HYPOTHESIS
The jelly containing apple dices set while the jelly containing kiwi dices does not set
WHY APPLE AND KIWI?
Apple is used to represent fruits with very little protease in them while kiwi is used to represent fruits with lots of protease in them
MATERIALS USED
Jelly powder Sugar Water Sliced apple dices Sliced kiwi dices Three containers
METHOD
1) Add jelly powder and sugar to water and boil the water to make the jelly
2) Put fruit slices in different containers of jelly, but leave one container without fruit slices to act as a control
3) Leave in refrigerator for one hour to set4) Take out the containers and observe the
jelly
RESULTS
The jelly containing apple dices set but the jelly containing kiwi dices did not set
EXPLANATION
Jelly is made up of long thin protein molecules that tangle up as they cool, creating a tangle that traps the water and makes a flexible solid
Kiwi contains lots of actinidin, a type of enzyme The enzyme is a protease, which chops up protein
molecules Apple contains very little protease, so less
proteins will be chopped up When the proteases are mixed with gelatin, the
proteases chop up the gelatin protein into pieces and make them too short to tangle, making the jelly unable to set
CONCLUSION
The jelly containing apple dices set as there are less proteases in the fruit to chop up the gelatin proteins
The jelly containing kiwi dices did not set as there are a lot of proteases in the fruit to chop up a lot of the gelatin proteins
REFLECTION
After doing this experiment, I found out how jelly are formed and the effect of different fruits on jelly. Doing this experiment also taught me how to make my own jelly, letting me eat jelly whenever I want. I also learnt how to manage time better, as I had to manage between this experiment and school work, especially when this time is an examination period and I also had to study.
