Since Hispanic Heritage month is from September 15 – October 15, the theme of this issue is role models in our community. Our cover story is about Elizabeth Espinosa, a highly visible role model for young Latinos who want to make a difference through communications
and journalism. Also included are articles on the Imagen awards, which honor positive portrayals of Latinos and Latino culture in entertainment, the Latin Grammys, Cruz Family Sports, the Latin American Parade and Festival, and “Are You a Role Model?,” which is about the need for foster parents. Role models are all around us: parents, teachers, mentors, friends, professionals, artists, everyday people and extraordinary people. Each of us has the potential, and perhaps even a duty, to serve as a positive role model for our children. Valuing our families and our friendships is a good way to start.
We also include articles about laughing away your stress, the local community garden, kids in the kitchen, and the Day of the Dead, among others. Enjoy the bounty of the fall harvest!

Since State Farm has entered the field of financial services, I’m talking with more families about planning for the
future. While families almost always want to talk about retirement, their most immediate concern is saving for their children’s college education. This is wise as a college education will, in most cases, be a family’s second largest expense after home ownership, so it deserves careful planning. Rising college costs make saving even more important.
According to The College Board, Trends in College Pricing 2008, the average
published total charges, including tuition, fees and room and board for in-state students at public four-year colleges and universities in 2008-09 are $14, 333, 5.7 percent higher than 2007-08. For private four-year colleges and universities, the same total charges are $34,132, 5.6 percent higher than a year earlier.
If those numbers don’t make you want to start putting money aside, I don’t know what will. The good news is that with sound planning and a long-term outlook you have the potential, over the course of 18 years, to build up a nice college nest egg. State Farm offers very affordable, simple options you can begin taking advantage of today, including tax-advantaged savings vehicles, to help you reach your college savings goal.
You’d be surprised how even small amounts on a regular basis can make a big difference. For example, an account in which you save $150 per month could create a nest egg of $47,337 after 18 years. This calculation
assumes a monthly investment in an account earning 4 percent annually for 18 years and does not take in to account any taxes or fees. It is also assumed that no withdrawals are made from the account.

Winners of the 26th Annual imagen Awards, honoring positive portrayals of latinos and latino culture in entertainment, were announced August 12th at a star-studded dinner ceremony held at the beverly hilton hotel.
the awards, hosted by actress maria Canals-barrera, star of disney Channel’s Emmy-winning “Wizards of Waverly place,” were given before an audience of approximately 500 representing the entertainment industry and latino community.
Winners were selected in 19 different categories from film, television and the internet, and judged by an independent panel of entertainment industry executives and latino community leaders. special recognition went to latino public broadcasting, who received the Norman lear Award, named for the veteran television producer who conceived the imagen Awards program, and to Walt disney “imagineer” Alfredo m. One of my favorite local bands in LA, La Santa Cecilia, was nominated for its first Latin Grammy for Best Tropical song, “La Negra.” The Annual Latin GRAMMYAwards
nominations were announced September 10th at the Avalon in Hollywood. Other nominations for Best Tropical Song include “Bailando Por Ahi” by Juan Magan, “Me Cambiaron Las Preguntas” by Rafi Monclova and Gilberto Santarosa (features
Ruben Blades), “Me Duele La Cabeza by Yoel Henriquez,” and “Vamo a Portarnos Mal” by Calle 13.
The 12th Annual Latin GRAMMY Awards, scheduled for November 10th at the Mandalay Bay Events Center in Las Vegas, will be broadcast live on Univision from 8 – 11 p.m. ET/PT.
Often referred to as the heirs to the Los Lobos tradition, La Santa Cecilia exemplifies the modern creative hybrid of Latin culture, rock and world music. The six-member group, proud to be from the City of Angels, draws inspiration from all over the world, using Pan-American rhythms like cumbia, bossa nova, rumba, bolero, tango, jazz, rock and klezmer music. My loving parents, Patricia and Carlos Cruz, worked hard to create opportunities for me and my sisters,
Carla and Sonia. Although my mother was a career woman and my father was in the military, they encouraged us to participate in every sport and physical activity available. Not until I became a father myself did I realize how much sense it made for our development.
My father took my sisters and me to play tennis, run, hike, target shoot, etc. My sister Carla was the fastest track and field sprinter at her middle school and high school and Sonia was a tennis player on her high school and junior college teams. I eventually fell in love with cycling. Sports were a way of life for my family, and when we weren’t playing them, we were watching them on TV.
When my family attended the cycling road race
at the 1984 Olympic Games in LA, my vision was born to one day compete in that sport at the Olympics. Training hard, I became California State Champion and was a toped ranked rider by the time I was 17. I went on to represent the United States in the 2000 Olympic Games in Sydney, Australia.
My parents continue to emphasize sports in our family, especially with their six grandchildren. They attend games and races and organize family gatherings that turn into sporting events. We’re just as competitive as ever and love meeting up for a big family bowling night.
My parents taught their children discipline and responsibility through athletics. The life lessons learned by children who are encouraged to play sports are some of the most important lessons that any family can teach. P

