The reality is that any kind of apple cider will do. Of course, the better the quality of the apples, the better the wine will be but this factor is not critical. You can either use one kind of apples or mix two or three varieties. For your first time I’d recommend to use one variety and then go from there and start experimenting.

The important thing is to make sure that there are no preservatives added to the cider because it might influence the fermentation process.

If you’re not sure if the apples that you’re buying have preservatives or not, simply check the label or ask the seller.

The wine making equipment for making apple wine is the exact same one that you’d use for any other type of wine. You’ll need a Primary and Secondary fermentation vessel, air-lock, siphoning equipment, hydrometer, etc. If you don’t have a wine making kit yet you can get it here!

How to make apple wine – The right ingredients

These are the ingredients for a gallon of apple wine:

* 1 Pound of Cane Sugar* 1 Teaspoon of Yeast Nutrient* 1/8 Teaspoon of Pectic Enzyme* 1-1/2 Teaspoon of Acid Blend* 1/4 Teaspoon of Wine Tannin* 1/8 Teaspoon of Ascorbic Acid* 1 Campden Tablet (crushed and dissolved)

For batches up to 5 gallons you’ll also need one pack of Lalvin EC-1118.

How to make apple wine – The process1. Take all of the ingredients listed above

(without the yeast!), mix it in your first fermenting container, cover it with a towel and leave for 24h.

2. Once that’s done add one package of Lalvin EC-1118 Yeast per 5 gallons (or less) batch.

3. Leave the container for 4-5 days or until the hydrometer will show 1.030-1.040 on the Specific Gravity scale.

4. Now siphon the wine into another container and do it carefully to leave as much of the sediment behind as possible. You’ll have to attach an Air-Lock to the container.

5. Leave it to ferment for another 2-3 weeks or until the hydrometer reads .998 or less on the Specific Gravity scale. Once this process is done your apple wine will still need to clear for another 2-3 weeks.

6. Once the clearing process is completed, you’ll need to add 1 Campden Tablet per gallon.

7. If you want your apple wine to be sweeter you can add sugar or honey but make sure to also add Potassium Sorbate to stabilize it – if you won’t the fermentation process might start again.
