What makes cheese smelly?

When cheese is made from milk, different types of bacteria are added to make changes to the hardness, appearance, flavour and the smell of the cheese.

By breaking down different chemicals in the curd, like the fat and protein, different types of microorganisms, including bacteria, yeasts and moulds, make new chemicals that change the smell and flavour of cheese.

If cheese is left out the bacteria starts to grow and as it does the cheese becomes smellier.

The more the bacteria grows the smellier it becomes.

Hypothesis

I think the cheese will grow smellier faster in dark warm conditions.

I think the bacteria will grow faster in those conditions.

Test

I placed four pieces of cheese in sealed plastic containers then put these in 4 locations

Location 1: Fridge (Control) Location 2: Hot water cupboard-

Hypothesis Location 3: Window sill Location 4: Outside

I photographed them at the start of the experiment - Sunday 22/9 – 5.00

Then every morning and evening I took photographs of the cheese and wrote what I observed and of course smelled.

Observation:It’s smellier, and it’s a darker yellow: Hard to touch.

Observation: GoldenStaining on paper.Quite smelly

Observation:Tiny bit more of staining on the table. Greasy, golden, Smelly

Observation:Wet looking, squishy, paper is stained. Really, really smelly, Golden.

Observation:Very, very, very smelly.More staining on paper. Golden

Observation:Crusty feeling, not so smelly. Dark yellow. Some staining.

Observation: Sort of smelly, hasn't changed color. No more staining

Observation:Hasn’t changed colors. Soft, not so smelly. No stains.

Observation:Hardly changed color.Sort of smelly,Tiny stains on paper.

Observation:Quite Pale,No stains,Not really smelly

Conclusion

Of all the cheese pieces the smelliest was the outside one which is not what I predicted.

I predicted the hot water cupboard one would be. It was the second most smelliest

Probably the cheese outside had the sun shining on it heating the cheese and causing the bacteria to grow faster.

The one in the fridge didn’t change much at all which is why we should keep cheese in the fridge.
