Stevia Sugar A Lecture ByMr.Allah Dad Khan

Where does the stevia in SteviaSugar come from?In SteviaSugar we usesteviol glycosidesthat are produced in Malaysia. They are extracted from stevia leaves grown in China or Kenya.

What is stevia?

Stevia is a member of the Compositae family of plants and is called Stevia rebaudiana Bertoni (also known as sweetleaf). It originally comes from South America, where the leaves have been used for hundreds of years for sweetening food and drinks. From here, the plant has been imported to Japan, China and Korea where it has been cultivated and used for many years. The sweet components, steviol glycosides, that are extracted and used as a sweetener, are found in the leaves of the plant.

What aresteviol glycosides?

Steviol glycosides are the sweet components that are found in the leaves of the stevia plant. These are extracted and sold in a pure form, and they are 200-300 times sweeter than sugar. In the EU, steviol glycosides are considered to be an additive and have an E-number (E960

How is stevia produced?

First the leaves are picked and laid out to dry. The dried leaves are then finely divided and placed in hot water to extract the sweet components. The extract is filtered, rinsed and dried to a pure, white powder containing at least 95%steviol glycosides. The process is similar to that used for production of sugar from sugar beet.

What is SteviaSugar?

SteviaSugar is a mixture of sugar andsteviol glycosides, the sweetening agent found in the stevia plant. It is two sweet substances of natural origin. SteviaSugar has a unique lightstructurewhich means that 1 dl of SteviaSugar sweetens just as much as 1 dl of ordinary sugar, but weighs only half as much, and therefore contains only half the calories.

What are the advantages of SteviaSugar?

SteviaSugar is intended for consumers who wish to use less sugar but still enjoy the good properties of sugar such as good flavour and texture. By combining stevia and sugar two of natures own sweeteners we get a product with fewer calories and good flavour. Stevia lowers the calories and the sugar masks stevias somewhat bitter, liquorice-like aftertaste.

What can you use SteviaSugar for?

SteviaSugar is used in exactly the same way as ordinary sugar, e.g. in coffee and tea, for cakes, desserts, jams, dressings and many other things. Here you can seehow much SteviaSugar you need to use.

Why does SteviaSugar have a uniquestructure?

The special manufacturing process gives an open and light structure so that 1 dl of the product weighs only half as much as normal sugar, but sweetens just as much. The structure also gives optimal flavour because the sweet components from the stevia plant (steviol glycosides) are encapsulated and evenly distributed in the sugar. Furthermore, this structure means that SteviaSugar dissolves easily in liquids.