On The Run With Espinosa

What would you say to people who are struggling to reach their dreams? “Don’t give up, get up”…that’s my mantra. It’s OK to have a pity party, but don’t stay there. Mistakes and struggles are lessons; you must learn from every experience you have. Stay focused on the prize and not your fear. I’ve learned life is about choices, and every single moment of the day you choose your path in life. It’s important to be present and grateful for everything that happens to you. Remember, there is no such thing as failure unless you choose to give up.
With such a hectic schedule, how do you maintain balance? I pray often and try to meditate as much as possible. Balancing it all isn’t easy, and I admit I often slip. Still, I strongly believe it’s a must to keep healthy mentally and physically. So when I can’t quiet my mind, I turn on my favorite tunes and turn my living room into a dance floor. What most people don’t know is that my first love was choreography. If I weren’t a TV reporter, I would be a dancer!
What did you learn from working with Oprah? Wow, sooo much! Oprah taught me success comes from surrounding yourself with good people. Oprah has an amazing staff, but let me tell you Oprah is also an amazing boss. She has mastered the ability to make everyone feel appreciated. Together they have built an empire that is more than just feel good TV, it’s a movement. P
elizabeth Espinosa, a multilingual Emmy Award-winning reporter/anchor for KTLA, reports live everyday on the 1 pm, 6 pm, and 10 pm newscasts. Previously, Elizabeth spent five years as one of Fox 11’s top personalities on “Good Day LA.” She was also a
correspondent for the nationally syndicated program “Good Day Live.” Born in Hollywood and raised in the South Bay, Elizabeth started her career in Spanish
language news with Telemundo and later Univision. A UCLA graduate, she speaks five languages and enjoys traveling. Earlier this year, Elizabeth was chosen by Oprah out of thousands of hopefuls nationwide to compete on OWN’s first reality show, “Your OWN Show.”
Elizabeth’s work has taken her to some of the world’s most troubled regions. In 2007, Elizabeth produced and hosted a special report about disabled and abandoned children in El Salvador. In addition, she co-hosted and co-produced an Emmy award winning half hour documentary about child warriors in East Africa, “Forgotten Footprints: The Hunted Children of Uganda.” Elizabeth also traveled to Pakistan to interview women about arranged marriages.
Elizabeth credits much of her success to the struggles and rewards of growing up with a severely disabled younger brother. She is a powerful advocate for the rights of people with disabilities and works tirelessly with various community groups and non-profit organizations, such as Ability First and HOLA (Heart of Los Angeles). Palacio recently sat down with Elizabeth and asked her questions we received from our readers.

¿Qué le dirías a las personas que están luchando por alcanzar sus sueños? “No te rindas, levántate” ... ese es mi mantra. Está bien tener un partido de la compasión, pero no se queden ahí. Los errores y las luchas son lecciones, usted debe aprender de cada experiencia que tiene. Manténgase enfocado en el premio y no el miedo. The Green Lab Urban Farm and Teaching Garden El laboratorio verde de granja urbano y el jardin de enseñanza

The Green Lab Urban Farm and Teaching Garden was built by teens for teens over the past 2 years. The
Salvation Army allowed the Long Beach Community Action Partnership (CAP) to expand its campus on the corner of Spring Street and Long Beach Boulevard to include a 1.3 acre urban farm.
CAP broke ground on the vacant lot in July 2009 and in 8 weeks transformed it into a lush environment teeming with wildlife. The moment the first row of herbs and flowers were planted, the pollinators arrived, including bees, butterflies and birds.
Every three months, a new group of teens has come to work in the garden as part of a Green Jobs Program in partnership with the
City of Long Beach. Working in a garden may not seem practical for a resume, but the “lessons of the farm” are the lessons of hard work and the rewards that come from those efforts. They learned that plants, animals and working relationships need tending daily, and if you don’t show up, they don’t thrive. All teens can benefit from the demonstration of cause and effect.
Many aspects of job readiness are covered, from resume writing and interview attire, to filling out time sheets and modern on the job communication. During each session, the teens built another component of the farm and garden. Each group was able to work on planting a crop and completing a construction project, such as a barn, chicken
coop, shade str ucture , a q u a - p o n i c system, farm stand, orchard, and compost center. There are water wise demonstration gardens and a 650 gallon cistern for rain water collection.
The garden now provides healthy, locally grown food for the community and helps fill the Salvation Army’s Food Pantry. Volunteers are needed at the garden to help plant and harvest for the food bank. Or you may stop in at our farm stand to buy vegetables for your family. One of the most valuable skills our society has the obligation to teach to next generation is the ability to grow food and feed people. P

