P ulling together the perfectThanksgiving dinner all comesdown to balance. It’s a matter ofknowingwhen to save, andwhen
to spend. And that rule applies as muchtomoney as to time and energy.Because the better you understand
where time in the kitchen can pay seri-ous dividends — versus just leaving youfrustrated and disappointed— the easierit is for you to decide which parts of thebigmeal should get your time, andwhichshould get your cash.To help you sort it all out, I’ve listed
my Top 12 Thanksgiving Trouble Spots,along with my take on where your timeandmoney are best spent.
THE TURKEYHowoftendoyou roast a turkey?Once,
maybe twice a year? And you’re likely tospend four or more hours slaving overthe sucker, right? So why not splurge ona local, organic, heirloom bird raised byfree-spiritedworkers on a collective?Thebird, after all, is the centerpiece of themeal. Make it a good one.
THE BRINEIt’s all about moisture. And brining is
worth your time. Because a moist birdmakes for a delicious dinner. You coulddo a basic brine, which is a 1:1 ratio ofkosher salt and sugar dissolved in water.Plunk the bird in that for 8 to 72 hoursand you’re good to go. But anyone can doa basic brine.What you want to do is invest a few
extra minutes and a couple extra dollarsto make a sensational brine. Using thesame 1:1 ratio, you’re going to dissolve ko-sher salt and brown sugar in gently sim-mering apple cider seasoned with blackpepper and fresh rosemary. Add a tonof ice to cool it down, then resume yourpoultry plunking.
THE ROASTDon’t just pop the bird in the
oven. Lube it up with as much but-ter as you can, both under and overthe skin. And while you’re at it, jamsome fresh herbs under the skin, then
pop some lemons and fresh rosemaryinto the cavity. (Don’t fret over need-ing room for the stuffing. We’ll getto that in a moment.) This all takesa few extra minutes, but it’s wellworth it.
THE BASTEDo it. Butdon’t do itmore thanevery 30
minutes. Every time you open that ovendoor, all the heat rushes out. Baste morethan every half hour or so and your birdwon’t be done until Christmas.
THE MASHED POTATOESDrypotatoes are better potatoes. So af-
ter you boil them, spend a few extramin-utes spreading them on a baking sheet.Pop the potatoes in the oven at about 350F for 10 minutes. After the potatoes aredried out, use a ricer to get just the righttexture.Then loadon thebutter andmilk.Spare the fat, spoil the potatoes.
THE SALADWaste of time. Waste of money. Don’t
do it. Nobody wants it. Nobody eats it.Thanksgiving is about carbs and fat. Bevirtuous the next day.
THE STUFFINGDon’t complicate your life — or your
bird — by stuffing your stuffing. Thisis why casserole dishes were invented.But do spend a little extra to use real
bread (not bagged stuffing). Get goodbread, let it go stale, cut it into cubes,then toast it in the oven. And when youassemble the stuffing, get some driedfruit in there, which offers a nice con-trast of texture and flavor. Dried cher-ries, cranberries and apricots are allexcellent choices. And tons of onions,sage and celery are nice counterpointsto the fruit. Don’t forget an egg or twofor structure.

butternut squash. Leave the mash-ing for the white potatoes. Instead, cutthe orange ones into cubes, dust themwith cornstarch, a sprinkle of oil andwhatever seasonings get you going,then roast them until lightly brownedand tender.
THE GREEN VEGGIESWhen in doubt, add bacon. Green
beans. Brussels sprouts. Whatever. Ba-con makes them better. Money spent onbacon is money very well spent.
THE PIEUnless you’ve recently won a bake-
off, here’s another place to spendmoney instead of time. A good bakerwill make your efforts taste like some-thing from 7-11. Instead, spend yourtime making fresh whipped cream us-ing really good heavy cream spikedwith fresh vanilla bean and a bit ofpowdered sugar. And the same creamcan be piled onto the coffee you servewith dessert.

{ the BUTTERDump a quart of heavy cream in a food
processor, then turn it on. Let it go for about 3 to 5minutes. First it will turn into whipped cream, thenthe buttermilk will break away from the fat. Oncethe fat (butter) is all clumped together, dumpedout the liquid. Place the butter in a bowl and kneadit to squeeze out more liquid. Once no more liquidcomes out, season it with kosher salt and eat it atroom temp. Best. Butter. Ever.

Like onions, leeks develop a rich, savoryflavorwhen cooked slowly. Andwhen cookedthis way, theymake an excellent addition to acreamymound of mashed potatoes.Rather than caramelize the leeks,which re-
quires abitmorehandsoncooking,wedecidedto melt them. It’s actually a braise, but the re-sult is meltingly good. And braising requiresonly an occasional stir. The leeks are thinlysliced, then slowly simmered in broth or stockuntil extremely tender, then thewholemixtureis stirred into the potatoes.The easiestway to clean leeks is to cut them
up first. Trim off the ends, cut them in halflengthwise, then thinly slice them. Place theslices in a large bowl of cool water and tosswell, separating the layers, to rinse away anydirt. Allow the dirt to fall to the bottom of thebowl, thenuse a slotted spoon to scoopout thefloating leeks.

