Thebuttonmushroomwhich30yearsagoaccountedfor70percentofallmushroomproduction,nowrepresentslessthan30percentofmushroomsproduced.Estimatesarethatoystermushroomsnowaccountforcloseto20percentoftotalworldproduction.Consumerdemandhasdriventhegrowthandmarketpricesforthismushroomwhichrequireslesstechnologyandriskforcultivation,essentiallymakingthisaprofitablecropforgrowers.

HowMushroomsGrowMushroomsdonotneedanylighttogrow.Onlygreenplantsneedlightforphotosynthesis.Aircirculationisnecessarytogrowmushroomsandhelpmaintainhumidityandtemperature.Environmentalrequirementsformostmushroomsareachievableathome.

Mushroomsdonothaveseedsandaregrownfromsporesthatarenotvisibletothehumaneyewithoutmagnification.Plantseedscontainchlorophyllwhichhelpsthemgerminate.Mushrooms,however,donotcontainchlorophyllandrelyonexternalmaterialssuchaswood,sawdust,grain,woodenplugs,straw,orliquidforsustenance.Thisprocessisknownasreversephotosynthesis.Mushroomstakeincarbonandconsumeoxygen.Plants,ontheotherhand,consumecarbondioxideandproducecarbonandoxygen.

Mostmushroomsgrownindoorsareprimarydecomposers.Thistypeofmushroomcanbreakdownwoodchipsorlogstoeat.TheAgaricusgenusfamilymembersaresecondarydecomposers.Thesemushroomsneedotherfungiorbacteriatobreakdownwoodintocompostbeforetheycanutilizethisforfood.Thesecondarydecomposersrequireamorecomplicatedcultivationprocess.Fungidirectthenaturaldecompositioncyclesandarecriticaltobiologicalsystemsandhumans.

FungiLifeCycle

Whencultivatingediblemushrooms,sporesarenotusedbecausetheyaretoosmallandmushroomsporestakeconsiderabletimetogerminate.

Pre-grownmyceliumofthemushroomisinoculatedonasterilesubstrateandthisisknownasspawn.Spawnplacedinsterilizedsubstrategivethecultivatedmushroomaheadstartaboveotherfungi.Themyceliumthencolonizesthesubstratefeedingonthenutrients.Thisperiodisknownasthespawnrunwheremyceliumthenbeginsfruiting.Factorsthatcaninducefruitingincludeachangingtemperature,highhumidity,lossofordeficiencyofanutrient,ahighCO2concentrationintheair,orlight,dependingonthetypeofmushroom.Mostofthesefactorsthatstimulatefruitinghaveaharmfulconsequenceonthe

mycelium.Sowhencultivatingchangesintendedtoinducefruiting,thisshouldonlybedoneifthemyceliumgrowthhasgonethroughthesubstrate.

Themyceliumreproduceswhenthenutrientshavebeenallusedortheenvironmentchanges.

ToxicMushroomsWhileonlyabout100mushroomspeciesaretoxic,asmanyas6,000Americanseattheseeveryyearandsomeresultindeathcausedbyamatoxins.Becausethesearemushroomsgrowinginthewild,unfortunatelythemajorityofthosevictimsaresmallchildren.

Ifyouforageforwildmushrooms,makecertainyousupervisechildrenandknowhowtoidentifyediblespeciesfromtoxicmushrooms.
