FREAKISHLY DELICIOUS GLUTEN
FREE COOKIES
A cookie recipe for those who want to enjoy their
desserts
INGREDIENTS
Cookie Base 1 C butter flavor shortening
1 ½ C sugar
2 eggs
1 tsp vanilla
1 tsp salt
¼ C canned milk (or milk substitute)
Dry Ingredients
4 C gluten free flour w/ xanthan gum (I always use Grandpa’s Kitchen Flour blend)
1 tsp baking powder
Caramel Topping
½ C melted butter or margarine
½ C sugar
½ C brown sugar
½ C corn syrup
½ C sweetened condensed milk
a pinch of salt
STEP 1
Cream together:
1 C butter flavor shortening
1 ½ C sugar
Add and beat in:
2 eggs
1 tsp vanilla
1 tsp salt
¼ C canned milk (or milk substitute)
Mix dry ingredients together then add to above mixture:
4 C gluten free flour w/ xanthan gum (I always use Grandpa’s Kitchen Flour blend)
1 tsp baking powder
Tip: Always spoon gf flours lightly into measuring cup as they are prone to packing.
STEP 2
Press dough into a greased
10×14 inch baking sheet
and bake at 350? for about
20 minutes.
This cookie will look pale
when it is done. Take it out
of the oven when it begins
to show slight browning
around the edges.
Let cookies cool until firm
before topping, about 15
minutes.
STEP 3
Caramel Topping:
Place in microwave safe bowl:
½ C melted butter or margarine
½ C sugar
½ C brown sugar
½ C corn syrup
½ C sweetened condensed milk
a pinch of salt
Microwave on high for 5- 6 minutes. If you like a
harder caramel, cook longer. Pour on top of bar
cookies and spread evenly with a spatula.
STEP 4
Chocolate and Nut Toppings:
Chop 1 ½ C chocolate or chocolate chips and 1 ½ C cashews (or favorite nut). Sprinkle evenly over the caramel and press down lightly.
Variations:
Faux Samoas- toast 1 ½ C shredded coconut in the oven on a baking sheet. Sprinkle over the caramel layer then drizzle with melted chocolate. Girl scouts eat your hearts out.
