About me

Abdul Qudoos has a BSc (Hons) degree (Biotechnology, Microbiology & Chemistry), and MSc degree (Industrial Chemistry) with over 13 years of experience on R&D/NPD in food products formulation & Operations of Quality Management.

Known globally as an emerging food expert. Currently conducts R&D of food products, writes, reviews, consults, teaches & lectures on food development, quality assurance & food safety.

On an international level he has solved more than 400 food, quality & safety problems/issues & have a strong network

Work on a variety of food products.

Sets RM standards for sourcing quality RM & ensuring recipe meets target costs.

Establishing product shelf-life through microbiology, oxidative stability, sensory performance and routine quality analysis.

Identify new ingredients, new products, new technology and processes through publications, journals, & networks.

Provide technical support and assist with trouble shooting to all company groups.

Make strong connections & communicate with all areas of business and other professionals.

Raising the skill levels of employees from and team-building to increase production efficiency.

New Product Development from concept to full scale production, conducts detailed studies on raw materials and impact on human consumption. Also conduct studies on shelf-life evaluation.

Process - Interface with the production department for NPD trials to ensure that the production can be viable in terms of cost & production times.

Lead & execute NPD projects (product design, RM Quality, Process Control, etc.)

Believe in collaborative & team-work with cross-functional project team.

Interface with purchase, packaging, sales, & marketing to create & develop a healthy solution for customer’s requirements.

Organizing lab & establishing analytical techniques as well as performing pilot plant & full scale factory trials.

My expertise in NPD Enhancement of existing products & Cost reduction:

Providing extra features (USP) , improving its performance, health benefits, changing its appearance, or making it cheaper to produce: • Modified starch in yogurt, tomato,

fruits & other products; Gluten in flour, ketchup, Oat ingredients in healthy preparations, Prebiotic ingredients/ organic dietary fibers in health, etc.

• Cocoa powder replacer in choco- milk, caramel, toppings, cakes, shakes, etc.

• Sugar replacers & addition of fiber, bulking agents and sweeteners.

• Dairy replacers, blends, milk protein, fat, whey, lactose, permeate, etc.

• B-grade RM for specific application • Increase production capacity by

improving process & reduced time

Fruits value added products:

• Bakery fillings, jams, jellies, sauces, desserts, marmalade, pies, preserves, spreads, glazes, yogurt fruit preparation.
