Introduction

It all started when I put together a round-up style website post featuring all of the slice recipes on the Bargain Mums site. It was a simple post including a photo, short paragraph and link to the full recipe for each slice. It may have been simple, but you all loved it! To date it still remains both our most popular and most shared post.

Because the post had been so popular I decided to put together an eBook featuring the 17 slice recipes on our. The recipes in this book have been tested multiple times until they were perfected, and we can report they are all absolutely delicious.

Slices are the ultimate treat to share. They are portable, extremely easy to make, and I am yet to meet anyone who can’t resist at least one piece.of these slices (just about everyone goes back for more). This book includes both bake and no-bake varieties, and some can even be put together in little more than a couple of minutes.

EasySlice

Mars Bar Slice

• 60g butter • 2 tablespoon golden syrup • 1 395g can sweetened condensed

milk

• 3 teaspoons cocoa powder

• 3 cups rice bubbles • 1 tablespoon vegetable oil• 200g dark chocolate

1. Line a slice tin with baking paper. 2. Place the butter, golden syrup, cocoa powder and condensed milk in a medium

sized saucepan and stir over a low heat until melted. Continue stirring for around 5 minutes or until the mixture caramelises. Allow the mixture to cool for 10 minutes.

3. Gently fold the rice bubbles through the caramel mixture until well combined. Using the back of a metal spoon, press the rice bubble mixture firmly into the slice tin. Place in the fridge to set.

4. Once the slice has set, place the vegetable oil and dark chocolate in a microwave proof bowl and melt in short bursts in the microwave.

5. Spread the chocolate evenly over the slice and place in the fridge again until set. Slice and serve.

This Mars Bar slice tastes just like a Mars Bar, yet it doesn’t actually contain any. The secret is caramalising the condensed milk.

Use more rice bubbles for a firmer slice, and less rice bubbles for a gooier slice.

Lemon Coconut Slice

• 125g butter • ½ a 395g tin sweetened condensed

milk • 250g plain biscuits

• 1 1/2 cups desiccated coconut • 1 1/2 tablespoons lemon juice • 1 3/4 cups icing sugar • 2 tablespoons lemon juice

1. Line a slice tin with baking paper. 2. Place the butter and condensed milk in a microwave safe bowl and melt using

the microwave.. 3. Crush the biscuits in a food processor. Add the coconut and lemon juice, as well

as the butter mixture and process until well combined. 4. Press the mixture into the slice tin and put in the fridge. 5. To make the icing, add the icing sugar and lemon juice to a small saucepan,

stirring until the icing is smooth and warm. 6. Spread quickly over the slice, and place slice back in the fridge until set.

This popular lemon coconut slice is an old favourite.

Chocolate Mint Slice

• 125g butter • 200g dark chocolate• 1/2 cup sugar • 2 eggs

• 1 1/4 cup plain flour

1. Preheat the oven to 180c. Line a slice tin with baking paper. 2. Place the butter and dark chocolate in a large microwave safe bowl and

microwave in short bursts until melted, stirring each time. 3. Add the sugar and eggs to the chocolate mixture and stir until well combined.

Add the flour and combine. 4. Spread the batter in the slice tin and bake for 20 minutes, or until cooked

through. Allow to cool in tin. 5. Make the icing as per the instructions below, then spread the icing over the

slice, cut into squares and serve.

Dark chocolate and mint work so well together, which is exactly what makes this slice so good!

To make icing:

• 1 1/2 cup icing sugar• 1 teaspoon butter• a few drops of peppermint essence• 2 tablespoons milk

Add the icing sugar, butter and peppermint essence to a small saucepan, then add the milk, forming a paste. Stir the icing over a low heat until it becomes spreadable. Spread icing over the slice, and allow to set before slicing.

Chocolate Coconut Slice

• 250g plain biscuits• 395g can sweetened condensed milk• 1 cup desiccated coconut • 2 tablespoons cocoa powder

• 200g chocolate• 1 tablespoon vegetable oil

1. Line a slice tin with baking paper. 2. Add the biscuits to the bowl of a food processor and process until the biscuits

resemble bread crumbs. Add the condensed milk, coconut and cocoa powder and mix to combine.

