What is a Swiss Roll?It is a rolled sponge cake with filling usually jam. You slice it sideways across the end; each slice reveals a spiral pattern

Ingredients forSponge Cake:

4 tbsp flour½ tsp baking powder3 pcs egg yolks3 pcs egg whites¼ tsp cream of tartar3 tbsp refined sugar

1/8 C unsalted butter1/8 C lard½ tsp vanilla1 tsp evaporated milk¼ cup confectionery sugar

Procedure for

Sponge Cake

1. Pre-heat the oven at 350 degrees Fahrenheit.

2. Generously grease the jelly roll pan. Set aside.

3. Separate egg whites from egg yolks. Set aside.

2. In a mixing bowl, combine sifted flour and baking powder. Set aside.

4. In a mixing bowl, whip egg whites with cream of tartar until soft peak.

5. Add sugar gradually until stiff but not dry.

6. Alternately fold in flour mixture and beaten egg yolk until thouroughly blended.

7. Pour into prepared jelly roll pan. Bake for 8-10 minutes.

You’ll know that the cake is done if the toothpick comes out clean.

8. Invert the cake in a brown paper, then cool.

9. Fill with butter filling, tightly roll and store in refrigerator

Ingredients forButter Filling:

1/8 C unsalted butter1/8 C lard½ tsp vanilla1 tsp evaporated milk¼ cup confectionery sugar

In a mixing bowl, combine and blend butter, lard, evap milk and vanilla. Gradually add the sifted confectionary sugar. Store in chiller.
