In parallel with our project at PICO CUADRO, we have carefully developed a selection of wines in the leading
appellations of the Valladolid area -Ribera del Duero and Rueda..
Our experience and knowledge of different wine zones have enabled us to identify and select different batches
of wine located in wineries in the two appellations, where our technical team monitors them and decides on
the key steps to be taken in the wine-making process.
The result is a complete range of high quality wines that are well adapted to the requirements of the most
demanding markets and which aim to provide a guarantee of genuine, authentic wines from each appellation.

Tasting notes:
· A lovely, bright, clean, lemony, green-yellow colour.
· Powerful aromas on the nose offresh green apple fruit with honeyed notes.
· Fresh, juicy and balanced on the palate,round and packed with fruit flavour,with a very characteristic fennel note in the finish.
· A Verdejo in all its splendour.

· Subtle characters and fruit aromason the nose with toasty notes coming through.

· Vanilla hints come throughon the nose against a backdrop of coconut,liquorice and roasted coffee beans.

PICO CUADRO 2008DESCRIPTION:
This wine is produced mostly from our youngest vines where strict canopy management, such as crop thinning just as the grape colour is changing, is carried out to achieve grapes of the highest quality. Yields are restricted to 3,000 kilos (22 hectolitres) per hectare. The development of each lot of wine is then carefully monitored in the winery before a blend is selected that will express the pure fresh fruit character of the grape variety.
TASTING NOTES (11/01/2011)
Medium deep cherry-red colour with bright purple glints. Very intense and complex on the nose with red berry fruit, such as strawberry and raspberry coming through with aromas of blackberry and bramble.

Decanting is recommended a few hours before serving.

Selected from plots of old vines.
The potential of our old vines never ceases to amaze us each year.
The ageing potential of the wines made from these special plots makes the selection process very straightforward for our Vendimia Seleccionada (Special Plot Selection). Only these vines are able to give us the silky smoothness we are seeking in this brand.
TASTING NOTES: (11/01/2011)
A deep cherry colour. Great aromatic complexity. Very characteristic plum, raspberry and blackberry aromas. Great balance. Long, rich and spicy. Just the right amount of oak, harmonious power and softness. Hedonistic pleasure.
Decanting is recommended a few hours before serving..

outstanding individual character. It has total traceability from the vine to the bottle. Unblended, it is produced from a plot of over 80 years old, growing in poor, gravelly, sandy soils, which bring the wine much of its unique personality. This is the expression of a unique vineyard.

The “ Martín Berastegui System” bottle, which targets the world of wine. This bottle will make a high quality wine come to your,whole, because its design allows the following steps:
· You don't need to filter the wine in the winery. This unnatural process takes away quality and brings down the character of the vineyard. With this new bottle we shall get more natural wines, with organoleptic tones of the terrain intact: the sediments held at the bottom of the bottle will be the natural witnesses of quality.
· New formula of storing, ideal to decanting and settlement of wine, new possibilities of bottling adapted to the aesthetic features of the bottle.
· New concepts of pouring thanks to its ergonomics .

DESCRIPTION:
An old-vine selection for an innovative, new wine concept, which is likely to become an icon at this winery. It is specially made to be bottled without any filtering. Losing none of its characteristics, it also expresses a wildness and raw purity. It is bottled directly from the barrel into the new “Martín Berasategui Systems” bottle.

Dregs dissolved in liquids made from fruits (wines liquors, juices, oils) penetrate into the bottle during, the bottling process.
Eventually, the solids dissolved settle at the bottom of the bottle by effect of gravity.
At the moment of serving the contents, in a traditional bottle, dregs dissolve again or are swept away into the glass.
In a ‘Martín Berasategui System’ bottle, the vacuum effect will make dregs stay at the bottom.

Description:
This is undoubtedly our most ambitious wine. Our goal was a special plot selection,
handcrafted in the vines and cellars to be enjoyed for its sheer and utter delight.
It comes from a vineyard planted in 1920 in one of the best terroirs of the Ribera del
Duero. The vines are located within the estate of Carraquintana in Olmedillo de
Roa (Burgos) and are known locally as “La Roja” (the Red One), because of the special
colour of the leaves on the vines during harvest-time.
The wines made here have a special ability to achieve harmonious balance year
after year regardless of the vagaries of the climate.
These vines are the oldest of the winery, and very special care is taken during the
wine-making process:
Once the grapes have been brought to the winery, each bunch is carefully sorted.
The “shoulders” and “tips” of the bunches are separated: only the upper part of the
bunches, the shoulders, are kept, since this is where the berries concentrate best all
the sugar, tannins and aromas for the production of an outstanding wine.
This exclusive collection piece is an exact reproduction of the English bottle
manufactured in 1794 at La Real Fábrica and which today is exhibited in the
permanent collection of the Museo de la Fundación Centro Nacional del Vidrio.

and attention to ensure it will always remain constant and true.