1/4 cup sesame seeds1/2 cup hazelnuts, toasted1 tablespoon whole coriander seeds1 tablespoon cumin seeds1 teaspoon salt1/2 teaspoon ground black pepper1/2 cup fresh mint1/4 cup fresh marjoram16-ounce frozen white bread dough, thawed6 tablespoons butter, meltedCoat a muffin tin with cooking spray.
■ To make the dukkah, in a food processor, com-bine the sesame seeds, hazelnuts, coriander,cumin, salt, pepper, mint and marjoram. Pulseuntil well chopped and sandy in texture.■ Cut the bread dough into small pieces, aboutthe size of a marble. Place the dough pieces ina zip-close plastic bag. Much as I love butternut squash — andfirmly believe it belongs on the Thanksgiv-ing table— I’ve grown boredwith the ways ittypically shows up.Too often, the squash is cut into chunks,
then either seasoned and roasted or steamedand mashed. And while both approachescan be delicious, they get tedious year afteryear. They also don’t do the squash justice.Face it, a bowl of mashed squash will alwaysbe a runner up to mashed potatoes. And ofthe many roasted dishes that land on thetable, squash isn’t the one most people willreach for.So I decided to reinvent the Thanksgiving
squash dish. I wanted something with a bit ofbackbone. Something that stoodout anddidn’tresemble every other — or any other — dishon the table.What I came up with is a simple, savory
squash tart. Not only is it easy tomake, it evencan be prepared ahead of time (saving valu-able oven space on the big day), then brieflyreheated just before serving.
SAVORY BUTTERNUT SQUASH TARTStart to finish: 45 minutes (15 minutes active)Servings: 8
9-inch prepared (rolled) pie crust1 3/4 pounds peeled and cubed (about 1/2-inchcubes) butternut squash3 eggs1/4 cup grated Parmesan cheese2 tablespoons brown sugar1/2 teaspoon dried thyme1 teaspoon salt1/4 teaspoon ground black pepper
■ Heat the oven to 350 F.■ Unroll the pie crust and set it over a 9-inchtart pan with removable bottom. Gently pressthe crust into the pan and up the sides. Usingyour fingers, crimp and remove any excessdough. Refrigerate the crust.■ Fill a medium saucepan with 2 inches of water,then fit it with a steamer basket. Set the squashin the steamer basket, then bring the water toa boil. Cover and steam the squash until verytender, about 15 minutes.■ Transfer the squash to a blender or food pro-cessor. It’s uncomfortable to watch,mostly because you know what’s goingto happen to them, to their town, andto the phone calls that come a little tooon-schedule.Yes, this book is predictable but it’s also
entertaining,uplifting,and itcanbesharedwith pretty much anybody. And if that’s

Three interceptions, two of them returned for touch-downs byTeh’Ron Fuller, kept the Braves from gainingground on a teamwhowas on amission.“I didn’t really have a certainmentality; I justwanted
to go out there and win the football game,” said Fuller,a senior linebacker and defensive back. “We wanted tomove on to the next round. That’s it.”Head coach Grant Redhead said getting Congdon to
throw passes he wasn’t used to helped stop the offense.South rushed Congdon repeatedly, and forced the ballout of his hands before he was set.The 32-29 loss to Immokalee is still fresh inRedhead’s

Class 3A for yet another year after beat-ing Sarasota by 13 points in the FHSAAstate cross country finals at ApalacheeRegional Park on Nov. 9.

downs, and scored on its first four posses-sions to end theWildcats’ season at 5-6.“They’re a heckuva football team,”
Jackson said of Heritage. “They’ve got agreat defense.We knew that coming in.”TheWildcatsdidn’t help themselvesby
dropping a number of snaps as quarter-back Zimon Brennan— playing in placeof the injured Cody Long—was himselfplaying with a broken finger.Brennan ran 12 times for 69 yards, and
also completed five of 12 passes for 34yards for the Wildcats, who were out-gained 317-111.Ryan Keegan ran seven times for 21
yards. A.J. Ferry caught one pass for 30yards, and Nick Nataro, a USF commit,had two receptions for 10 yards.After Dedric Witherspoon scored on a

theWildcats coachwas pleasedwith theway his team played in the second halfagainst the Panthers.Herefusedtousetheinjuriesat thequar-
terback position as any kind of an excuse
for the way things went Friday night, andsimply chalked it up towhat hehopeswillbe a learning experience for his players.“It’s a learning process,” Jackson said.
“Hopefully,we’ll get back to this situationnext year and we’ll get better at it.”Though itwas certainly a toughway to
end the season, the Wildcats coach hada smile on his face as he started to thinkabout the future of his program.“We’ve got a lot of work to do in the
offseason, and you know what, I’m look-ing forward to it,” he said. “Our first yearhere, I thinkwegot a lot further than a lotof people expectedus toget. Butwe’vegotto build on it.We’ve got to keepworking.“It’s a process. And you know what, a

Also last hours mid day high east wallcreek points; all on live pilchards/sardines.Redfish more singular showing east sideshallows as flood tide eases taking wholeshrimp freelined up under overhang. Mid-Bay oyster bars ripe with action on variety;spec trout, flounder, snapper all worked onlindy rigs or tipped jigs. Some take-homesheepshead beginning to show Big HickoryChannel on shrimp/cut crabs.
NEARSHORE: Seas ease post weekend.Clearer water away from Passes. Eastedges MAY reefs for good bottom action.Snapper, early season sheepshead, gaggrouper and flounder. Gags on live bait; reston shrimp. Clean water will bring mackerelearly week; on tipped jigs under chum.
