SWEET CORN (Zea mays)American crop, one of the mostremarkable cultivated plants, about7,000 years ago produced by cross-ing two grasses spread after 1492 tothe rest of the world. Plant whennights are above 50°F in rich, wellfertilized soil, in at least three rowsfor good pollination. Keepmulched and add fertilizer once amonth during the growing season.

——Aztec Black. Probably the worldmost unusual sweet corn, withblack seeds when dried, andpicked for corn-on-the-con whenwhite, or allowed to mature tomake corn meal. Allegedly grow bythe Aztecs 500-600 years ago,plants 6 feet tall, with 7" ears with12 rows of kernels. PKT. (100 s) $5

CORN CANCHA INCAN TYPESAncient Peruvian corns for makingcorn nuts or use for hominy, grownuntil fully mature. Dried kernelsheated in a small amount of oil in apan, cover and shake frequentlyuntil popped or golden brown. Canalso be microwaved or cooked forhominy by boiling.

Plants huge, up to 16 feet tall,contest winners. Brace stalks, bankwith earth a foot high--roots sproutat nodes to anchor plants.

——Maiz Morado. Plants 14-16 feettall, perhaps the tallest corn variety inthe world, and a good potential forcorn growing contests.

ROASTING or TORTILLA CORN(Zea mays) Ancient corns from theSouthwest, used as corn-on-the-cobor when mature, ground into flour.

Grow like sweet corn and fertil-ize during the growing season, andmulch to control weeds. Plantsproduce a woody taproot and cangrow in desert sand dunes without anyirrigation, for the last 4,000 years.Unique drought resistance, grow-ing only 18-24" tall when stressed,but will still produce ears. Has thelongest storage-life of any cornseeds—up to ten years.

POPCORN (Zea mays)Ancient corn variety that datesback 5,600 years. Kernels burstupon heating, an especially usefulinvention because grains are ediblewithout grinding. Fun to grow,plant like sweet corn, and allowears to dry before harvesting. Plantaway from other corns to avoidcross pollination. Unpopped pop-corn as a stored food product, cankeep indefinitely, if stored properly.

CUCUMBER (Cucumis sativus)Annual climbing vine native toIndia and Southern Asia whoseyoung fruits are eaten raw or pick-led for 3,000 years. HUAUZONTLI or Aztec RedSpinach (Chenopodium berlandieri)Plants 3-6 feet tall. Leaves and stemseaten as cooked greens, immatureseed stalks (shown below) are friedwith eggs. Mature seeds eaten likeits cousin quinoa, and ground intoflour to make tortillas, etc. Staplegrain in North America before theinvention of corn, with 33% pro-tein, higher than corn or wheat,

and no gluten. Autumn turnsleaves magenta that is color-fasteven when cooked. PKT. $5

KALE (Brassica oleracea var.)Hardy winter greens native toEurope and the oldest form of cab-bage. Cabbage, Brussels sprouts,broccoli, cauliflower, collards, andkohlrabi were developed fromkale, all within historical times.Easily grown, like cabbage.

——Palm Tree or Dinosaur Kale.Grows to six feet and leaves arethree feet long, dark green, lookinglike a primitive miniature palmtree. Picked young, the leaves canbe cooked like spinach and have anexcellent flavor. PKT. $3.50

LETTUCES (Lactuca sativa) Originally a wild plant fromEurope, selected for sweet-tastingleaves and to form heads and is themost important salad plant in theUSA. In Asia, cooked like spinach.

Lettuce was eaten by Persiankings 2,500 years ago, and grownby the Romans and was introducedto China over 1,000 years ago.

Lettuces grow best when daytemps. are below 70° F and above40° F. at night. In warmer weather,sow in full shade. Mix manure ororganic fertilizers into the top 2-3"of soil and sow seeds in beds 1-2 ft.wide, spacing seeds 1-2" apart.

Lettuces can be cut when 4" tall,in about 30 days or allowed tomature. Sowing seed every monthor two, and harvest year-round.Refertilize the beds once a month.

——Iceberg. Good for late springand early summer planting, heattolerant, compact solid head intro-duced in 1894, long keeper. PKT. $1

MELONS (Cucumis melo)Annual trailing vines which origi-nated in tropical Asia and Africa,cultivated in Egypt 4,400 years ago,only arriving in the USA in 1870s.Easily grown, sow seed in the gar-den when nights are above 50°F.

OKRA (Hibiscus esculentus)Tropical annual from Egypt, grownsince ancient times, and related tohibiscus. Young pods used in theSouth, eaten steamed, boiled, pick-led, fried, and made into soups.Seeds sown in the garden when thenights are above 50°F and thinseedlings 12" apart, easy to grow.

——Burgundy (60 days) Tender, bur-gundy colored pods 6-8", goodyielder. PKT. $1

PARSLEY (Petroselium crispum)Ancient crop from Eurasia 5,000years ago, used for garnishing andflavoring soups. Germinates veryslowly, so keep the bed moist andweeded until seedlings are estab-lished. Thin seedlings to about 6"apart. Grows easily in a container.

——Italian Plain (75 days) FromItaly, an old favorite, easily grown,good flavor, flat leaves. PKT. $1

PEAS (Pisum sativum)Annual plants, from Europe andthe Middle East, cultivated for10,000 years. Vines or dwarf plants,easy to grow when night are cool,in spring or fall. Sow seeds oneinch deep and space 4" in rows.Provide strings for vine-types.