3. Spoon the mixture into the slice tin. Press down firmly with your fingers of the back of a metal spoon.

4. Melt the chocolate and butter together in the microwave, then spread evenly over the slice. Sprinkle with the extra coconut.

5. Place in the fridge for around 1 hour to set.

This chocolate slice is so easy, featuring only 4 ingredients.

You can use dark, milk or white chocolate to top this slice, but it’s also just as good on it’s own.

Licorice Allsorts Slice

• 250g licorice allsorts, roughly chopped

• 250g packet plain biscuits • 1/2 of a 395g tin sweetened

condensed milk• 125g butter • 200g chocolate• 1 tablespoon vegetable oil

1. Line a slice tin with baking paper. 2. Add the biscuits to a food processor and crush. 3. Meanwhile, melt the condensed milk and butter in a large bowl using the

microwave. 4. Add the crushed biscuits to the melted butter and condensed milk and stir until

well combined. Stir through the chopped licorice allsorts. 5. Press the mixture firmly into the slice tin using the back of a spoon or your

fingers. 6. Melt the chocolate and vegetable oil in short bursts in the microwave. Spread

evenly over the slice. 7. Refrigerate slice for a few hours, then slice and serve.

This slice is perfect for licorice allsorts fans.

Clinkers Slice

• 250g Cadbury Clinkers • 250g packet plain biscuits • 1/2 of a 395g tin sweetened

condensed milk

• 125g butter • 200g chocolate• 1 tablespoon vegetable oil

1. Line a slice tin with baking paper. 2. Add the Clinkers and biscuits to a food processor and crush. 3. Meanwhile, melt the condensed milk and butter in a large bowl using the

microwave. 4. Add the biscuit mix to the melted butter and condensed milk and stir until well

combined. 5. Press the mixture firmly into the slice tin using the back of a spoon or your

fingers. 6. Melt the chocolate and vegetable oil in short bursts in the microwave. Spread

evenly over the slice. 7. Refrigerate slice for a few hours, then slice and serve.

This colourful slice is sure to be a hit with everyone.

Wagon Wheel Slice

• 125g butter, softened• 1/4 cup sugar• 1 cup plain flour• 1/2 cup raspberry jam

• 1/3 cup cold water

• 1 cup sugar• 1/3 cup boiling water• 1 tablespoon gelatine• 200g dark chocolate

• 1 tablespoon vegetable oil

1. Preheat the oven to 160c. Line a slice tin with baking paper.2. Beat the butter and sugar in a stand mixer until well combined. Add the flour

and mix until a dough forms. Press the dough into the slice tin and flatten with your fingers or the back of a spoon. Bake for 15 minutes.

3. Allow the base to cool. Once cooled, spread the jam evenly over the base.4. Add the cold water and sugar to a stand mixer with a whisk attachment and mix

for 3 minutes. Whisk the gelatine and boiling water together and add the the stand mixer. Mix for 8 minutes or until thick and white. Gently spread mixture over the slice.

5. Melt the chocolate and vegetable oil together and spread over the marshmallow. Place in the fridge for an hour or so until set.

This slice tastes just like a wagon wheel biscuit, but in the form of a delicious slice.

Milo Slice

• 1/2 cup plain flour • 1/2 cup self raising flour • 1 cup rolled oats • 2/3 cup desiccated coconut

• 2/3 cup brown sugar • 1/2 cup Milo • 1 egg • 125g butter, melted

1. Preheat the oven to 180c. Line a slice tin with baking paper. 2. Add all dry ingredients to a large mixing bowl and stir until well combined. 3. Add the egg and butter to the bowl and stir again until well combined. 4. Press the mixture into the slice tin using your fingers or the back of a spoon. 5. Bake for 15 minutes. Allow to cool in tin before removing. 6. Serve as is or decorate with a basic chocolate icing.

This slice has a delicious chocolatey taste and chewy texture thanks to the Milo.