Three long beach researchers analyzed 2003-2010 data on more than 5,000 students in the long beach unified school district and found that nearly half of all 5th, 7th, and 9th graders are
considered overweight or obese as defined by the u.s. Centers for disease Control and prevention. Overweight and obese children are at risk for developing a high cholesterol count, hypertension, respiratory illnesses, orthopedic problems, depression and type 2 diabetes during their youth and have a 70 percent greater chance of becoming obese in adulthood.
Among the key findings are:• An estimated 31 percent of 5th, 25 percent of 7th and 21 percent of 9th graders are obese;• Obesity rates were significantly higher in low income areas, but the number of overweight students were basically the same across neighborhoods, grades and socio-demographics;• Neighborhoods with a high concentration of mini-markets had higher rates of obesity;• latino students had the highest rates of obesity, followed by African Americans, Asians and Whites; and• Northwest long beach had the highest rate of student obesity (36 percent), while park Estates, near Cal state long beach, had the lowest rate (8 percent).the purpose of the study was to provide a statistical foundation
for going forward with such initiatives as the California Endowment’s building healthy Communities and YmCA’s pioneering healthy Communities programs operating here in long beach. P

The new school year means buying school supplies for
our children. Most of us received a list of desired supplies for each child to arrive at school with on their first day of class. These lists appear to be getting lengthier each year and now include such items as classroom cleaning supplies.

about food preparation. to that end, michael poompan—chef of the renaissance long beach hotel—conducts regular food demonstrations at local schools and farmers markets, sometimes with shaun and lance as assistants.
“When i was a kid, i only ate meat, potatoes and corn on the cob. i wasn’t about to try anything new,” poompan acknowledged. “so i tell kids during my demonstrations, the reason that i’m there is that hopefully they will change their minds sooner than i did.”

Also, research shows that kids who cook with their parents may be less

and that’s not too early to start. Especially for younger children, it’s important to set your kids up for success. structure the work area so they are less likely to spill and have them do their measuring with a cookie sheet underneath to catch spills.
here are some age-appropriate cooking skills for children: under 5 years old: dip, tear, break, and snap (for example, snapping the ends off green beans); shake, spread, and cut with a cookie or biscuit cutter; roll, juice, and mash; husk corn; wash vegetables; measure and pour some ingredients; and hand mix. 6-10 years olds: cracking and separating eggs; reading some recipes by themselves; inventing their own easy-to-fix recipes; grating cheese; cutting vegetables, fruits, etc. using a plastic knife or dinner knife; and, with adult supervision if needed, using the electric mixer, stirring food over the stove, using and reading a candy thermometer, and operating a can opener or food processor with safety features. November is synonymous with Thanksgiving, perhaps the most important holiday for Americans. It is a day when we come together
with our loved ones to give thanks for all we have at a traditional dinner.
At my house, it’s a true family banquet. Here is what’s on the menu this year: Latino style turkey, black beans, white rice with balls and dried fruits, watercress salad, yam beans, queso fresco (similar to farmer’s cheese) with an orange vinaigrette, marinated yucca and of course, several desserts including squash flan.
Here is my personal recipe for Latino style turkey. I hope you enjoy it. From my house to yours, I wish you all the best on this holiday.

