METHODFor the Fudge Centre:• Preheat oven to 175oC• Combine the butter, brown sugar and mix until pale• Add eggs one at a time, mixing well after each addition.• Sift the flour and cocoa, gently mix into butter mixture.• Add melted chocolate and scrape the sides, stir in finely chopped chocolate.• Spread the mixture onto a tray lined with baking paper. • Bake for 15 minutes until outside dry, but inside soft.• Leave to cool slightly and then place in freezer for 30 minutes.• Using an Easter themed cookie cutter, cut out character shapes and place on top of each other.• Place in the freezer until later.
For the Lemon Cake:• Cream the butter, sugar, lemon zest and pinch of salt until light and pale.• Add the eggs one at a time, mixing well. • Sift together flour and baking powder, mixing into butter mixture.• Mix chocolate chunks with flour and mix through the cake batter.
To put the cake together:• Grease a 19cm cake tin and place the chocolate characters standing up in the cake tin.• Gently place lemon cake batter around the fudge cake. • Bake at 180oC for 30 minutes.• Mix together lemon juice and icing sugar.
Makes: 1 cake • Prep time: 30 minutes, plus freezing • Cook time: 30 minutes
INGREDIENTSChocolate Fudge Centre:• 115g Butter, unsalted at room temperature• 150g Dark brown sugar• 3 Eggs• 1tbsp Cocoa powder• 110g Plain flour• 250g Lindt Excellence 70% Cocoa, melted and cooled
• 40g Lindt Excellence 70% Cocoa, finely chopped
Lemon Cake:• 180g Butter, unsalted• 180g Caster sugar• 2each Lemons, zest only• Pinch Salt• 4 Eggs• 180g Plain flour
• 1 1/2tsp Baking powder• 80g Lindt Excellence 70% Cocoa, chopped• Little Plain flour
Syrup:80ml Lemon juice80g Icing sugar
Chocolate Ganache to top

You will need• Yellow paper cups• Shredded tissue paper• Tape• PVA glue

Twist the pipe cleaner to create the chick feet. Make two of these.
Cut a small piece of red craft paper into a triangle and fold it in half. Fold the long edges of the triangle over to create a square for the beak.
Add crinkle paper to fill the cup.
Fill the cup with Easter chocolate treats.
