Step 1 Creating Folder and Group Tracks
To create Folder and Group Tracks, just right mouse click in your project window underneath your existing tracks, just as if you wanted to add another track (which is what you are basically doing anyways). In the drop-down list, you will find the Add Folder Track and Add Group Channel Track options.

Step 2 Getting Organized
Next, name your Folder Tracks appropriately and simply drag and drop your audio tracks into the respective Folder Tracks. When you drag the audio tracks, position them right over the name of the Folder Track until you can see a long arrow point to the left at which point you can let go of the mouse and the audio track will be dumped into the Folder Track.

Cubase automatically puts all Group Tracks into one Group Tracks folder (ok, hope you are still with me here, this is kind of a Folder Track for Group Tracks, clear.?). I recommend to name them according to your Folder Tracks and maybe assign the same color to them, for ease of spotting them on the fly. Here, I have 4 Group Tracks (Saxes, Horns, Keys and Strings, and Percussion) in my Group Tracks folder.

Step 3 Routing Audio Tracks to their respective Group Tracks
Select the instrument you want to route (here, I chose Strings)
Launch the Channel Settings window by clicking on the e symbol next to the channel name.

Find the Output Routing section. I have marked it with a red circle. In my case, it says Stereo Out. Click on it.

A drop-down menu should enable you to choose any of the previously entered Groups. Pick the one that applies.

After making your choice, the Audio Channels Settings window should now show in the upper right corner that you route the signal to your chosen Group Track.
