. numa frigideira ou num tacho faz-se um refogado pouco apurado com a cebola que resta picada, os alhos em rodelas e as gorduras; junta-se também um ramo de salsa. Introduz-se a galinha e deixa-se alourar toda por igual, virando-a. A meio da cozedura, rega-se com o vinho branco. A galinha é acompanhada com arroz seco feito com o caldo em que esta cozeu e é enfeitado com o toucinho e o chouriço em rodelas. Deste caldo de galinha também se faz a sopa a que se pode apenas juntar massinhas e hortelã. A galinha cerejada come-se quente ou fria.Também se dá o nome de galinha cerejada a uma galinha que foi cozida como se disse e que se alourou depois enterrada em arroz e bem barrada com manteiga.

GALInHA CEREJADAChiCken “CereJada”

InGREDIEnTS:• 1 Chicken• 100g pork fat• 100 g smoked pork sausage• 2 Onions• 2 tablespoons of olive oil• 1 tablespoon of lard• 1 tablespoon of butter• 2 Cloves of garlic • 1 Bunch of parsley• 1 dl white wine• Rice

PREPARATIOn: Boil a whole chicken or cut into 4 parts, in water with the pork fat, the smoked pork sausage, 1 onion and the parsley. Drain the broth.In a frying pan or a pan, sauté a little bit the remaining minced onion, the garlic into slices and the fats; also add a bunch of parsley. Add the chicken and let it fry equally, turning it over. Halfway through cooking, sprinkle it with the white wine.The chicken is accompanied with the rice cooked in the broth in which it was boiled and decorated with pork fat and the smoked pork sausage into slices. with this chicken broth you can also make the soup, only add small pasta and mint.The chicken “cerejada” is eaten hot or cold.we also give the name chicken “cerejada” to a chicken that was boiled as stated, then it was fried, placed in rice and well spread with butter.

Querença e Salir contam, no seu espaço geo--morfológico, com duas criações da natureza, discretas mas soberbas pelas suas respeitáveis dimensões e características: Os “Cerros dos negros”, assim apelidados, existem em cada uma das aldeias. Pouco conhecidos no que respeita às origens do nome, o “Ruralidades” visitou-os, começando por Querença que, pelos tortuosos trilhos que levam ao cimo, a 406 metros de altitude, nos oferece espantosa vista para o litoral. Ao longo das encostas, é farta a vegetação típica do barrocal, entre silvados e o canavial. na Fauna, rica, destacam-se entre outros, a famosa lontra. à exiguidade de fontes fidedignas quanto à origem do nome, restou--nos o relato de uma popular e residente que nos falou de “uma batalha que terá acontecido na zona, de que resultou a libertação de escravos negros e na apreensão de outros”, usados depois em vários trabalhos. Já do Cerro de Salir não foi possível tomar as imensas vistas por dificuldades maiores de acesso, embora a sua morfologia seja idêntica à da vizinha Querença. Quanto às origens possíveis da sua denominação, e segundo a Monografia do Concelho de Loulé, de Ataíde de Oliveira, (4ª. edição), “o seu topo, quando envolto em densas nuvens, assume tons escuros e semelhante ao perfil de um negro, bem como a tradição segundo a qual um rico proprietário usara escravos negros em trabalhos de apanha de lenha. Estejamos ou não perante uma origem toponímica africana, importa realçar que a visita a estes cerros é uma opção que vale a pena.

Querença and Salir have, in their geomorphologic area, two creations of nature, which are discrete but superb for their respectable dimensions and characteristics: Called the “Cerros dos negros”, they exist in each of the villages. The origin of the name is not very known, so “Rural Affairs” visited them, starting in Querença that, with the difficult paths that lead us to the top, 406 meters above the sea level, offers us a breathtaking view to the coastline. Along the hillsides, its typical vegetation of the barrocal region is plentiful, between bushes and the sugar cane plantation. In the rich fauna, the famous otter, among others, stands out. Due to the scarcity of reliable sources in relation to the origin of the name, we have only a story from a popular and resident who told us about “a battle that had happened in the area, which resulted in the liberation of black slaves and the arrest of others,” who were used then in several labours. On the Cerro of Salir, it was not possible to take the immense views because of the difficult access, although its morphology is identical to the neighbour Querença. In relation to the possible origins of its name and according with the Monograph of the Municipality of Loulé, by Oliveira de Ataíde, (4th Edition), “its top, when surrounded by dense clouds, has the dark shades and similar to the black man’s portrait, as well as the tradition that a wealthy owner had used black slaves in the work of gathering firewood. whether we are or we are not before an African name origin, it is important to note that visiting these hills is an option that is worthwhile to consider.