pRepaRaTiOn:
1Wash the turkey and remove excess fat. take out the innards and put them aside.
2Crush the garlic cloves and mix in the salt, pepper, oregano and cumin. Add the oil, lemon zest and peppers and mix
thoroughly. make small cuts all over the surface of the turkey and spread the mixture over the surface and inside the cavity. mix the orange juice, rum and bay leaves. put the turkey into a bag or plastic container breast side down. let the turkey marinate for 24-48 hours.
3preheat the oven to 425° f.
4remove the turkey from the marinade and dry off the excess liquid. pour out the marinade. let the turkey rest at room
temperature 30 minutes before baking. insert the onion and orange inside the cavity. Cover the entire turkey and the space between the skin and the turkey with the butter. tie the thighs together.
5place the turkey (breast side up) on a thick, stainless steel baking pan with a broiler rack. let it bake until golden,
about 30 minutes.
6lower the temperature to 325° f and continue cooking for an hour and a half, basting every 15 minutes with the liquid
that accumulates at the bottom of the pan.
7the turkey is ready when a thermometer inserted at the center of the breast reads 165° f (175° f at the center of the
thigh). the total baking time for a turkey of this size is approx. 2½-3 hours, that is, 13-15 minutes per pound.
8transfer the turkey onto a plastic cutting board and remove the onion and orange from the cavity. Cover it with aluminum
foil and let it rest 20 minutes before carving.
9remove the excess fat from the liquid left at the bottom of the baking pan. heat it up with the innards and white wine
over medium-heat until it thickens. Add salt and pepper and serve it as a sauce for the turkey.

Laugh Away Your Stress Riendo Para Aliviar Estrés

everyday life contains stress. We need a little stress just to get us going and out of bed in the morning. That adrenalin rush when the alarm goes off is necessary.
However, too much continued stress has a negative effect on our bodies. When adrenaline continues, another stress hormone is created, cortisol. According to scientific research, too much adrenalin and cortisol suppress the immune system and disable our ability to use good brain chemicals that help us function naturally and normally.
Dr. Lee Berk and Dr. Stanley Tan of Loma Linda Medical Center have done extensive research on the levels of the good and the bad chemicals in our blood before and after laughter, when the bad stuff decreases and the beneficial stuff increases.
What can we do, without spending money or taking drugs, to help us stay healthy?
Remember the old saying, “Just stop and take a deep breath.” Actually, that is really good advice, because when we are experiencing stress (creating harmful chemicals) the act of taking a deep breath
acts like a light switch, turning off the bad and turning on the good. Taking that a step farther, smile and laugh, and you will be creating health instead of illness.
Adrenaline and cortisol are diminished when we laugh, even when we smile. The good natural chemicals that our brain and body create for us, the serotonin, endorphins, dopamine, nor epinephrine and more, are our inner pharmacy. We make the good stuff to help us stay healthy and happy.
This “just laugh” advice is a little difficult to do in the beginning, but all it takes is a change of attitude. Watch funny videos with your family, laugh at spilled milk instead of yelling, be good to yourself and help your family to “find the funny.” Dr. Joel Schwartz has even written a book about the importance of nurturing your child’s sense of humor.
Give yourself an attitude change and stop being grumpy. Choose to be happy, smiling and laughing. Your body and your family will appreciate the change. P

In my life there have been plenty of obstacles. Overcoming obstacles is often a major part of the journey to success. Many of my obstacles came in school, having to deal with
failures and learning to get up from them. One way I learned to overcome obstacles was to look at myself in a different way.
In college, I began looking at myself in the mirror every morning and picturing myself in a cap and gown and the feeling I would have participating in my college graduation ceremonies. The feeling made me smile every morning, and I would get so excited I would dance and jump up and down as if I were actually there. The feeling carried me through the hard times, helping me to overcome my obstacles and to eventually graduate from college.
Look in the mirror and picture yourself achieving your personal goals. What will you look like and what will you be feeling then? Practice with the mirror, seeing your future self and feeling the excitement at your success. When obstacles come your way, work through them with your future self in mind. Make your dream yours! P

On Tuesday, November 1st at 6 pm, the Long Beach Playhouse is presenting the 2nd Annual Celebration of the Mexican traditional holiday
of Day of the Dead, Dia de los Muertos. Scholars trace the origins of the modern holiday to indigenous observances dating back thousands of years.
On this evening, gregorio luke will explore the history and traditions of dia de los muertos. the celebration includes an exhibition of altars constructed by local artists. the exhibit is curated by artist michael stearns and will be juried by mr. luke and mr. stearns.
mr. luke is an expert on mexican and latin American art and culture. he has presented over 1,000 lectures in museums and
universities throughout mexico, Europe and the united states in institutions such as the library of Congress, the smithsonian institution, harvard and Columbia, among others.
he is the former director of the museum of latin American Art in long beach, former Consul of Cultural Affairs of mexico in los Angeles and the first secretary of the Embassy of mexico in Washington d.C.
