Makes about 60 cookies that will keep for months in an airtight container or indefinitely in the freezer.

Gingerbread Man Cookies

Ingredients

1 cup unsalted butter, softened1 cup sugar½ tsp salt1 cup molasses2 tsp white vinegar1 egg, beaten5 cups all-purpose flour1 ½ tsp baking soda1 TBSP ground ginger1 tsp ground cinnamon1 tsp ground cloves

For Decorating:½ cup raisins1 cup sifted confectioner’s sugar1 TBSP Butter1 ½ - 2 TBSP milk

Preparation

• In a large bowl, cream together the butter, sugar & salt.

• Stir in the molasses, vinegar and egg.

• Sift together the dry ingredients and stir into the dough

• Chill the cookie dough , covered overnight.

• Divide dough into 4 parts.

• Leave one portion out & refrigerate the rest.

• Preheat oven to 375 degrees.

• Grease cookie sheets.

Preparation

• Roll out dough on a floured board to 1/8” thick.

• Cut out gingerbread boys with cookie cutter & place on greased cookie sheets.

• Decorate with raisins or sprinkled sugar if you’d like before baking.

• Bake for 6-8 minutes at 375 degrees.

• Cool Slightly & remove to racks to cool.

Preparation

Decorating suggestions:

• Use raisins to create faces & buttons before baking• Sprinkle with colored sugar before baking• Decorate with icing after cookies have been baked

Prepare Icing:

• Combine sifted confectioner’s sugar, softened butter & milk until smooth.

• Pipe the icing, using a pastry bag with a fine tip to decorate the cooled, baked cookies.
