5 Minute Cookie Dough Truffles

Ingredients:•1/2 cup packed almond meal or flour
•1/4 cup coconut palm sugar or brown
sugar
•1/4 tsp salt
•1/2 tsp vanilla extract
•3 tbsp coconut oil (you could use
butter) softened
•1/4 cup chocolate chips
•1/2-1 tsp of water (if needed)
Instructions:1. Prepare a plate or tray with parchment or wax paper
2. In a medium bowl add 1st 3 ingredients, stir to combine
3. Add in vanilla and coconut oil, stir to combine
4. Mixture may seem dry, but press together with your fingers and
see if it holds together
5. If it does not hold together add in 1/2 tsp of water and
mix. Press together. Add water until it presses together.
6. This can get too wet very fast. If you accidentally add too much
water add in a tbsp of almond meal or flour at a time until it is
no longer too wet
7. Add chocolate chips and stir to combine
8. Take about 1/2 tbsp of dough and roll into a ball with your hands
9. Place on parchment or wax paper
10.East right away or store in the refrigerator (They will firm up
more) for a few days (but you know they are not going to last
the day).
11.Optional- you could roll these in coconut or chopped nuts, that
would be yummy, too.
12.This recipe could be easily doubled or tripled