Weetbix Marshmallow

Slice

• 3 Weetbix, crushed • 1 cup desiccated coconut • 1 cup self raising flour • 1/2 cup brown sugar

• 1 teaspoon vanilla extract • 150g butter, melted

• 1/3 cup cold water • 1 cup sugar • 1/3 cup boiling water • 1 tablespoon gelatine

• food colouring, optional

1. Preheat oven to 180c. Line a slice tin with baking paper. 2. Add Weetbix, coconut, flour, brown sugar, vanilla and butter to a large bowl and

stir until well combined. Press the mixture into the slice tin, and bake for 15 minutes.

3. While the base is cooking, place the cold water and sugar into a stand mixer with a whisk attachment and mix for 3 minutes. Combine the boiling water and gelatine with a fork, then add to the mixer. Beat for 8 minutes or until thick and white. Add food colouring if using and continue to beat until mixed through.

4. Spread the marshmallow on to the slice base and place in the fridge for an hour or so until set.

This weetbix base topped with fluffy marshmallow is surprisingly easy to make.

Chocolate Caramel Slice

• 125g butter, softened • 1/4 cup sugar • 1 cup plain flour • 395g tin sweetened condensed milk

• 90g butter

• 3/4 cup brown sugar • 3 tablespoons cocoa powder • 200g white chocolate • 1 tablespoon vegetable oil

• 30g milk chocolate

1. Preaheat oven  to  160c.    Line  a  slice  tin  with  baking  paper  and  set  aside.2. Beat  the  butter  and  sugar  in  a  stand  mixer  until  well  combined.  Add  the  plain  flour  and  mix  

slowly  until  a  dough   form.  Put  the  dough   into  the  lined  slice  tin  and  press  onto   the  base  evenly  with  your  fingers  or  the  back  of  a  spoon.  Bake  in  the  oven  for  15  minutes.  

3. Meanwhile,  put   the  condensed  milk,  butter  and  brown  sugar  in  a  saucepan  over   low  heat  and  whisk  until  the  mixture  starts  boiling.  Whisk  for  a  further  minute,  then  add  the  cocoa  powder  and  continue  whisking  for  4  minutes.  

4. Pour   the  chocolate  caramel  mixture  straight  onto  the  biscuit  base  and  spread  out  evenly.  Leave  to  cool.  

5. Melt  the  white  chocolate  and  oil  together,  and  spread  evenly  over  the  slice.    Refridgerateuntil  set.

6. Slice  once  the  chocolate  has  set  using  a  sharp  knife  and  serve.

This chocolatey slice is a twist on the traditional version.

Chocolate Caramello Slice

• 250g plain biscuits • 220g block Caramello chocolate • 60g butter • 1/4 cup dessicated coconut

• 1/2 395g can condensed milk • dessicated coconut, extra (optional)

1. Line a slice tin with baking paper and set aside.2. Put the biscuits in a food processor and mix until the biscuits resemble crumbs 3. Break up the chocolate into a large bowl with the butter and melt in the

microwave. The amount of time it takes to melt will depend on your microwave. 4. Add the crushed biscuits, coconut and condensed milk to the melted chocolate

and butter mixture and stir until well combined. 5. Press the mixture into the prepared tin using your fingers or the back of a spoon.

Sprinkle with the extra coconut if desired 6. Place the slice in the fridge and leave for a few hours to set before slicing and

serving.

This slice is so good, it might just be even better than eating a block of Caramello on it’s own.

You can add an extra chocolate hit to this slice by melting a family sized block of milk chocolate with 1 tablespoon of vegetable oil and spreading it over the slice.

Weetbix Slice

• 200g butter, melted • 1 egg • 12 Weetbix, crushed by hand • 1/4 cup cocoa powder

• 3/4 cup brown sugar • 1/2 cup desiccated coconut • 200g milk chocolate • 1 tablespoon vegetable oil

1. Preheat oven to 160c. Line a slice tin with baking paper. 2. Add all of the ingredients to a large bowl and mix until well combined. 3. Pour the mixture into the slice tin and press down evenly. Bake for 15 minutes.

Remove from the oven and allow to cool. 4. Melt the chocolate and vegetable oil together, then spread over the top of the

slice. Refrigerate for 2 hours before slicing and serving.

This all time favourite is sure to be a hit with everyone.