——Laxton Progress. Bush. Earliestpeas, plants semi-climbing to 3 feet,white flowers. Pods 2.5" long and0.5" across, with 4-9 peas tenderand sweet. Mr. Laxton was a peabreeder in the 1800s who devel-oped really good varieties, that arestill grown. PKT. (200 seeds) $1

SWEET and BELL PEPPERS (Capsicum annuum) Peppers areoriginally from tropical America.The sweets are very rare in nature.,and were saved and reproduced asthey were discovered growing inthe wild. Growing instructionsfound in the Hot Peppers section.

——Banana. Popular sweet peppers,yellow fruit, 6" long and 2" across.Productive plants 2 ft. tall and 1.5feet across, fruit ripens from lightgreen to yellow to orange to red.Sweetest when red-ripe. PKT. $1

——California Wonder Red. Tender,crisp, and sweet, used in salads andstuffing. Favorite bell, turning acrimson when fully ripe. PKT. $1

——Dulcetta™ Absolutely the bestsweet pepper, 2-3" long and 1"across, very sweet and a perfectsize for cooking. Crunchy, thickflesh in three colors, yellow, orangeand red. Dwarf plants 1.5 feet talland 1.5 feet across, can be grown incontainers. PKT. (20 seeds) $5

HOT and CHILI PEPPERS(Capsicum) All peppers originat-ed in the New World, from the

Southwest and Florida, to the tip ofSouth America. The five cultivatedspecies were developed by NativeAmericans 5,000-8,000 years ago.

Along with corn, beans, squash,potatoes, avocado, and chocolate,the peppers are one of the greatestculinary gifts that the world nowenjoys, originating from the hardwork done by the original NativeAmerican peoples.

The five cultivated pepper speciesare: the bell peppers and cayennes= ANNUUM; the Aji group =BACCATUM; the Super-Hots likeBhut Jolokia, Habaneros, ScotchBonnets and Trinidad Scorpion =CHINENSE; the Malagueta andTabasco = FRUTESCENS; andManzano and Rocotos = the black-seeded and viney PUBESCENS.

Here is how the pepper speciesmax out in Scoville Heat Units,from mildest to hottest-- Baccatumand Pubescens are always themildest. Annuums and frutescensmax. out in medium-hot. And theChinense are always the hottest,and will always be the source of allof the future Super-hots.

There is a natural maximum forthe future Scoville Units, proba-bly around 2,000,000, but that bar-rier will be breeched by producinga genetically modified variety.

We indicate next to each peppervariety, what species it is. Thatway, you can save your own seedfrom your plants, as long as youput some separation between thesame species. It is very importantto separate sweets and hots if youare going to save seed, because thehot genes could turn sweets to hot.

Peppers offer the best futurebreeding potentials of any veg-etable crop, with focus on (1.)Larger fruit size, (2.) Earlier matu-

rity, (3.) Increased heat levels, (4.)Different colors, (5.) Differentfruit shapes and flavors, and (6.)More fruit production.

After 1492, peppers were spreadaround the world and we estimatethat there are now at least 50,000 to60,000 distinctive sweet and hotvarieties grown worldwide.

Most cultures around the worldhave selected their own distinctivepeppers, which are now a part oftheir traditional dishes.

Start seeds indoors in spring inpots with potting soil. We recom-mend a mix with a low amount ofpeat moss, try coconut fiber forexample. Use a heating mat to getthe necessary 80-85 °F daytime soiltemperature, and use a soil ther-mometer to check. Transplantseedlings when 2" tall into theirown individual 3-4" diameter pots.

Plant seedlings into the gardenwhen 4-6" tall, when nights areabove 50°F., into rich, well fertil-ized soil in full sun. Mulch aroundthe plants to control weeds, Feedonce a month with liquid fish fertil-izer, one cup diluted in a gallon ofwater, and bone meal. Youngleaves wrinkling, especially anyBhut Jolokia, Habaneros, ScotchBonnets or Trinidad Scorpions,means you must add bone meal,and then again weekly until theleaves flatten out again.

For the taller plants like BhutJolokia and Trinidad Scorpions,when plants are a foot tall, snip outthe main stem a few inches, toallow plants to branch out laterally,which will help plants producemore and protect the branchesfrom snapping in the wind or whenloaded with fruit.

“Easy salsa”-- put the pods in theblender with lime juice to moisten.

NOTE! Seeds need 85°F. for 3-4weeks for complete germination forhot varieties. From setting plantsout in the garden, to green fruit is55-75 days and red-ripe fruit is 90-150 days.

There’s a lot of controversy aboutpepper hotness, so we invented aneasy method to test a pepper’s heatlevel, and the results are listed here asDremann’s Hotness Scale (HS)numbers. The HS number repre-sents how many ounces of saucewill have a detectable hotness whenone ounce of pepper pods are added.Multiply our HS number by 12 toget the SCOVILLE number for eachpepper. Can you make a hot pepper hotter?Yes. There are five different species ofcultivated peppers, and your seedselection plus your fertilizers help.

Annuum and frutescens heat levelscan change dramatically, and a rainy,cool summer, or too much nitrogenfertilizer, hot peppers can change tonearly sweet. A common problem incool summers or from Ohio to Maine.

To get the most heat out of yourpeppers: Fertilize with bone mealand liquid fish (one cup diluted in agallon of water) monthly whileplants are developing. When fruitsappear, stop fertilizing with anynitrogen, use only bone meal. Whenfruits start to change color from greento red, keep plants on the dry side.

To develop the hottest strain, checkthe heat levels of the fruit producedby each individual plant, and only saveseed from the plants producing thehottest fruit each year.
