• From an environmental perspective, offensive odour emissions affect the quality of life of individuals, impacting neighbouring businesses or affect the customer experience.

• Economically, by reducing the amount of grease and smoke which enters the ventilation ductwork, the duct cleaning frequency is reduced, heat recovery is possible and fan maintenance is reduced.

• From a safety perspective, by preventing grease from entering the ductwork there is a reduced fire risk.

• The proportion of odour, grease and smoke depends on the type of cooking.• Odours are caused by volatile molecules found in the ‘gas phase’• Grease and smoke are tiny particles and so are in the ‘particulate phase’

• Treat in order of Grease => Smoke => Gaseous odour• Interlock equipment with air flow either through fan control or PDS• Ensure that fan has Pa capacity to handle additional pressure drop• Check linear velocity through main duct run (6-8m/s) to ensure that

there is sufficient dwell time in equipment• Use activated carbon if there is insufficient contact time for ozone (2

seconds), or if extracting at low level