Blueberry Muffin Slice

• 1 1/2 cups plain flour • 1/2 cup sugar • 1/2 cup rolled oats • 1 cup blueberries

• 2/3 cup milk • 1 egg • 100g butter, melted

1. Preheat the oven to 180c. Line a slice tin with baking paper. 2. Add the plain flour, sugar and rolled oats to a large bowl and mix well. Stir

through half of the blueberries. 3. Combine the milk, egg and melted butter, then pour the milk mixture into the

dry ingredients and mix until just combined; the mixture will still look a little lumpy.

4. Pour the mixture into the loaf tin and scatter over the remaining blueberries. 5. Bake for 35 minutes or until cooked through. Allow to cool in tin before

removing.

This tastes just like a blueberry muffin, but in slice form.

Easy Chocolate Slice

• 1 cup Self Raising Flour • 1/2 cup Brown Sugar • 1 cup Desiccated Coconut • 2 tablespoons Cocoa Powder

• 1 Egg • 125g Butter, melted

1. Preheat the oven to 180c. Line a slice tin with baking paper and set aside.2. Add the flour, sugar, coconut and cocoa powder to a large bowl and mix until

combined. Add the melted butter and egg and mix well. 3. Spread mixture in a lined slice tin and bake for 10 minutes. The slice will be

slightly soft in the middle still, giving it a fudgy texture. 4. Enjoy warm or wait until cooled, it's great either way.

This is such an easy and budget friendly slice.

Jelly Slice

• 1 packet plain biscuits • 100g butter, melted • 1 x 395g tin sweetened condensed

milk

• juice of 2 lemons, or 6 tablespoons

bottled lemon juice • 1 tablespoon gelatine • 1/4 cup boiling water • 1 x 85g packet red jelly crystals

• water

1. Line a slice tin with baking paper and set aside.2. Crush biscuits and melted butter in a food processor until mixture resembles

fine crumbs. Press biscuit mixture firmly into a lined lamington or slice tin. 3. Dissolve gelatine in boiling water. In a bowl, mix together the gelatine mixture,

lemon juice and condensed milk. Spread the filling over the base and refrigerate until set.

4. Make jelly as per packet instructions, but using 100ml less of boiling water than the packet suggests. Cool the jelly liquid, then pour over the slice.

5. Refrigerate until set, and cut into squares to serve.

This jelly slice is perfect for parties. Use your favourite jelly flavour.

Easy Vanilla Slice

• 2 Sheets puff pastry • 300 ml thickened cream • 2 x 100g packets instant vanilla

pudding mix

• 500ml milk • 1 1/2 Cups icing sugar • 1 Tablespoon soft butter • 2 Tablespoons boiling water

1. Preheat the oven to 180c. Put pastry sheets onto two lightly greased baking trays & prick all over with a fork. Bake for 20 minutes, or until they are puffed and golden brown. Remove from oven and set aside to cool.

2. Whip the cream with an electric beater until soft peaks form, set aside in the fridge. Put vanilla pudding mix and milk into another bowl and stir using wire whisk until thickened.

3. Quickly fold the whipped cream into the pudding mix then spread over the top side of one of the pastry sheets. Put the other sheet on top, flat side up.

4. Sift icing sugar into a bowl and stir in the butter and water. Spread over the top of the slice.

Vanilla slice doesn’t get any easier than this.

Easy Caramel Slice

• 90g butter• 250g packet plain biscuits• 1 cup desiccated coconut• 200g dark chocolate chips

• 395g tin sweetened condensed milk

1. Preheat the oven to 180c. Line a slice tin with baking paper.2. Pour the melted butter over the base of the slice tin. Crush the biscuits in the

bowl of a food processor until the biscuits resemble fine crumbs. Sprinkle evenly over the melted butter.

3. Sprinkle the coconut evenly over the butter and biscuit base, Top with the chocolate chips, and finely drizzle over the condensed milk.

4. Bake for around 25 minutes or until the slice is golden. Cool in tin before slicing.

This easy caramel slice doesn’t even require a mixing bowl, just make it straight in the slice tin.

Directions

Try substituting the dark chocolate chips for milk or white chocolate, or add chopped nuts in addition to the chocolate chips for extra flavour.
