Press Release | Valentine’s Day Spark Taltarni’s two highly coveted sparklings, Taltarni Taché 2009 and Taltarni Brut 2009, have been released just in time to ignite that all-important spark this Valentine’s Day. These cool-climate cupids are made using méthode traditionnelle techniques, a style of winemaking that chief winemaker Loïc Le Calvez is extremely passionate about: “Both the Brut and the Taché are bottle- fermented and matured on yeast lees according to traditional methods, a sparkling winemaking style that’s at the very heart of what we do here at Taltarni.” Taché is the French word for “stained”. At disgorging, the wine is literally stained with a few millilitres of Le Calvez’s secret blend of Taltarni Cabernet Sauvignon. This fabulous stain, which imparts a beautiful, unique taste and elegant salmon colour, is the cachet of Taltarni’s popular Taché.* Taché’s “running mate”, Taltarni Brut, comprises the very same blend of chardonnay, pinot noir and pinot meunier as that of the Taché, the big difference being that the Brut contains a dosage of reserve Clover Hill base wine as opposed to the Taché’s secret cabernet sauvignon blend. Both sparklings are the product of a spectacular vintage. “It was a fantastic vintage across the board in the Pyrenees,” says Le Calvez, “for our sparklings as well as our still whites and reds. It was cool, mild and dry. The flavours kicked in a bit earlier, so we could pick at lower baumes, and the cold nights produced great natural acidity.” The result: elegant wines with structured fruit flavours.
