The gathering.

The harvest takes place between February and June.

The reception of sugarcane

The fermentation

A distillery has several fermentation tanks with a capacity of 30000 litres each.

The distillation

Introduced by the upper, wine descends tray shelf, by heating in contact with the vapour introduced by the bottom of the column.
